2 1/2 cups flour
1/4 cup sugar
1 tablespoon baking powder
3/4 tablespoon baking soda
2 cups coconut milk (or almond milk (or milk of choice))
1 cup berries (fresh, frozen, or dried)
1/4 cup maple syrup (for drizzling)

Steps:

  • Mix all ingredients in a bowl, stir well to ensure there are no lumps in the batter. Grease a large frying pan or griddle.
  • Add 1/4 cup of batter to the pan for each pancake and cook over low heat. When little bubbles form around the pancakes (around 6 or 7 minutes on my stovetop), flip and cook for a few minutes on the second side until golden brown.
  • Stack, drizzle with maple syrup, and serve with fresh fruit!

1 egg
1 cup no salt added flour
1 cup milk (of your choice)
1 tablespoon sodium-free baking powder (Featherweight brand)
1 tablespoon sugar substitute (like Splenda)
1/4 teaspoon salt substitute

Steps:

  • Beat egg in a medium sized bowl.
  • Add the rest of the ingredients and mix well.
  • Pour small amounts onto a flat griddle. I like to make them about 5 inches in diameter.
  • Cook until light golden brown depending on your heat setting and top with I Can't Believe it's Not Butter(it's no salt).
  • I use pure maple syrup because of the whole no salt thing. They also make flavored syrup that is incredible that has no salt. Enjoy!

I loved this pancake recipe. Way better than a mix at the store but I wanted to cut a little of the fat. I make them with less butter, egg whites instead of a whole egg, and nonfat milk. They are so fluffy and tasty plus I feel great about giving them to my family.

1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups nonfat milk
2 egg whites
2 tablespoons butter, melted

Steps:

  • Sift flour, baking powder, salt, and sugar together in a large bowl. Make a well in the center and pour in milk, egg whites, and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Using approximately 1/4 cup for each pancake, pour or scoop batter onto griddle. Brown on both sides and serve hot.
