I wanted to do something different with London broil, so I stuffed it with bacon, green onions and ranch dressing. The recipe is fast, but it's a little bit fancy, too. -Tammy Thomas, Mustang, Oklahoma

1/2 cup butter, softened
6 bacon strips, cooked and crumbled
3 green onions, chopped
2 tablespoons ranch salad dressing mix
1/2 teaspoon pepper
1 beef flank steak (1-1/2 to 2 pounds)

Steps:

  • In a small bowl, beat the first 5 ingredients. Cut a pocket horizontally in steak; fill with butter mixture., Grill steak, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 5-7 minutes on each side. Let stand 5 minutes before serving. To serve, slice across the grain.

Number Of Ingredients 8

1 (1 1/2- to 2-pound) flank steak, trimmed
Salt and pepper
8 slices bacon, chopped fine
2 pounds small red potatoes, halved
2 tablespoons vegetable oil
3/4 cup sour cream
4 ounces sharp cheddar cheese, shredded (1 cup)
2 scallions, sliced thin

Steps:

  • Serves 6 1. Pat steak dry with paper towels and season with salt and pepper. Cook bacon in 12-inch nonstick skillet over medium heat until crisp, about 8 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate. Pour off all but 1 tablespoon fat from pan. Cook steak over medium-high heat in now-empty skillet until well browned and meat registers 120 to 125 degrees (for medium-rare), 5 to 7 minutes per side. Transfer to cutting board, tent loosely with aluminum foil, and let rest for 5 minutes. 2. Meanwhile, microwave potatoes and oil in large covered bowl until tender, 10 to 12 minutes. Add sour cream and, using potato masher, mash until combined. Stir in cheddar, bacon, and scallions. Season with salt and pepper to taste. Slice steak thinly against grain and serve with potatoes.

1 (1 1/2-2 lb) beef flank steak, 1 . 5 to 2 lbs

Steps:

  • In a small bowl, combine first 5 ingredients.
  • Cut a deep slit in the steak, forming a pocket.
  • Stuff butter mixture into slit.
  • Grill steak, covered, over medium heat for 5-7 minutes per side.
  • To serve, slice thinly across grain.
