This is a basic dal (Indian lentil soup) recipe that my mom always makes. You can substitute different vegetables and greens and follow similar procedure. This is a hearty and healthy dish that leaves you satisfied without overfilling you. You can substitute spinach for other dark greens like mustard greens, kale, or swiss chard. The cook time will vary. Serve with steamed rice.

1 cup red lentils
4 cups water
1 teaspoon salt, plus more for seasoning
3 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 onion, chopped
2 cloves garlic, minced
1 pinch ground turmeric
1 bunch spinach, chopped
1 large plum tomato, chopped
½ teaspoon cayenne pepper
¼ cup chopped fresh cilantro
water, as needed

Steps:

  • Bring lentils and 4 cups water to a boil in a saucepan. Stir in salt. Reduce heat to medium-low and cook at a simmer 10 minutes. Skim off any scum that forms and continue to simmer until the lentils are tender, about 1 hour.
  • Heat the oil in a separate saucepan. Cook mustard seeds and cumin seeds in hot oil until they start to splatter, 2 to 3 minutes. Add onion, garlic, and turmeric to the seeds; cook and stir until the onion is soft, about 5 minutes. Stir spinach, tomato, and cayenne pepper into the onion mixture; cook until the spinach wilts and the tomato is tender, about 5 minutes.
  • Stir the cooked lentils and cilantro into the spinach mixture; bring to a simmer and cook for 5 minutes. Adjust salt and water to taste and texture preferences.

1 bay leaf

1 16-ounce bag dried lentils (about 2 1/2 cups)
1 6-ounce bag baby spinach leaves
1/2 cup chopped fresh cilantro
1/2 cup plain nonfat yogurt

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add next 4 ingredients; sauté until golden, about 10 minutes. Stir in curry powder, ginger, cumin, bay leaf, and dried crushed red pepper. Add 9 1/2 cups water and dried lentils; bring to boil. Reduce heat to medium-low and simmer uncovered until lentils are tender, adding more water by 1/2 cupfuls to thin soup, if desired, about 25 minutes. Add spinach and cilantro; simmer until spinach is wilted, about 5 minutes. Season soup with salt and pepper. (Can be made 1 day ahead. Chill soup uncovered until cold, then cover and keep refrigerated. Rewarm soup over medium heat, thinning with water if desired before serving.)
  • Ladle soup into bowls. Top each serving with spoonful of yogurt.

1 pound bulk spicy pork sausage
1 cup dried brown lentils, rinsed
1 can (15 ounces) cannellini beans, rinsed and drained
1 carton (32 ounces) reduced-sodium chicken broth
1 cup water
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
6 cups fresh spinach (about 4 ounces)
Crumbled goat cheese, optional

Steps:

  • In a Dutch oven, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes; drain., Stir in lentils, beans, broth and water; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, about 30 minutes. Stir in tomatoes; heat through., Remove from heat; stir in spinach until wilted. If desired, serve with goat cheese. 2 tablespoons masoor dal, washed (split red lentils)
2 cups chopped tomatoes or 2 cups diced tomatoes
3/4 cup chopped spinach (palak)
1/2 cup chopped onion
1 -2 teaspoon chopped garlic
2 -3 black peppercorns
1/2 cup milk or 1/2 cup soymilk
1 teaspoon lemon juice
2 teaspoons ghee or 2 teaspoons olive oil
salt

Steps:

  • Heat the butter in a pan and add the onions, garlic and peppercorns.
  • When the onions turn translucent, add the lentils, tomatoes, salt and 2 cups of water and cook till the dal is tender. About 20 minutes.
  • When cool, blend to get a smooth purée.
  • Add the spinach, milk and bring to a boil.
  • Finish by adding the lemon juice.
  • Serve hot.

Steps:

  • Heat the oil in a soup pot. Add the onion and saute over medium heat until golden.
  • Add the lentils and 6 cups water and bring to a simmer. Stir in curry powder, cover, and simmer very gently for 35 to 40 minutes.
  • When the lentils are mushy, stir in the spinach and check the consistency. If the soup is too thick, add about 1/4 cup water. Season with salt and additional curry powder, if desired.

1 cup lentils, uncooked
5 cups nonfat beef broth
1 teaspoon salt
1/4 cup olive oil
2 cups onions, chopped
1/4 teaspoon cayenne
2 bay leaves
1/2 cup bulgur, raw
1/4 cup fresh parsley, chopped
2 cups tomatoes, chopped
1/4 cup tomato paste
1 pinch dried rosemary
salt and pepper
2 cups spinach, coarsely chopped
to taste parsley, chopped

Steps:

  • Rinse the lentils.
  • Bring them to a boil in the beef broth.
  • Reduce heat and simmer, covered, for 40 minutes.
  • Meanwhile, heat the olive oil in a heavy soup pot. Saute the onions until translucent. Add the garlic, cayeene, bay leaves and bulgur.
  • Stir the mixture on medium heat until the onions and bulgur are lightly browned.
  • Mix in the parsley and tomatoes.
  • When the tomatoes begin to give up their juice, gently stir in the tomato paste. Pour the lentils and their liquid into the soup pot with the onions and bulgur.
  • Simmer the soup for 15 minutes.
  • Add the rosemary, salt and pepper to taste. If the lentils and bulgur have absorbed too much liquid, add more broth, water or tomato juice. Remove the bay leaves.
  • Just before serving, stir in the fresh spinach and let it wilt in the hot soup.
  • Garnish with more fresh parsley.
  • NOTES : Serve this soup with crusty bread.
  • Broil the bread on both sides, rubbed with a cut garlic clove, and drizzled with olive oil.

This is my variation of a soup recipe from Sundays at Moosewood. It's always a hit when I make it and I once even had an offer to package it and sell it in a New York City coffee shop.

1 cup dried lentils
5 cups water or 5 cups really good beef stock
1 teaspoon salt
1/4 cup olive oil
2 cups roughly chopped onions
3 garlic cloves, pressed
1 teaspoon cayenne pepper
2 bay leaves
1 tablespoon ground cumin
1 teaspoon ground coriander
1 (28 ounce) can whole tomatoes
1/2 teaspoon hot chili powder
2 (10 ounce) packages whole frozen leaf spinach or 2 (10 ounce) packages fresh Baby Spinach
salt & pepper
2 slices bacon, chopped (optional)
1 cup sour cream (optional) or 1 cup Greek yogurt (optional)

Steps:

  • Rinse lentils and bring to a boil in 5 cups salted water or stock. Once boiling, reduce heat and simmer, covered for 40 minutes.
  • While lentils boil, in a separate stock pot, heat olive oil over medium heat and sauté onions and the optional bacon. When the onions just begin to soften, add garlic, cayenne, bay leaves, cumin, coriander and chili powder. Cook for a few minutes, but don't allow garlic to brown.
  • Add tomatoes and crush with a spoon to your desired consistency. If lentils are ready, add them to the tomato mixture now. If not, take tomatoes off heat and wait for lentils.
  • Once lentils have been added to the tomatoes, simmer for 15 minutes over medium heat. Add salt and pepper to taste. You may also want to add some more spices if you like a little more kick to it.
  • Add frozen spinach and cook another five minutes. If using fresh spinach, only cook for two minutes.
  • If wanted, serve with a dollop of Greek yogurt or sour cream.
  • The lentils do soak up a lot of liquid, so for reheating, you may need to add more stock.

GREEK LENTIL AND SPINACH SOUP WITH LEMON



Greek Lentil and Spinach Soup With Lemon image

Adapted from "The Dairy Hollow House Soup and Bread Cookbook" by the indomitable Crescent Dragonwagon (not her birth name, obviously). I use a sweet potato instead of the butternut, as I am more likely to have those on hand and they are easier to peel and to scale down for fewer servings. I also use homemade chicken stock in lieu of veggie stock, as my freezer is always loaded with it, but you would get good results even with plain water. Use chard in place of spinach, if you like. Serve as an entree with a Greek salad and some good bread. NOTE: when I first made this, I weighed out a pound of mixed colors of lentils, in an effort to use some up. It came out VERY thick, like porridge, so I had to add extra liquid. For that reason, I recommend using less than the pound of lentils called for; somewhere between 1/2 and 3/4 pound should work well.

Steps:

  • In a large, heavy soup pot, combine cleaned lentils, stock (or water), chili, coriander seeds, cumin seeds, oregano, basil, thyme and bay leaves. Bring to a boil, then turn down heat to very low and let simmer, partially covered, about 30 minutes.
  • Add potatoes and spinach, cover again and let simmer another 15 minutes. Add the butternut squash. Cover again and let simmer while you do the next step.
  • Heat the olive oil in a skillet and add the onion and sauté until it starts to soften, about 3 minutes. Add the celery and garlic and sauté another 3 minutes, stirring often. Add this mixture to the soup; deglaze the skillet with a little soup and add the pan contents to the pot. Add salt, taste for seasoning.
  • Just before serving, add the lemon juice, stir well and taste again for seasoning. Serve hot with a lemon slice floating on top of each bowl of soup.

1 large onion, finely chopped
4 garlic cloves, minced
3 cups water
4 cups chicken stock or 4 cups vegetable stock
1 cup lentils (French blue ones are nice or green)
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
10 ounces frozen spinach, thawed
3 ounces vermicelli, broken (or other fine pasta)
1/2-1 lemon
salt
pepper
1/4 cup cilantro, chopped

Steps:

  • In a large saucepan set over low-moderate heat, saute the onion in a drizzle of oil with a pinch of salt until transparent and starting to brown, 4 to 7 minutes.
  • Add the garlic and cook for 1 more minute.
  • Add the water, stock, lentils, and spices, and bring to a simmer.
  • Cook, covered, until the lentils are tender, 30 to 40 minutes.
  • In the meantime, drain the spinach in a colander and squeeze by handfuls to remove as much liquid as possible.
  • In a large skillet, saute the spinach in batches with a drizzle of olive oil and a pinch of salt until cooked and almost crisp.
  • Transfer the cooked spinach to a plate and set aside.
  • Once the lentils are tender, add the vermicilli pieces and cook until the pasta is nearly tender, about 4 to 6 minutes.
  • Add the sauteed spinach and juice of half a lemon to the pot, stir well, and add salt and pepper.
  • Add more lemon if you like, or pass around wedges at the table.
  • Ladle into bowls and top with cilantro.

4 large onions, thinly sliced

2 quarts low-sodium vegetable or chicken broth
2large carrots, scraped and finely chopped
1 large stalk celery, finely chopped
3 cloves garlic, minced
½ teaspoon ground cinnamon
2 large bay leaves
1 cup dry white wine
1¼ cups du Puy lentils, picked over and rinsed
2/3 cup long-grain white rice
12 cups (about 6 ounces) loosely packed baby spinach
2 tablespoons sherry vinegar

Steps:

  • In a very large skillet set over medium-high heat, heat 1 tablespoon oil and the butter until butter stops foaming. Add onions and 1 teaspoon salt, toss to coat, and cook until onions release some liquid, about 6 minutes. Reduce heat to medium-low and cook, stirring and scraping bottom of pot frequently (adjusting heat if needed), until onions are golden brown, about 40 minutes longer. Add 1 cup broth, increase heat to high, and use wooden spoon to scrape up brown film on bottom of pot so it dissolves into liquid, about 30 seconds. Set aside off heat. Meanwhile, in a large Dutch oven over medium heat, heat remaining 2 tablespoons oil until shimmering. Add carrots and celery and cook, stirring occasionally, until soft, about 8 minutes. Add garlic, cinnamon, and bay leaves, and cook, stirring constantly, until fragrant, about 40 seconds. Add wine, increase heat to high, scrape up brown film on bottom of pot until it dissolves into the liquid, and cook, stirring constantly, for 1 minute. Add lentils and remaining 7 cups broth, and bring to a boil. Reduce heat to low, cover, and simmer for 25 minutes. Add rice, 1½ teaspoons salt, and pepper to taste, replace cover, and cook 20 minutes longer. Add onion mixture, stir, replace cover, and continue cooking until lentils and rice are tender, 5 to 10 minutes longer. Discard bay leaves, add spinach and vinegar, and cook until spinach wilts, about 1 minute. Adjust seasoning with salt, pepper, or vinegar, if necessary, and serve hot.

IRON SOUP (SPINACH AND LENTIL WITH A PUNCH)



Iron Soup (Spinach and Lentil With a Punch) image

As an anemic, I try to keep my iron up by eating the right food, rather than supplementation. This soup is a variant on a basic spinach and red lentil soup (thanks, English_Rose!) with extra ingredients chosen for their high iron content. If you love Indian food, you'll love this soup! I happened to make it after having boiled a beet, so instead of vegetable stock, I used the water from the beet, which added a nice extra flavour. (NB: an iron-rich diet should be undertaken with advice from a professional.)

A rich lentil soup recipe which I've adapted from an online Jamie Oliver recipe, and posted here in response to a Forum request for a lentil soup recipe without tomatoes. The preparation and cooking times below do not include the one hour required for soaking the lentils.

375 g green lentils, soaked for 1 hour
salt, to taste
fresh ground black pepper, to taste
1 kg spinach
2 onions, cut in half then sliced thinly
4 tablespoons oil
6 garlic cloves, sliced
1 tablespoon plain flour
1 1/2 lemons, juice of

Steps:

  • Wash and drain the lentils, place them in a pan with water to cover and simmer for 30 minutes or until they are very tender, adding salt and pepper, to taste, towards the end of the cooking time.
  • Wash the spinach thoroughly, remove the stems, chop the leaves coarsely, and add them to the lentils.
  • Sauté the onions and garlic in oil until soft, add the flour and stir well.
  • Add a cup of water and stir until this sauce thickens; then pour the sauce into the soup.
  • Add the lemon juice and more water, if necessary, and simmer until the soup is thick.
  • Serve very hot.

1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
2 small sweet potatoes, peeled and cut into 1/2 inch cubes
1 1/2 cups brown lentils
4 (15 ounce) cans vegetable broth
2 cups water
2 cans (15 ounce) diced tomatoes
2 bay leaves
1 teaspoon dried thyme
1 tablespoon chopped fresh rosemary
Salt and pepper, to taste
2 cups chopped fresh spinach

Steps:

  • 1. In a large pot, heat the olive oil. Add the onion and garlic. Saute until onion is tender and garlic is light brown in color. Add carrot, celery, and sweet potatoes. Cook until vegetables soften, about 5-7 minutes. 2. Stir in the lentils, vegetable broth, and water. Add the diced tomatoes, bay leaves, thyme, and rosemary. Season with salt and pepper and stir. Cook on medium-low heat for about 35-40 minutes or until lentils are cooked. 3. Add the fresh spinach and stir. If necessary, season with salt and pepper. Remove bay leaves and serve warm.

1 tablespoon extra-virgin olive oil 1/4 cup chopped pancetta (about 1 ounce) 1 1/4 cups chopped onion 3/4 cup chopped celery 3/4 cup chopped carrot 1 teaspoon chopped fresh thyme 1 bay leaf 1 cup dried brown lentils 3 cups fat-free
lower-sodium chicken broth 2 cups water 1 (6-ounce) package fresh baby spinach 1/2 cup chopped fresh basil 1/4 cup (1 ounce) grated fresh Parmesan cheese 1 tablespoon fresh lemon juice 1/8 teaspoon freshly ground black pepper

Steps:

  • 1. Heat a Dutch oven over medium heat. Add oil to pan; swirl to coat. Add pancetta; cook 1 minute or until pancetta begins to brown, stirring occasionally. Add onion and next 4 ingredients (through bay leaf); cook 8 minutes or until vegetables are tender, stirring occasionally. Add lentils, broth, and 2 cups water; bring to a boil. Cover, reduce heat, and simmer 40 minutes or until lentils are tender and mixture is slightly thickened. Remove from heat. Discard bay leaf. 2. Place 2 cups lentil mixture in a blender. Remove the center piece of blender lid (to allow steam to escape), and secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters), and blend until smooth. Return pureed lentil mixture to pan. Add baby spinach, chopped basil, Parmesan cheese, lemon juice, and black pepper; stir until spinach wilts. Serve immediately.

This recipe was shared with me by my one of my dearest friends. My husband & I have duplicated the recipe many times since our first tasting and it's received many great reviews! This recipe can be altered for a vegetarian's meal.

1 tablespoon olive oil
3 leeks, finely chopped
4 garlic cloves, crushed
3 potatoes, peeled and chopped
3 bay leaves
4 sprigs fresh thyme
4 sprigs fresh oregano
4 cups chicken stock (you can substitute vegetable stock here to make this dish vegetarian.)
8 cups water
350 g green lentils (these must be soaked for two hours before using them in the recipe, we've also used a mixture of RED)
500 g spinach, trimmed & chopped (English)
1/3 cup lemon juice
lemon wedge (for garnish)
sour cream (for garnish)

Steps:

  • Prepare your ingredients.
  • Heat a large stock pot on Medium Heat; add the tablespoon of olive oil.
  • When the oil is hot add the leeks and garlic to be sauteed.
  • Saute them until the leeks are clear.
  • Turn down the heat to low-- very low.
  • Add the chicken stock and water to the pot. Add the potatoes, bay leaves, thyme and oregano. Let the soup simmer on low heat for about an hour or so (or until the potatoes are cooked to your liking).
  • Add the lentils at this point; continue simmering for 10 minutes.
  • Just before you are about to serve dinner, add in the spinach and lemon juice.
  • The longer the spinach is in the soup, the more it will be wilted.
  • It is best added to the soup minutes before you are about to serve it.
  • Garnish the soup with a lemon wedge and a dollop of sour cream.
  • **This soup could also easily be prepared in a crock pot!
  • **This recipe also doubles well!

When we lived in Houston we ate often at a restaurant called "Gyro, Gyro". The family that owned it was Middle Eastern and made the most delicious lentil soup I ever tasted. Sadly, the restaurant burned and never re-opened. I have searched and searched for a recipe similar to the one that they used. I have not found anything....

1 lb dried lentils (i used green.)
8 c beef broth (you may also substitute chicken or vegetable broth.)
2 c water
1 medium onion (may use large if desired)
4 Tbsp extra virgin olive oil
4 clove garlic - smashed but still whole
1 can(s) (15 ounces) crushed or diced tomatoes
2 bay leaves
4 Tbsp butter
1 box (10 ounces) frozen spinach
1 Tbsp cumin
salt and pepper to taste
1-2 small chilis (optional) thinly sliced
1 bunch cilantro, fresh (for garnish)
1 pkg frozen, sliced carrots (10 - 13 ounces) (you may certainly use fresh, grated carrots; i just did not have any on hand when i wrote the recipe.)

Steps:

  • 1. Pick over and wash your lentils.
  • 2. Place beef broth, water, and lentils in a dutch over over a medium heat. Do not cover yet.
  • 3. Slice onion very thin. Put half of the raw onion into the pot with the lentils.
  • 4. Put 2 tablespoons of butter and 2 tablespoons of olive oil in a small skillet and heat. Cook the rest of the onion until crispy and add to the lentils and broth. Use a slotted spoon and do NOT add the olive oil and butter to the soup mixture.
  • 5. Smash the garlic cloves slightly to remove the skin, cut off the stem end and place in soup pot.
  • 6. Add a 15 ounce can of crushed or diced tomatoes. Do not drain if using crushed. Drain if using diced.
  • 7. Add 2 whole bay leaves.
  • 8. Add the remaining 2 tablespoons of butter to the pot.
  • 9. Add salt and pepper to taste.
  • 10. Add 10 ounces of frozen spinach to the pot.
  • 11. Cook on low heat, covered, until lentils begin to soften.
  • 12. Once lentils have begun to soften, add carrots.
  • 13. Add very thinly sliced chilis if desired.
  • 14. Serve using the remaining olive oil, the cilantro, and sour cream, if desired, as garnish.
  • 15. This is great with crisped pita bread as a side dish. I drizzle mine with olive oil and crisp it in the oven. Then, we dip it into the soup as we eat.

1 tablespoon olive oil
1 onion, chopped
⅔ cup dry green lentils
1 ¾ cups water
1 tablespoon all-purpose flour
⅔ cup chopped fresh spinach
3 tablespoons lemon juice
½ teaspoon salt

Steps:

  • Heat oil in a pot over medium heat. Stir in onion and cook until soft about 7 minutes, stirring occasionally. Add the lentils and water and bring to a boil, then reduce heat to low and simmer, uncovered, until lentils are tender, 20 to 25 minutes. Cooking times will vary depending on the freshness of the lentils.
  • Ladle a half cup of the soup liquid into a bowl and whisk in the flour to form a paste. Mix the paste into the soup. Add the spinach, lemon juice, and salt. If you prefer a thinner soup, add a bit more water. Cook until spinach is wilted, about 5 minutes. Adjust salt and lemon to suit your taste.
