If you have ever been to the Mid-West or watched Rosanne you probably have heard of Maid-Rite also known as the loose meat sandwich. It's a kind of sloppy joe without the red sauce. It is served with mustard, pickle and onion but I do like mine with ketchup on it too. Not sure where this recipe comes from originally....

2 Tbsp dried onions
1 Tbsp warm water
3 lb ground beef
1 beef bouillon, cubes
1 chicken bouillon cube
1 1/2 c water
2 Tbsp worcestershire sauce
1 Tbsp soy sauce
2 Tbsp cider vinegar
2 Tbsp brown sugar

Steps:

  • 1. Start slow cooker on high, add dried onion and 1 T. warm water. (Allow to rehydrate a bit while assembling other ingredients.)
  • 2. Stir ground beef, 1 1/2 cups water and all other ingredients well. Stirring well to break up ground beef and mix all ingredients.
  • 3. Cover. Cook on high 4 hours or until ground beef is cooked, stirring occasionally to prevent beef from clumping. Serve on hamburger buns.

This was a big winner in our work pot lucks,I was requested to bring it all the time and its easy easy to throw in a crock pot also. It may not be an Authentic Maidrite...but everyone who has tried them seem to agree they are pretty darn good.

3 lbs ground beef, fried and fat drained off
1 (10 1/2 ounce) can French onion soup
1.5 (1 1/4 ounce) envelopes Lipton Onion Soup Mix
hamburger bun

Steps:

  • After frying hamburger and draining it, mix in all the soup mixes and simmer to blend flavors,about an hour would do.
  • Ladle on top of hamburger buns and treat them like you would a sloppy joe.
  • Any left over meat is great for taco and burrito filler.

1 garlic clove, minced
2 tablespoons vegetable oil
1 medium onion, chopped
1 lb ground chuck
1/2 cup tomato juice
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce
2 teaspoons seasoning salt
1/2 teaspoon Kitchen Bouquet
1/8 teaspoon cayenne pepper

Steps:

  • In a large skillet over medium heat, sauté garlic in oil until it begins to brown.
  • Add onion and sauté until soft.
  • Add meat, stirring constantly with a fork to crumble as finely as possible.
  • When meat is brown, add all remaining ingredients and simmer, uncovered, stirring occasionally until the liquid cooks out (about 15-20 minutes).
  • Spoon onto hamburger buns.

2 tablespoons all-purpose flour
Salt and pepper to taste
1 can (10-1/2 ounces) condensed French onion soup, undiluted
6 to 8 hamburger buns, split
Sliced cheddar cheese and dill pickles, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the flour, salt and pepper until blended. Gradually add soup. Bring to a boil; cook and stir for 2 minutes or until thickened. , Spoon onto buns; top with cheese and pickles if desired.

These taste like a good old fashioned hamburger. They are so good! We usually double the recipe and use the meat in Stuffed baked potatoes on the second night.

2 lbs lean ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups beef broth
1 teaspoon garlic powder
1 -2 onion, chopped
24 dill pickle slices
mustard
8 hamburger buns

Steps:

  • In a large skillet over medium heat, cook onions until brown and carmelized. Add ground beef and cook until brown.
  • Add salt, pepper, garlic powder and beef broth to cover. Reduce heat to low and simmer, uncovered, until broth is gone, 15 to 30 minutes.
  • Serve meat on buns topped with dill pickle slices and mustard.
  • *We steam the buns on top of the meat (with lid on skillet) for a minute or two to get them nice and soft.

We used to eat at Tastee Inn & Out in Lincoln, NE or B & G's in Omaha, NE. My mother got this recipe from the newspaper years ago. One of our favorites to make for game day or any day! Enjoy! These are also the same sandwiches that Roseanne used to make on her show! YUM!

5 lb ground beef (85% lean)
4 oz ketchup
3 tsp mustard
3 tsp horseradish cream style
3 tsp worcestershire sauce
5 tsp salt (this is original recipe i use less)
1 c onion finely chopped
1/4 tsp black pepper

Steps:

  • 1. Place ground beef in big pot like a dutch oven. Combine ketchup, mustard, horseradish, Worcestershire & salt in a 1 cup glass measuring cup. Stir it into beef. Fill the same cup with warm water and add to beef. Use same cup to measure ground onion; add to beef. Stir in black pepper. Cook beef on low heat stirring constantly or until meat is in fine pieces. Increase heat slowly until mixture boils. Boil 25 minutes, stirring every few minutes to avoid sticking. Use slotted spoon and dip meat onto hamburger buns.
  • 2. Garnish with pickle, mustard or ketchup.

MEDITERRANEAN MADE RIGHTS (LOOSE MEAT SANDWICHES)

Where I live loose meat sandwiches are know as made rights, this is a Mediterranean take on this favorite. You can use tzatziki sauce (cucumber/yogurt sauce used on Gyros) in place of the feta sauce to give it a more gyro kind of touch.

2 tablespoons olive oil
1 pound ground lamb
½ cup minced onion
1 teaspoon minced lemon zest
½ teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
¼ cup lemon juice
1 cup water
1 (6 ounce) container plain yogurt
3 ounces crumbled feta cheese
¼ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon lemon zest
salt and pepper to taste
6 pita bread rounds

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Stir in the lamb, and cook until it begins to crumble. Add the onions, and continue cooking until the lamb has browned and the onions have softened, about 5 minutes more. Drain off any excess fat, then reduce the heat to medium-low, and stir in 1 teaspoon lemon zest, 1/2 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Stir 1/4 cup lemon juice into the water, then pour 1/4 cup of this mixture into the lamb. Cook until the liquid has mostly evaporated, then stir in another 1/4 cup, and cook again until mostly evaporated. Continue adding the liquid 1/4 cup at a time until you have used all of it. This should take about 30 minutes in all. The meat should look moist, but not be sitting in liquid.
  • While the meat is cooking, make the feta sauce by placing the yogurt, feta cheese, 1 tablespoon lemon juice, 1/4 teaspoon dried oregano, 1/4 teaspoon garlic powder, and 1/4 teaspoon lemon zest into a blender. Puree until smooth, then season to taste with salt and pepper. Set aside.
  • Spoon the lamb mixture onto warmed pita bread. Top with the feta sauce to serve.

This version takes advantage of a slow cooker to give the ingredients a chance to know each other. Serve them on nice soft buns with your choice of condiments. So, you ready... Let's get...

PLAN/PURCHASE
1/2 c dried chopped onions
1 c beef stock, not broth (hot)
1 lb ground chuck, fine grind
1/2 tsp salt, kosher variety
2 clove garlic, minced, or 1-teaspoon garlic powder
1 tsp sugar, granulated variety
1 tsp ground cumin
2 Tbsp mustard, yellow variety
2 Tbsp white wine vinegar
1 c beef stock, not broth (hot)

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients
  • 3. Reconstitute the dried onions by combining them with 1 cup of the hot beef stock.
  • 4. Chef's Note: Allow them to absorb the hot stock for about 20 minutes.
  • 5. Chef's Note: Why dried chopped onions? For some reason I love the flavor they impart to this recipe. Dried onions that have been reconstituted with beef broth do have a different depth of flavor. You could, of course try it with fresh chopped onions.
  • 6. Place a pan over medium heat, and add the ground beef.
  • 7. Cook, breaking up the beef with a wooden spoon until almost cooked through.
  • 8. Chef's Tip: The reason we are precooking the beef is because the proteins in raw beef act like little hooks to bind the beef together as it cooks. If you put the meat in raw it will come out like a big round meatloaf. Precooking breaks that bound and allows the beef to cook without binding together.
  • 9. Add the onions, salt, garlic, sugar, cumin, mustard, vinegar, and the additional beef stock to the slow cooker.
  • 10. Mix until combined.
  • 11. Add the partially cooked beef, and combine.
  • 12. Set the slow cooker to low, and allow the ingredients to cook for 4 hours.
  • 13. After 4 hours, remove from the slow cooker.
  • 14. Prep/Prepare
  • 15. Use a slotted spoon to remove a generous amount of the loose meat, and place on a nice soft bun. Add mustard, pickle, or whatever you fancy. Enjoy.
  • 16. Keep the faith and keep cooking.

I discovered the concept of the loose meat sandwich from watching an episode of the Roseanne show about 18 years ago. Loose meat sandwiches are a tasty change once in a while. The seasoned ground beef is easy to make and several seasonings are added to give the meat a unique but mild taste. Loose meat tastes best when served on a fresh kaiser or poppy seed roll. This is one of my favorite recipes due to the fact it is so inexpensive, easy to prepare and it tastes great.

2 lbs 80% lean ground beef
1 green pepper
1 Spanish onion
2 tablespoons butter
2 tablespoons tomato paste
1/4 cup water
2 tablespoons garlic powder
1 teaspoon sea salt
1 teaspoon cracked black pepper
1/4 cup merlot
1/4 cup brown gravy mix

Steps:

  • In large skillet add 2 tablespoons butter, when butter begins to melt add diced onion and green pepper. Simmer onion and peppers in skillet for about 6 minutes. Make sure you dice the green pepper and Spanish onion prior to adding to the ground beef.
  • Next, add merlot wine, allow wine to simmer for about a minute. Before adding ground beef take a potato masher and work through the meat in order to break the meat into tiny pieces. Add ground beef and simmer for about 8 minutes before turning meat over to brown both sides.
  • After both sides are brown, add gravy packet along with 1/2 cup of cold water, stir gravy, onion and peppers throughly through the ground beef.
  • Next, you need to add salt, garlic powder, sea salt and cracked pepper, make sure all ingredients are mixed evenly through ground beef. Once the remainder of ingredients are added, simmer over medium heat for an additional 8-12 minutes.
  • Serve hot on a fresh kaiser or poppy seed roll. Homemade kaiser rolls from the bakery are the best. Loose meat sandwiches can be served with fries, potato chips or simply by itself.
