SPINACH SALAD WITH ZESTY BLUE CHEESE DRESSING image

1/4 cup white vinegar
2 teaspoons Dijon mustard
1 clove garlic, minced
1/2 teaspoon freshly ground pepper
2/3 cup olive oil
1 (4-ounce) package crumbled blue cheese
1 (10-ounce) package fresh spinach
4 oz. sliced fresh mushrooms
1 cup grape or cherry tomatoes, halved
1/2 small red onion, thinly sliced
Creole croutons

Steps:

  • Whisk together first 4 ingredients; gradually whisk in oil. Add cheese, stir gently. Combine spinach and next 4 ingredients; drizzle with dressing, tossing to coat. Sprinkle with Creole Croutons. Serve immediately. Yield: 6 people
