These are the best cookie bars ever and they're incredibly easy! You can substitute whatever you like on these also. I overload it with chocolate and white chocolate chips, butterscotch chips, and peanut butter chips but skip the nuts. From Eagle Brand.

1 1/2 cups graham cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted
1 (14 ounce) can sweetened condensed milk
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup butterscotch chips
1/2 cup peanut butter chips
1 1/3 cups flaked coconut
1 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees Fahreheit (325 degrees Fahrenheit for a glass dish).
  • In a small bowl, combine graham cracker crumbs and melted butter; mix well.
  • Press crumb mixture firmly in the bottom of a 13x9 baking pan.
  • Pour sweetened condensed milk evenly over crumb mixture.
  • Layer evenly with semi-sweet chocolate chips, white chocolate chips, butterscotch chips, peanut butter chips, coconut, and nuts.
  • Press down firmly with a fork.
  • Bake for 25 minutes or until lightly browned.
  • Cool.
  • Cut into bars.
  • Store leftovers covered.

1/2 cup butter, melted
1 cup graham cracker, crushed to crumbs
1 cup flaked coconut
6 ounces chocolate chips (1 cup)
6 ounces butterscotch chips
1 (14 ounce) can sweetened condensed milk (fat free works fine)
1 cup nuts

Steps:

  • Place melted butter in a 9 x 13 baking pan. Spread graham cracker crumbs over top. (I actually prefer to melt my butter in the microwave, mix in the graham cracker crumbs and then pat into the pan. It makes a more even bottom crust, I think.).
  • Layer the coconut and chips in order given. Pour sweetened condensed milk over all. Top with nuts. DO NOT mix together.
  • Bake at 350°F for 25 minutes or until lightly browned. (Please check earlier if your oven runs hot!).

1 teaspoon vanilla
2 eggs
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 rolls (about 1 oz each) ring-shaped hard candies or other fruit-flavored hard candies

Steps:

  • In large bowl, beat sugar, butter, vanilla and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder and salt. Cover; refrigerate about 1 hour or until firm.
  • Heat oven to 375°F. Cover cookie sheet with parchment paper or foil. On lightly floured cloth-covered surface, roll one-third of dough at a time 1/8 inch thick. Cut into desired shapes with cookie cutters. Cut shapes from centers of cookies as desired. Place cookies on parchment paper.
  • Place whole or partially crushed pieces of candy in cutouts, depending on size and shape of design, mixing colors as desired. Leave pieces as large as possible because candy melts easily; do not use fine candy "dust." (To crush candy, place in heavy plastic bag and tap lightly with rolling pin.) Place cutouts from centers of cookies on top of candies, if desired.
  • Bake 7 to 9 minutes or until cookies are very light brown and candy is melted. If candy has not completely spread within cutout design, immediately spread with knife. Cool completely on parchment paper, about 30 minutes. Gently remove cookies to cooling rack.

  • Preheat oven to 375°. In a large bowl, cream butter, peanut butter and sugars until blended. Beat in egg and vanilla. In another bowl, whisk flour, cocoa and baking soda; gradually beat into creamed mixture., For filling, in a small bowl, beat confectioners' sugar and peanut butter. Shape into 30 balls. Wrap tablespoons of chocolate dough around filling to cover completely. Place 2 in. apart on ungreased baking sheets. Flatten slightly with bottom of a glass dipped in sugar., Bake 7-9 minutes or until set and slightly cracked. Cool on pans 2 minutes. Remove to wire racks to cool. Store in airtight containers.

  • Preheat the oven to 350 degrees F. Grease a large baking sheet.
  • In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.

MAGIC CARPET COOKIES

This old fashioned cookie comes from the recipe box of my great grandma. They get their name from the fact that they are rectangular and colorful, resembling a magic carpet. She always made them with brightly colored icing as the filling but thay are just as good with jam (or a little of both!). I have also filled them with Nutella before and they turned out fantastic.

1/2 cup sugar
1 egg
1 tablespoon vanilla or 1 tablespoon almond flavoring

1/2-3/4 cup jam (or Nutella) or 1/2-3/4 cup icing (or Nutella)

Steps:

  • Preheat oven to 375°F Mix butter, sugar, egg and flavoring until creamy. Measure flour by sifting. Mix dry ingredients. Blend into butter mixture.
  • Divide dough in half, reserve for trim. Roll remaining dough in 2 (12x6-inch) rectangles on a well-floured or cloth covered board. Cut each rectangle lengthwise in 3 equal strips. With a spatula, carefully lift each strip to a parchment lined baking sheet, placing 1 inch apart.
  • Spoon reserved dough into a cookie press. Work in 2 teaspoons cream if it is too dry. Using the smallest star design, press out long ropes on each side of strip, and also 1 down center, pressing down slightly to seal. If you do not have a cookie press, you can roll long, thin ropes instead. Bake about 10 minutes, or until edges are delicately browned.
  • Cool. Fill in the rows of trim with jelly or icing. Carefully cut 1-inch diagonal pieces with a sharp knife.

1/2 c unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c granulated sugar, plus extra for rolling

1 stick butter, softened
1/4 c smooth peanut butter
1 tsp vanilla extract
1 large whole egg
1 large egg yolk
3/4 c smooth peanut butter
3/4 c confectioners' sugar

Steps:

  • 1. DOUGH: Preheat the oven to 375°F and lightly grease (or line with parchment) two baking sheets. In a medium-sized bowl, whisk together the flour, cocoa, baking soda and salt. In another medium-sized mixing bowl, beat together the sugars, butter, and 1/4 cup of peanut butter until light and fluffy. Add the vanilla, egg, and egg yolk, beating to combine, then stir in the dry ingredients, blending well
  • 2. FILLING: In a small bowl, stir together the 3/4 cup of peanut butter and confectioners sugar until smooth.
  • 3. With floured hands or a teaspoon scoop, roll the filling into 26 one-inch balls.
  • 4. FORM COOKIES: Scoop 1 tablespoon of the dough. Make an indentation in the center with your finger and place one of the peanut butter balls into the indentation Bring the cookie dough up and over the filling, pressing the edges together cover the center; roll the cookie in the palms of your hand to smooth it out into ball. Repeat with the remaining dough and filling.
  • 5. Roll each rounded cookie in granulated sugar, and place on the prepared baking sheets, leaving about 2 inches between cookies.
  • 6. Grease the bottom of a drinking glass, and use it to flatten each cookie to about 1/2-inch thick.
  • 7. Bake the cookies for 7 to 9 minutes, or until they're set and you can smell chocolate. Remove them from the oven, and cool on a rack.

1/2 tsp baking soda - dissolved in 1 Tablespoon hot water
1/2 cup white sugar
1/2 cup brown sugar

14 cup peanut butter
1 tsp vanilla
1 egg
Filling:
1 cup peanut butter
1 cup powdered sugar

Steps:

  • In small bowl combine flour, cocoa & baking soda (dissolved in 1 Tbsp. of hot water). Beat sugars, margarine, and peanut butter until light and fluffy. Add vanilla and egg, beat well. Stir in flour mixture until blended set aside.
  • In another bowl combine filling ingredients blend well. Roll into 30 small balls - approximately 1 tsp. per ball for each cookie.
  • For each cookie with floured hands, flatten about 1 tablespoon dough and shape it around 1 peanut butter ball, enclose it completely. Place 2 inches apart on an ungreased cookie sheet Flatten slightly with bottom of a glass dipped in sugar.

These wonderful bars are from outstanding pasty chef Fran Costigan's cookbook called Vegan Chocolate. You need this book... To make the recipe you can use purchased graham crackers or recipe #511625. And you'll also need a basic cashew cream sauce to replace the traditional sweetened condensed milk I recommend recipe #511626. Both those recipes can be made ahead. When I made it, I found that the coconut layer didn't cut cleanly so I cut them and served them in jumbo muffin liners. Actually turned out to be a good way to serve them!

1 1/2 cups graham cracker crumbs (200 g, Vegan Graham Crackers)
1/2 cup sugar (111 g)
1/4 cup plus 1 t neutral tasting vegetable oil (75 ml)
2 tablespoons maple syrup (30 ml)
1 teaspoon vanilla extract (5 ml)
1 1/2 cups vegan cashew cream (360 ml, Basic Thick Cashew Cream)

Steps:

  • Crumb Crust:.
  • Preheat the oven to 350F/180°C.
  • Lightly oil an 8x8 inch (20x20 cm) baking pan. Line the bottom with parchment so that it extends up two sides of the pan. (To help with the removal of the bars.).
  • Mix the graham crackers and sugar in a bowl.
  • Mix the maple syrup, oil and vanilla in a small bowl. Pour over the crumbs and mix until moistened.
  • Press the dough into an even, compact layer on the bottom of the prepared pan.
  • Bake the crust on the center rack for 10 minutes. Cool on a wire rack to room temperature before filling.
  • Bars:.
  • Pour the cashew cream over the cooled crust.
  • Sprinkle the nuts evenly over the cream.
  • Sprinkle 3/4 cup (128 g) of the chocolate chips over the nuts.
  • Sprinkle the toasted coconut over the top.
  • Press the toppings into the cashew cream.
  • Bake on the middle rack for 25 minutes until the coconut is lightly browned.
  • Press down lightly with a spoon on any areas where the coconut does not look anchored.
  • Scatter the remaining chocolate chips on top. Cool completely.
  • Place the pan in the freezer for about 30 minutes, until cold, before cutting.
  • Remove from the pan, cut into quarters, then cut each quarter into six pieces.

2 egg whites
1 cup white sugar
1 ½ cups ground walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F ( 175 degrees C ). Line baking sheets with parchment paper.
  • In a small bowl mix together the egg whites, sugar, and nuts until well blended. Drop dough by teaspoonfuls, three inches apart, onto the lined cookie sheets. Using the back of a spoon, dipped in water, flatten into rounds about 1.5 inches in diameter. Bake for 8 to 10 minutes in the preheated oven. Cookies should be lightly browned. Let cool slightly before removing from sheets. If the cookies are stuck, they need to be baked a little longer.
  • In a plastic bowl, melt the chocolate in the microwave oven, stirring every 15 or 30 seconds until smooth and creamy. This can also be done over a double boiler. 1 cup packed brown sugar
1 egg
1 teaspoon baking powder
1/2 cup chocolate chips
1/2 cup butterscotch chips
1/2 cup walnuts
1/2 cup unsweetened dried shredded coconut

Steps:

  • Preheat oven to 350 degrees.
  • Mix first 4 ingredients together.
  • Add remaining ingredients.
  • Drop by tablespoon onto parchment lined baking sheet.
  • Bake 10 minutes; let cool several minutes before moving.
