EASY FIESTA SALAD



Easy Fiesta Salad image

10 ounces of mixed green salad, whatever your favorite blend is.
1 cup of Lime Cilantro Rice
1/2 cup Roma tomatoes
1/2 cup black beans, rinsed & drained
1/2 cup of sharp shredded cheese
3/4 cup of Cilantro Lime Dressing
1/2 cup corn
1/2 cup bell peppers, diced
1/4 cup red onions

Steps:

  • Layer the lettuce with rice, tomatoes, black beans & cheese. Top with any other optional items. Douse in dressing. I love this dressing and don't think you can ever have too much! Enjoy!

1 medium sweet red pepper, chopped
1 medium sweet yellow pepper, chopped
1 medium tomato, seeded and chopped
1 medium cucumber, seeded and chopped
1 small zucchini, chopped
2 green onions, chopped
2 tablespoons minced fresh parsley
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1 large ripe avocado, peeled and chopped
1 tablespoon lemon juice

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, whisk the oil, vinegar, sugar, salt and pepper. Drizzle over vegetables and toss to coat. Toss avocado with lemon juice; gently fold into salad. Serve with a slotted spoon.

This recipe makes 8 single salads. They can be made ahead of time and kept in the refrigerator until meal time. ENJOY!!!

Number Of Ingredients 11

1 lb ground beef
1 garlic cloves, minced
3/4 c water
1/2 pkg onion soup mix
1 Tbsp chili powder
2 avocados, cut in wedges
8 oz french onion dip
1 1/2 tsp lemon juice
9 oz tortilla chips, as an accompaniment
1 oz mixed salad greens
1 c grated sharp cheddar

Steps:

  • 1. Brown ground beef in a large skillet over medium heat, until no longer pink; drain and return to skillet.
  • 2. Stir in garlic, 3/4 cup water, onion soup mix and chili powder, simmer for 6-7 minutes or until liquid evaporates. Remove from heat.
  • 3. Cut avocados in half. Scoop pulp into a bowl, mash with a fork until just slightly chunky.
  • 4. Stir in onion dip and lemon juice.
  • 5. Crush half of tortilla chips.
  • 6. Spread crushed chips even in 8 dishes; top with salad greens, meat mixture and avocado mixture.
  • 7. Sprinkle with cheese. Garnish with pico de gallo or salsa if desired.

1 (11 ounce) can corn (drained)
1 jicama (chopped) or 2 cups water chestnuts (chopped)
1/2 sweet onion (chopped)
3 garlic cloves, minced
5 roma tomatoes (chopped)
1 (20 ounce) jar salsa
1 tablespoon lime juice
1 bunch fresh cilantro (leaves only)

Steps:

  • Mix all together in a large bowl.
