KILLER POTATO SOUP

I've tried many potato soup recipes and most all of them have been pretty good. This one, however, it absolutely the best. It is truly a treat. All you need to go with it are some crusty rolls and a green salad and you have an excellent meal.

1 lb bacon, chopped
2 celery ribs, diced
1 onion, diced
4 garlic cloves, minced fine
6 -8 potatoes, peeled and cubed (I usually use red or yukon gold)
32 ounces chicken broth
3 tablespoons butter
1/4 cup flour
1 cup heavy cream
salt and pepper, to taste
2 cups sharp cheddar cheese, shredded
2 green onions, thinly sliced

Steps:

  • Place bacon in a large soup pot or dutch oven and cook until crisp. Drain off all but 1/4 cup of grease.
  • Add celery, onion and garlic to bacon grease and cook until just softened. Be careful not to burn garlic. Add potatoes and toss in grease to coat.
  • Add chicken broth. Bring to a boil, then simmer until potatoes are tender, stirring occasionally.
  • Place butter in a small saucepan over medium heat. When melted, whisk in flour. Brown mixture, stirring constantly, for approximately 2 minutes. Add heavy cream slowly, while whisking constantly. Bring to a boil, then reduce heat and continue whisking until mixture thickens.
  • Stir cream mixture into the potato mixture. Gently stir in cheddar cheese and reserved bacon. Add salt and pepper to taste.
  • Garnish with green onion and addtional cheese, if desired.

These killer potatoes are great with meatloaf or as an accompaniment with anything! They are killer because of their delicious combination of potatoes, soup, sour cream and cheese.

1 (32 ounce) package frozen potatoes au gratin
1 (16 ounce) container sour cream
4 cups shredded Cheddar cheese
2 (10.75 ounce) cans condensed cream of chicken soup
4 cups crushed cornflakes cereal

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl combine the potatoes, sour cream, cheese and soup and mix well. Spread mixture into a 9x13 inch baking dish and top with crushed corn flakes.
  • Bake for 75 minutes, or until cooked through and golden .

LORAINE'S KILLER POTATOES

These are so good..and they were my favorite potatoes when we went to Loraine and Lou's house. They were so good along with Lou's Smoked Turkey. The 8 of us called ourselves "The Licorice Gang" and did so many things together. So many happy memories and so much good food and so much laughter.

6 - large potatoes cooked, peeled, and shredded coarsely
2 cup(s) cheddar cheese, shredded
1/4 cup(s) butter, melted
1/3 cup(s) green onions, chopped
1 teaspoon(s) salt
1/4 teaspoon(s) white pepper
2 cup(s) sour cream
2 tablespoon(s) butter

Steps:

  • Mix lightly the potatoes, cheese, and melted butter.
  • Add the salt, pepper, sour cream, onions.
  • Mix lightly.
  • Place in a baking dish and dot with remaining butter.
  • Bake 25 minutes at 350*. Or until hot. Test with a knife. Stick the knife in the middle..leave it there for a couple seconds. Place the knife of your lips if it's hot..it's done.
