1 tablespoon unsalted butter, cut into small pieces, at room temperature, plus more for the pan
Kosher salt
1 pound mini penne or pennette
1 1/2 pounds coarsely grated havarti, gouda, and fontina cheeses, at room temperature (about 6 cups)
1 large egg, beaten
2 cups evaporated milk
1/2 teaspoon paprika
2 cloves garlic, finely grated
Freshly ground pepper
2 ounces baguette, torn into small pieces
1 tablespoon olive oil
1 tablespoon chopped fresh thyme

Steps:

  • 1. Preheat the oven to 325 degrees F. Butter a 2 1/2-quart baking dish. Bring a large pot of salted water to a boil over medium heat. Add the penne and cook, until just al dente, about 5 minutes. Drain and transfer to a large bowl. Add the havarti, gouda, and fontina cheeses and 1 tablespoon butter to the hot pasta and stir gently until cheeses begin to melt.
  • 2. In a medium bowl, whisk the egg, evaporated milk, paprika, half the garlic, 1/2 teaspoon salt and pepper. Stir the egg mixture into the macaroni pasta. Transfer to the prepared baking dish; bake covered for 10 minutes.
  • 3. Meanwhile, pulse the bread in a food processor with the olive oil, remaining garlic, and 1/4 teaspoon each salt and pepper; stir in the thyme leaves.
  • 4. Uncover the casserole, sprinkle the pasta with the breadcrumb mixture, and bake until bubbly and golden brown, about 15 minutes more. Serve immediately.

6 tablespoons unsalted butter, plus more for baking dish
Coarse salt and ground pepper
1 pound medium pasta shells
1/4 cup all-purpose flour
1 teaspoon dry mustard powder
4 cups whole milk
4 ounces sharp white cheddar cheese, coarsely grated (1 cup)
4 ounces Havarti cheese, coarsely grated (1 cup)
4 ounces Muenster cheese, coarsely grated (1 cup)
1 teaspoon Worcestershire sauce
6 slices white sandwich bread

Steps:

  • Preheat oven to 400 degrees. Bring a large pot of water to a boil. Butter a shallow 4-quart baking dish (oval or 9-by-13-inch rectangle); set aside.
  • Generously salt boiling water; add pasta. Cook, according to package instructions, until 2 minutes short of al dente. Drain pasta, and return to pot.
  • While pasta is cooking, melt butter in a large saucepan over medium. Transfer 2 tablespoons melted butter to a small bowl; set aside for topping. Add flour and mustard powder to remaining butter in saucepan. Cook, whisking, 1 minute (do not let flour darken). Whisk in milk. Bring to a boil; reduce heat to medium-low, and simmer until sauce is thickened, 2 to 3 minutes.
  • Remove sauce from heat. Gradually whisk in cheeses; add Worcestershire sauce, and season generously with salt and pepper. Add sauce to pasta, and toss to combine; transfer to prepared baking dish.
  • Place bread in food processor; pulse until very coarse crumbs form (you should have about 3 cups). Add reserved melted butter, and pulse just to moisten. Scatter crumbs over pasta in baking dish. (If making ahead, cover and refrigerate up to 1 day.)
  • Place dish on a rimmed baking sheet, and bake until topping is golden and sauce is bubbling, 15 to 20 minutes. (If refrigerated, bake for 30 to 35 minutes.) Cool 5 minutes before serving.

This is another Rachel Ray recipe. I made this one tonight and it's really good!! (I don't even like meat loaf, but I like this one.) However, personally I don't care for the herbs on the mac and cheese. Next time I'm sticking with just bread crumbs and parsley.

1 1/3 lbs ground sirloin
1 large egg, beaten
2/3 cup Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese
1/2 small bell pepper, chopped
1 small yellow onion, finely chopped
4 garlic cloves, chopped
3 tablespoons tomato paste
salt
pepper
2 tablespoons extra virgin olive oil
1 lb spiral shaped pasta or 1 lb elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded sharp cheddar cheese
1/2 cup shredded asiago cheese
1/2 cup parmesan cheese
1 teaspoon coarse black pepper
1/2 cup Italian seasoned breadcrumbs
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh thyme leaves
2 -3 tablespoons chopped rosemary
1/4 cup chopped flat leaf parsley

Steps:

  • Mini Meat Loaves:.
  • Preheat oven to 425°F.
  • Place meat in bowl. Make a well in meat. Fill well with egg, bread crumbs, Parmesan cheese, peppers, onions, garlic, tomato paste, salt and pepper.
  • Mix meat and breading and form four individual oval meat loaves, 1" thick.
  • Coat loaves with extra virgin olive oil and arrange on a baking sheet. Roast 18-20 minutes.
  • Macaroni and Cheese:.
  • Put a large pot of water on to boil for pasta.
  • When the pasta water boils, salt water and add pasta. Cook until slightly undercooked-pasta will continue to cook when combined with cheese sauce.
  • Meanwhile, melt butter in a saucepan and add flour. Whisk in milk.
  • Bring to a bubble and thicken milk for 2-3 minutes.
  • Add cheeses (cheddar, asiago, and Parmesan) and black pepper. Stir to melt cheeses.
  • Drain pasta and combine with melted cheese sauce and transfer to a baking or casserole dish.
  • Place bread crumbs in a bowl and add EVOO and herbs to bread crumbs. Top pasta with bread crumbs.
  • Place under a broiler and brown bread crumbs. (If you do not have a separate broiler, place in oven with meatloaves for last few minutes. I did this and it turned out fine.).

1/2 lb elbow macaroni
1 1/2 tablespoons unsalted butter (plus more for brushing)
1/4 cup freshly grated parmigiano-reggiano cheese
2 tablespoons all-purpose flour
3/4 cup milk
4 ounces cheddar cheese, shredded
4 ounces deli-sliced American cheese, chopped
1 large egg yolk
1/4 teaspoon paprika

Steps:

  • Preheat oven to 425 degrees.
  • In a large saucepan of boiling, salted water, cook the macaroni until al dente, about 5 minutes. Drain, shaking off excess water.
  • Brush four 12 cup, non-stick mini muffin tins with butter. Sprinkle with 2 tablespoons of the Parmigiano; tap out the excess.
  • In a large saucepan, melt the 1 1/2 tablespoons of butter. Whisk the flour over moderate heat for 2 minutes. Whisk in the milk and cook, whisking, until boiling, about 5 minutes. Add the cheddar and American cheeses and whisk until melted. Off the heat, whisk in the egg yolk and paprika. Fold in the macaroni.
  • Spoon slightly rounded tablespoons of the macaroni into the prepared muffin cups, packing them gently. Sprinkle the remaining 2 tablespoons of Parmigiano on top.

2 cups heavy whipping cream

1 tablespoon vegetable oil
1 large onion, finely chopped
5 cups milk
1 stick (4 ounces) unsalted butter
3/4 cup all-purpose flour
3 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
2 teaspoons kosher salt
1/2 teaspoon freshly ground pepper
4 cups shredded white Cheddar cheese (about 1 pound)
2/3 cup Gorgonzola (about 4 ounces), at room temperature
1 1/2 cups freshly grated Parmesan cheese (about 6 ounces)
3/4 cup fine plain bread crumbs, preferably homemade

  • directions In a large pot of boiling salted water, cook the macaroni until barely al dente, about 6 minutes. Drain; return to the pot. Heat the oil in a large saucepan.
