For a refreshing and soothing finish to a spicy meal, serve this blend of fresh fruit with lime flavored gelatin.

1 cup boiling water
1 package (3 ounces) lime- or lemon-flavored gelatin
1/2 cup cold water
1 can (8 ounces) crushed pineapple, undrained
1/2 cup shredded carrot
Mayonnaise or whipped cream, if desired

Steps:

  • Pour boiling water on gelatin in medium bowl; stir until gelatin is dissolved. Stir in cold water and pineapple. Refrigerate about 45 minutes or until thickened but not set.
  • Lightly brush six 1/2-cup salad molds with vegetable oil. Stir carrot into thickened gelatin; pour into molds. Refrigerate about 4 hours or until firm.
  • To unmold salads, dip molds into hot water for 10 seconds. Place salad plate upside down onto each mold; turn plate and mold over, then remove mold. Top salads with mayonnaise.

Spicy Watermelon Salad With Pineapple and Lime image

Refreshing, sweet and spicy, this salad is the edible equivalent of a crisp beer on a hot summer's day. It pushes the watermelon-feta-mint combination to new heights with a Mexican-inspired flavor profile of lime, jalapeño and cilantro. It's also easy to prepare, requiring little more than a knife, a bowl and a whisk. Enjoy it as soon as it's assembled, as the salty dressing draws the juice out of the fruit fairly quickly and the salad can lose its fresh crunch. A sprinkle of Tajín, a chile-lime Mexican spice blend, is optional, but adds a touch of smoke.

3 tablespoons extra-virgin olive oil
2 tablespoons apple cider vinegar
1 teaspoon fresh lime zest, plus 2 tablespoons juice
1 tablespoon honey
1 jalapeño, thinly sliced
Kosher salt and black pepper
1/4 cup finely chopped red onion
1 1/4 pounds fresh watermelon, chilled
1 1/4 pounds fresh pineapple, chilled
4 ounces feta, crumbled (about 2/3 cup)
1 packed cup small cilantro sprigs, or 1/3 packed cup torn fresh mint
Tajín, for sprinkling (optional)

Steps:

  • In a large bowl, stir together oil, vinegar, lime zest and juice, honey and jalapeño. Season generously with salt and pepper. Add the red onion and toss to coat. Let marinate, 10 minutes.
  • While the onions marinate, chop the watermelon and the pineapple into 1-inch cubes, discarding any seeds. Add watermelon and pineapple to the vinaigrette and toss to coat; season to taste. Refrigerate until serving.
  • When ready to serve, add feta and herbs to salad and toss to coat. Sprinkle with Tajin, if using, and serve immediately.

1 cup sour cream
1/2 cup chopped canned pineapple ring

1 cup boiling water

Steps:

  • Using a large bowl completely dissolve Jello in the boiling water.

1 can crushed pineapple
1 c. mayonnaise dressing
1 pt. cottage cheese
1/2 c. nutmeats (cut fine)

  • Mix Jello, hot water and pineapple together and let partially set. Fold in condensed milk, mayonnaise, cottage cheese and nutmeats. Put in mold and let set in refrigerator. 2 (3 ounce) packages lime gelatin powder (jello)
2 cups boiling water
2 cups cold water
1 (3 ounce) cream cheese, softened
1 tablespoon mayonnaise
1 (8 ounce) pineapple tidbits, drained
1 (8 ounce) crushed pineapple, drained
2 cups mini marshmallows
1/2 cup pecans, chopped (optional)

Steps:

  • Dissolve packages of lime gelatin mix in 2 cups boiling water, remove from heat and stir well. Add 2 cups cold water and stir.
  • Place gelatin mixture in a medium size bowl and allow to get cold in refrigerator. When gelatin mixture is slightly beginning to set around edges of bowl (test frequently -- you do not want it to completely set) remove from refrigerator.
  • (To insure cream cheese is soft enough I microwave it for 20 seconds.) With an electric mixer beat softened cream cheese in a separate bowl and add small amounts by tablespoons into gelatin while beating. Add mayonaise.
  • By hand, stir in drained pineapple, marshmallows and pecans. Pour into a 2 or 3 quart pyrex dish or plastic container and place in refrigerator. Let mixture get completely cold for at least 4-5 hours before serving.
  • May be dipped out of container or served cut in squares topping a lettuce leaf.
  • Enjoy!

8 ounces crushed pineapple, drained (reserve liquid)
16 ounces grapefruit sections, drained (reserve liquid)
1/4 cup sugar
1 (3 ounce) package lime gelatin
1/2 cup mayonnaise
1/4 cup chopped pecans
6 tablespoons grated sharp cheddar cheese
3 tablespoons mayonnaise

Steps:

  • Spray 9x9-inch glass baking dish or 1-1/2 quart mold with non-stick cooking spray.
  • Pour reserved fruit juices in measuring cup to make 2/3 cups, adding water if needed to get the correct amount.
  • In pan, add sugar and gelatine, stirring to mix.
  • Add the 2/3 cup of fruit juice.
  • Stir and heat until sugar and gelatin dissolve.

PINEAPPLE-LIME MOLDED SALAD

This is a holiday favorite in the Johnston household. My husband grew up having this for Thanksgiving and Christmas. I usually do it for Easter. As for most of my recipes, this one comes from my late mother-in-law's recipe box.

1 lg. box lime jello
1 lg. pkg. cream cheese
1 20 oz. can crushed pineapple
1 12 oz. pkg. cool whip

Steps:

  • 1. Measure pineapple juice and enough liquid to make 1 1/2 cups, bring to boil & dissolve jello into it. Cool til syrupy & fold into cheese & pineapple which has been mixed together. Fold in cool whip. Chill. Garnish with nuts & maraschino cherries ( dates may be added).
  • 2. Note: though nowhere does it state, I make this in a 9x13 glass pan.
