Number Of Ingredients 17

2 large onions, thinly sliced, divided
2 tablespoons canola oil
2 tablespoons minced fresh gingerroot
3 garlic cloves, minced
8 plum tomatoes, chopped
2 teaspoons ground coriander
1-1/2 teaspoons ground cumin
1/4 teaspoon cayenne pepper
3 cups vegetable broth
2 cups water
2 cups dried lentils, rinsed
1 can (4 ounces) chopped green chiles
3/4 cup heavy whipping cream
2 tablespoons butter
1 teaspoon cumin seeds
6 cups hot cooked basmati or jasmine rice
Optional: Sliced green onions or minced fresh cilantro

Steps:

  • In a large skillet, saute half of the onions in oil until tender. Add ginger and garlic; saute for 1 minute. Add the tomatoes, coriander, cumin and cayenne; cook and stir 5 minutes longer., In a 4-or 5-qt. slow cooker, combine the vegetable broth, water, lentils, green chiles, tomato mixture and remaining onion. Cover and cook on low until lentils are tender, 6-8 hours., Just before serving, stir cream into slow cooker. In a small skillet, heat butter over medium heat. Add cumin seeds; cook and stir until golden brown, for 1-2 minutes. Add to lentil mixture., To serve, spoon over rice. If desired, sprinkle with green onions or cilantro.

5 cups water
2 ½ cubes vegetable bouillon, or more to taste
2 cups dry lentils
5 small carrots, peeled and diced
2 medium potatoes, peeled and diced
3 teaspoons ground cumin, or to taste
1 teaspoon ground coriander
1 tablespoon olive oil
1 small onion, diced
4 cloves garlic, minced
½ (6 ounce) can tomato paste, or to taste
½ teaspoon sea salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
½ (8 ounce) package fresh spinach, torn

Steps:

  • Warm water and vegetable bouillon in a slow cooker on High until dissolved. Add lentils, carrots, and potatoes.
  • Heat a medium saucepan over medium heat. Add cumin and coriander and cook and stir until fragrant, about 20 seconds. Add oil, followed by onion. Cook, stirring occasionally, 2 to 3 minutes. Add garlic and saute for 30 seconds. Remove from heat and transfer to the slow cooker. Stir. Add tomato paste, salt, and pepper. Stir in spinach.
  • Cook on High, stirring every 30 minutes, until lentils are tender and stew has thickened, 3 to 4 hours.

2 carrots, diced
2 stalks celery, chopped
1 onion, chopped
1 (14.5 ounce) can crushed tomatoes
2 cups dried lentils
2 cups water
2 cups wine
¼ cup olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon dried thyme
1 bay leaf
salt and ground black pepper to taste
½ cup fresh spinach leaves

Steps:

  • Combine sausages, carrots, celery, onion, tomatoes, lentils, water, wine, oil, garlic, oregano, basil, thyme, bay leaf, salt, and pepper in the bottom of a slow cooker.
  • Cover and cook on Low until lentils are tender and sausage is no longer pink, 6 to 8 hours.

I adapted this from the "Fix-it and Forget-It Lightly" cookbook. The original recipe is great, but my carnivore husband suggested adding the kielbasa, which I did in the last hour of slow cooking. I also threw in extra veggies, both fresh and canned. This is one of those recipes you don't have to worry about measuring the veggies...in fact, add whatever you fancy!

3 cups water
1 (28 ounce) can diced tomatoes (try the kind with green peppers or onions or garlic already added)
6 ounces tomato paste
1 cup dry red wine
3/4 teaspoon dried basil
3/4 teaspoon dried thyme
1 bay leaf
1/2 teaspoon crushed red pepper flakes
1 lb dried lentils, rinsed and drained with any stones removed
1 large onion, chopped
4 carrots, cut into 1/2 inch rounds
4 stalks celery, cut into 1/2 inch slices
3 cloves garlic, minced
3 large red potatoes, cubed
1 (24 ounce) can turnip greens or 1 (24 ounce) can kale
1 lb light pre-cooked kielbasa, sliced (optional)
salt and black pepper

Steps:

  • Combine water, tomatoes with juice, tomato paste, red wine, basil, thyme, bay leaf, crush red peeper in slow cooker.
  • Stir to blend.
  • Add lentils, onion, carrots, celery, potatoes, garlic, greens and kielbasa.
  • Cover.
  • Cook on low 10-12 hours or on high 4-5 hours.
  • Remove bay leaf, and serve with chopped basil, parsley, hot sauce or sour cream garnish (or any combination of these).
  • NOTE: I prefer to add the canned greens and kielbasa in the last hour of cooking, but if you don't have time for that, just throw everything together in the slow cooker and forget about it until dinnertime!

2 pounds kielbasa sausage, cut into 1 inch pieces
1 ½ pounds sauerkraut, drained and rinsed
2 Granny Smith apples - peeled, cored and sliced into rings
¾ onion, sliced into rings
2 pounds red potatoes, quartered
1 ½ cups chicken broth
½ teaspoon caraway seeds
½ cup shredded Swiss cheese

Steps:

  • Place half the sausage in a slow cooker, and top with the sauerkraut. Cover with the remaining sausage, apples, and onion. Top with the potatoes. Pour chicken broth over all, and sprinkle with caraway seeds.
  • Cover, and cook on High 4 hours, or until potatoes are tender. Top each serving with Swiss cheese.

1 1/2 cups dried lentils
3 cups water
1 1/4 lbs butternut squash, peeled, cut into 1 inch chunks
2 cups bottled marinara sauce (such as Classico)
8 ounces green beans, ends trimmed and beans cut in half (canned beans are fine)
1 medium red bell pepper, cut into 1 inch pieces
1 large white potato, peeled and cut into 1 inch chunks
3/4 cup chopped onion
1 teaspoon minced garlic
1 tablespoon olive oil (preferably extra-virgin)
grated parmesan cheese, to serve

Steps:

  • Mix lentils and 3 cups water in a 3-quart or larger (slow-cooker) crock pot.
  • In a large bowl, mix together remaining ingredients EXCEPT olive oil; Place mixed ingredients on top of lentils in crock pot.

2 tbsp olive oil
1 onion , finely chopped
3 carrots , peeled and cut into 3cm slices
500g (about 5 medium) parsnips , peeled and cut into 3cm slices
3 garlic cloves , crushed
2 tbsp mild curry powder
1 tbsp smoked paprika
150g red lentils , rinsed
600ml hot vegan vegetable stock
2 bay leaves
lemon juice , to serve

Steps:

  • Heat the slow cooker to low. Heat the oil in a frying pan and cook the onion for 10 mins until soft and transparent. Add the carrots and parsnips and fry for 8-10 mins more until the veg is just golden. Stir in the garlic and spices, and fry for 4-5 mins until fragrant, stirring. Add a splash of water if needed. Tip into the slow cooker and stir through the lentils, stock, bay and seasoning.
  • Close the lid and cook on low for 5-6 hrs until the vegetables are tender and the sauce has thickened. Check the seasoning and stir in the lemon juice to taste. Serve with bread, rice, or potatoes, if you like.
