DANNON LOW-FAT APPLE SPICE CAKE
This is a great spice cake with no "guilty aftertaste"! It's good with the glaze listed or with a vanilla or lemon sauce like you make for gingerbread. It's moist enough to eat plain, too!

Steps:
- In large bowl, mix flour, sugar, baking soda, baking powder, cinnamon, allspice, salt and cloves.
- Add applesauce, yogurt, egg, and oil; mix well.
- Stir in raisins (note: I like to soften the raisins in hot water for a few minutes before adding them-they're plumper and softer that way).
- Pour into greased and floured 12-cup Bundt or 13 x 9 inch pan.
- Bake at 325 F.
- for 50- 60 mins, or until toothpick inserted in center comes out clean.
- Cool 15 mins.
- Serve with Quick Yogurt Glaze: Glaze: In small bowl, combine Dannon Plain Nonfat Yogurt, brown sugar and vanilla.
- Beat with fork or whisk until smooth.
- (This is also good with orange or lemon extract instead of vanilla).

- Oven to 350°.
- Spray a square pan with nonstick spray, I used a glass pan.
- Combine first 5 ingredients in bowl.
- In another bowl, combine water, oil, lemon juice, vanilla.
- Add to dry ingredients, stir until just combined.
- Toss apples with sugar and cinnamon, fold into batter.
- Pour into prepared pan.
- Bake for 30-35 minutes or until done.

MOIST LOW-FAT APPLE SPICE CAKE
My boyfriend and I invented this recipe for his mom's birthday and it came out great! It is very moist, with a denser texture than most cakes. Due to the large amount of apples, you can use less fat, and eggs are not needed at all. For best results, use firm, tart apples such as McIntosh, Courtland or Fuji.

- Preheat oven to 350 degrees.
- In a large bowl, beat together the brown sugar with the margarine until smooth. Beat in the buttermilk.
- In a smaller bowl, combine the flour, salt, baking soda and powder, and spices. Add the flour mixture and chopped apples/applesauce to the sugar-buttermilk mixture. Wisk vigorously or blend in an electric mixture for several minutes, or until well blended.
- Coat the inside of a bundt cake pan with butter or margarine, and then cover with a thin layer of flour to prevent sticking. To the bottom and sides of the pan, add the crushed pecans. If desired, additional pecans may be used on the sides of the pan or added to the cake batter.
- Pour the batter into the greased/floured pan, and bake at 350 degrees for 40-45 minutes or until a wooden toothpick comes out clean. Remove the pan and allow to cool on a wire rack. Once cool, invert onto a serving dish.
- To make the icing: Using a fork, combine the powdered sugar and salt in a small bowl with the vanilla. Gradually add the milk while stirring, until it reaches the desired consistency. Drizzle over the top and sides of the cake.

I originally got this from Weight Watchers' website. I increased the recipe by 50% to fit my 10-inch spring form pan. 1 serving equals 5 points with my modifications.

- Preheat oven to 400ºF. Coat an 10-inch spring form pan with cooking spray.
- Beat eggs and 3/4 cup of sugar in a large bowl until light and fluffy. Stir in milk, melted butter and vanilla extract.
- Combine flour and cornstarch and fold into the cake batter. Pour into prepared pan.
- Layer apple slices in a circular pattern on top of cake. Combine cinnamon and sugar and sprinkle over apples. Bake for about 28 to 32 minutes or until a toothpick comes out clean when inserted.

- Preheat the oven to 325.
- Spary 9x13 baking pan with non-stick cooking spray (the stuff with flour is good, if you have it) and line with parchment paper.
- Beat the honey, spenda, applesauce and egg whites together.
- Sift the flour, baking soda, allspice, and salt into a separate bowl.
- Add the flour mixture slowly to the egg mixture.
- Fold in the apples and vanilla.

SUPER LOW FAT TURKISH APPLE CAKE

- Preheat the oven to 180 degrees celcius.
- Put the chopped apples into a large bowl and sprinkle with the lemon juice.
- Combine the nuts, sultanas, sugar, flour, salt and baking powder and mix well.

LOW-FAT APPLE UPSIDE-DOWN CAKE

- 1. Preheat the oven to 350°F. Spray an 8-inch round nonstick baking pan with nonstick cooking spray. 2. In a large skillet, heat the apple juice over medium heat. Add the apple slices and cook, tossing occasionally, until the apples are crisp-tender, about 5 minutes. When cool enough to handle, lift the apples from any liquid remaining in the skillet and arrange them in the bottom of the baking pan. 3. Meanwhile, in a medium bowl, stir together the flour, brown sugar, ginger, cinnamon, baking powder, baking soda, and salt. 4. In a separate bowl, stir together the whole egg, egg whites, buttermilk, and olive oil. Make a well in the center of the dry ingredients. Pour the egg white mixture into the well and stir just until the dry ingredients are moistened. 5. Pour the batter over the apples and smooth the top. Bake for 30 minutes, or until a cake tester inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Run a metal spatula around the edges of the cake to loosen it. - Preheat the oven to 180C.
- To make the apple preserve, put the sliced apples into the sauce pan, covering with the lemon juice and sugar, bring to the medium heat until apples goes soft but retains shape. Add the cinnamon, gently stir and remove from the heat. Set aside and cool.
- In a bowl, to make the meringue, whisk the egg whites and sugar until stiff peaks form.
- Sift the flour and the baking powder over the bowl and mix well with the meringue gently.
- Add the melted butter and the apple preserve, lightly fold them into the mixture, then spoon into a tin (I use L19cm x D9cm x H9cm square non-stick).
- Bake in the preheated oven for 30 minutes, or until skewer inserted into the centre comes out dry.
- Remove the cake from the oven, leave for 5 minutes, then turn out onto wire racks to cool. Serve with sifted icing sugar if you like or whatever you like. Enjoy!
