1 lb chicken liver, parboiled for 5 minutes
2 slices white bread, torn into crumbs
2 eggs, separated
1/4 cup soft butter
2 teaspoons chopped onions
2 tablespoons fresh parsley
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons flour
4 cups beef stock
1 teaspoon parsley

Steps:

  • Chop parboiled chicken livers very fine.
  • Combine with bread, egg yolks, butter, parsley, salt, pepper, and flour.
  • Beat egg whites until stiff; fold into meat mixture.
  • Shape into 1 1/2 inch meatballs.
  • Drop them into gently boiling stock.
  • Simmer 6-8 minutes.
  • Add additional parsley to stock for garnish.

1/4 lb liver sausage
1 egg whites or 1 egg yolk
1/2 cup cracker crumb
1 tablespoon chopped parsley or 1 tablespoon chives
1 tablespoon catsup (optional)
3 cups beef stock
1/2 teaspoon parsley

Steps:

  • Shape mixture into 1 inch meatballs.
  • Drop into gently simmering stock.
  • Simmer 5-6 minutes.
  • Add parsley for garnish.

This is a traditional German recipe from the Bavarian region. You may substitute the beef liver with lamb or pork liver since the recipe I found says those have milder flavors.

2 day-old bread rolls (i.e., Kaiser roll would work well)
1/8 liter lukewarm milk (about 6 ounces, or 3/4 cup)
2 eggs, beaten
1 onion, finely chopped
400 g trimmed and finely ground cow's liver (a little less than a pound)
1 tablespoon chopped parsley
1 pinch dried marjoram
1/2 teaspoon of zested lemon peel
1 teaspoon salt
1 pinch fresh ground black pepper
about 1 tablespoon dry breadcrumbs
3/4 liter beef broth (750 ml, or about 24 ounces)

Steps:

  • Tear the day-old rolls into small pieces, and soak in a bit of cold water.
  • Squeeze out the water, then put the bread into a bowl. Add the milk and allow the bread to soak it up.
  • Beat the eggs, the pour over the milk.
  • Add the onion, liver, parsley, marjoram, lemon zest, salt, pepper and breadcrumbs.
  • Mix together well and knead until it forms a pliable dough. (You may need to add some plain bread crumbs.).
  • Form 12 walnut-sized dumplings.
  • Bring about 1.5 liters (50 ounces) of salted water to a boil.
  • Gently add the dumplings and simmer for 20 minutes or until cooked through.
  • While the dumplings are simmering, heat the beef broth and keep warm.
  • Pour the broth into bowls and add dumplings to each serving. Garnish with chopped parsley.

This is my grandmother's recipe, Mrs. Burgkoffer ,who was born in Germany. My dad did not like this soup , but my grand father loved it.

1 lb chicken livers
1 c all purpose flour
1/2 lb buttery crackers , about 40 crackers
1/2 tsp parsley flakes
1 medium onion
3 large eggs, slightly beaten
1/2 tsp salt
2 qt chicken broth, low salt

Steps:

  • 1. Put livers, onion and crackers through food grinder. Add beaten eggs, flour, salt, parsley and pinch of pepper, and mix well. Drop by teaspoon into 2 quarts of boiling chicken broth and simmer for 30 minutes. Note: If you drop them in the broth and it doesn't stay together, add a few more cracker crumbs.

3/4 lb raw beef liver
1 small onion finely chopped
1 Tbsp butter
2 garlic sections crushed
salt and pepper to taste
3 large eggs
finely crushed cracker crumbs
3 qt beef soup broth

Steps:

  • 1. Grind the beef liver and take out all of the veins. Put ground liver in a bowl and add finely cut up onion which was sautéed in the butter just until translucent. Add garlic, salt, pepper, eggs and enough cracker crumbs to form a medium dough. Drop by teaspoon full into rapidly boiling soup broth.
  • 2. This soup is prepared like a noodle soup only the liver dumplings are used in place of the noodles. Do not overcook! A true dumpling is never the same shape or size! The Bohemian term for dumplings is "Knedliky". Pronounced ka-ned-lick-ee.

AMISH LIVER DUMPLING SOUP

This is for liver lovers out there. The dumplings are good sauteed in butter and cooked onions. This is how I got my children to eat liver. They are so tender, you can't resist them.

1 slice beef liver, cut into pieces
1 medium onion, chopped
1 Tbsp parsley, chopped
1 Tbsp water
2 eggs
1 tsp butter
pinch nutmeg
pinch marjoram
1/4 c flour
1 tsp sea salt
dash(es) pepper
32 oz low-sodium beef broth (4 cups)

Steps:

  • 1. In a food processor put the liver, onion, parsley, water, eggs, butter, nutmeg and marjoram. Process until smooth. Add flour to make a soft dough, stiff enough to hold it's shape when dropped into the boiling broth. Drop dumplings in broth and cook 15 minutes.
  • 2. You can serve this as a hearty soup or drain the dumplings and serve them in sauteed butter and onions as a main dish.
  • 3. I am posting picture of them both ways.
