6 medium potatoes, peeled and thinly sliced
3 cups water
4 reduced-sodium chicken bouillon cubes
1 garlic clove, minced
1/2 cup grated Parmesan cheese
Minced fresh parsley, optional

Steps:

  • Place potatoes in a greased 2-qt. baking dish that has been coated with cooking spray. In a small saucepan, heat the water, bouillon and garlic until bouillon is dissolved; pour over potatoes. Sprinkle with Parmesan cheese. , Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until tender. Let stand 10 minutes before serving. Sprinkle with parsley if desired. Serve with a slotted spoon.

12 potatoes, peeled and thinly sliced (I like Youkon Gold)
3 onions, finely sliced
salt and pepper
1/3 cup butter
1/3 cup flour
3 cups boiling chicken broth

Steps:

  • In 2 well greased casserole dishes, layer potatoes, onions, salt and pepper.
  • In saucepan, melt butter, stir in flour and cook until blended.
  • Add chicken broth, cook until boiling and thickend.
  • Pour over potatoes.
  • Bake uncovered at 350* for 50 minutes.

1 medium poblano chile pepper, halved and seeded
2 tablespoons unsalted butter, plus more for the baking dish
1/2 small onion, thinly sliced
2 cloves garlic, thinly sliced
2 teaspoons chopped fresh thyme
2 pounds Yukon Gold potatoes, peeled and sliced 1/8 inch thick
2 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
1/4 cup grated parmesan cheese
Mexican crema or sour cream, for topping (optional)

Steps:

  • Preheat the broiler. Put the poblano cut-side down on a baking sheet and broil until the skin is browned in spots, about 5 minutes. Transfer to a bowl, cover with plastic wrap and let cool 5 minutes. Peel the skin off the poblano under cold running water, then chop into small pieces.
  • Preheat the oven to 400 degrees F. Lightly butter a 2-quart baking dish. Heat 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, garlic and thyme and cook, stirring frequently, until the onion is soft, about 5 minutes. Add the potatoes, chicken broth, 1 1/2 teaspoons salt, and pepper to taste and bring to a boil. Reduce the heat to medium and cook, stirring gently, until the potatoes are tender, 10 to 12 minutes.
  • Arrange half of the potato-broth mixture in the prepared baking dish in an even layer. Sprinkle with half each of the roasted poblano and parmesan. Repeat with the remaining potato-broth mixture, poblano and parmesan. Bake until bubbly and slightly golden, about 35 minutes. Let stand 15 minutes before serving. Thin some crema or sour cream with water and serve alongside for topping.

5 small red potatoes, unpeeled
1 onion, minced
2 tablespoons butter
2 tablespoons flour
2 1/2 cups fat-free half-and-half
4 ounces fat free cream cheese

  • Melt butter in saucepan.

1 cup onion, thinly sliced or finely chopped
2 tablespoons flour
1/8 teaspoon pepper

2 cups skim milk

Steps:

  • Arrange potatoes and onions in layers in a baking dish.
  • In a heavy saucepan or in the top of a double boiler, heat the milk.
  • In a small bowl, stir together flour, salt, pepper and enough water to make a paste.
  • Add to milk.
  • Cook until thickened, stirring with a whisk.
  • Pour milk mixture over potatoes and onions.

1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup skim milk
1/2 teaspoon dried marjoram
1/4 teaspoon pepper
1/8 teaspoon red pepper flakes

1 large onion, chopped
4 medium potatoes, thinly sliced and peeled
2 tablespoons plain breadcrumbs
1 tablespoon dried parsley or 1 tablespoon fresh parsley
1 teaspoon melted margarine

  • Mix together milk, soup, marjoram, red pepper flakes and pepper.
  • Set aside.

1/2 cup(s) skim milk

1 1/2 cup(s) cubed, fully cooked, lower-sodium ham (8 ozs.)
1 large chopped, onion (1 cup)
4 1/2 cup(s) thinly sliced, peeled potatoes (4-5 medium)
2 tablespoon(s) fine dry bread crumbs
1 tablespoon(s) snipped fresh parsley or 1 tsp. dried
1 teaspoon(s) butter, melted
- tomato rose garnish (optional)
- parsley sprig garnish (optional)

Steps:

  • For sauce, in a medium mixing bowl, stir together the soup, milk, marjoram, and pepper. Set aside.
  • Spray a 2 quart casserole dish with cooking spray. Preheat oven to 350°F. Layer half of each, of the ham, onion, potatoes, and sauce. Repeat layers.
  • Bake, covered, about 1 hour, or until potatoes are nearly tender. Meanwhile, in a small mixing bowl, stir together bread crumbs, parsley, and melted butter. Remove casserole from oven & sprinkle bread crumb mixture over casserole. Bake, uncovered, for 15 minutes more, or until potatoes are tender.

  • NOTE: To make the tomato rose garnish, cut a base from the stem end of a tomato, but do not sever. Cut a continuous narrow strip in a spiral fashion around the tomato, tapering the end to remove. Curl the strip onto its base in a rose shape.
