Baked Mac and Cheese With Little White Beans image

1/2 lb macaroni (whole wheat rotini, small shells, or other pasta)
3 tablespoons butter
3 tablespoons all-purpose flour
2 1/2 cups milk
3 cups monterey jack cheese or 3 cups parmesan cheese, shredded
1 cup white beans, rinsed and drained
2 slices whole wheat bread, torn into pieces
2 tablespoons canola oil (or olive oil or melted butter)
1/4 cup parmesan cheese, grated

Steps:

  • In a large pot of boiling salted water, cook the pasta until it's tender but not mushy and set aside.
  • Preheat oven to 350. In the empty pot, melt the butter over medium heat. Whisk in the flour and cook for a minute or so, until the mixture starts to turn golden.
  • Stir in the milk and bring the sauce to a full boil, whisking constantly. Reduce the heat and simmer for a few minutes, until the mixture is nice and thick.
  • Remove the sauce from the heat and stir in the cheese until it melts. Add salt to taste, then stir in the drained pasta and beans.
  • If you want a breadcrumb topping, pulse the bread, butter, and Parmesan in a food processor until the bread turns into crumbs and the mixture is well blended.
  • Pour the macaroni and cheese into a baking dish and top with the breadcrumbs or additional cheese.
  • Bake for 15 to 20 minutes, until the dish is bubbly around the edges and the topping is golden.

1 cup nonfat milk
1/2 cup white beans
1 1/2 cups shredded cheese
1/2 teaspoon salt

2 cups macaroni noodles (whole wheat)
1 tbsp olive oil
2 cloves garlic
minced
3/4 tsp salt (add pepper to taste as well)
1/8 tsp nutmeg (freshly ground is best!)
2 cups grated cheese (any kind will do
but mozzarella is best!)
3 tbsp butter
1 cup tomato paste
1-16 oz can baked beans
4 Tbsp Worcestershire sauce

Steps:

  • Cook macaroni noodles according to directions on the mac and cheese with baked beans (boil water, cook macaroni). Once mac and cheese are done cooking, strain and set aside. Preheat oven to 350 degrees F While mac and cheese are cooking, brown ground beef in a skillet over medium heat. Season beef with salt, pepper, and nutmeg (to taste). When cooked through (5-10 minutes), set aside Melt butter in a medium saucepan over low heat; add tomato paste
  • Add cooked macaroni noodles; stir for one minute Top potato mixture with grated cheese Bake mac and cheese for 12 minutes Mix the mac and cheese with the baked beans. Divide mac and cheese between plates Top mac and cheese with baked beans, garnish with parsley.

Runner and green beans make a delicious addition to a comforting pasta bake - top with pumpkin seeds for added crunch

2 tbsp rapeseed oil
3 tbsp wholemeal flour
500ml milk
1 tsp ground nutmeg
350g macaroni (or other pasta tubes)
185g pack sliced runner beans
220g pack fine green beans
140g mature cheddar , half chopped, half grated
25g pumpkin seeds
peppery salad (such as rocket & watercress), to serve (optional)

Steps:

  • Put the oil in a medium saucepan over a medium heat, add the flour and stir well. Still stirring, slowly pour in a little of the milk and mix well until smooth. Add a little more milk, repeating until all the milk has been added and you have a smooth sauce. Stir in the nutmeg, season, then take off the heat while you cook the pasta.
  • Heat oven to 220C/200C fan/gas 7. Bring a large pan of water to the boil, add the macaroni and boil for 8 mins. Add the runner beans and green beans, and boil for a further 3 mins.
  • Drain the pasta and the beans, and tip into a large gratin dish. Pour over the prepared sauce and tuck the chopped cheese in among the pasta, then top with the grated cheese and pumpkin seeds. Bake for 10-15 mins or until the top is bubbling and golden. Serve with a peppery salad, if you like.

1 pound lean ground beef (90% lean)
1 package (7 ounces) elbow macaroni, cooked and drained
2 cups shredded reduced-fat cheddar cheese, divided
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 medium green pepper, diced
1 medium onion, finely chopped
1/4 teaspoon garlic powder
Crushed red pepper flakes and pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. In a large bowl, combine the macaroni, 1-1/2 cups cheddar cheese, beans, tomatoes, green pepper and onion.
