1 medium honeydew, peeled, seeded and cubed
1 medium cantaloupe, peeled, seeded and cubed
2 cups cubed seedless watermelon
2 medium peaches, sliced
2 medium nectarines, sliced
1 cup seedless red grapes
1 cup halved fresh strawberries
1 can (11 ounces) mandarin oranges, drained
2 medium kiwifruit, peeled, halved and sliced
2 medium firm bananas, sliced
1 large Granny Smith apple, cubed
1 can (12 ounces) frozen lemonade concentrate, thawed
1 package (3.4 ounces) instant vanilla pudding mix

Steps:

  • In a large bowl, combine the first nine ingredients. Cover and refrigerate for at least 1 hour., Just before serving, stir in bananas and apple. Combine lemonade concentrate and dry pudding mix; pour over fruit and toss to coat.

This is a chilled salad that was served at a brunch. It would be a great side dish with any meal though. The lemonade is so refreshing and cleansing! I loved this!

12 ounces frozen pink lemonade concentrate
1 (16 ounce) can crushed pineapple, drained
1 (14 ounce) can Eagle Brand Condensed Milk
1 (8 ounce) container Cool Whip
36 Ritz crackers, one sleeve
4 tablespoons butter

Steps:

  • Mix 1 sleeve Ritz crackers with 4 tbs. melted butter.
  • Spread this in 9x13 dish.
  • Make sure the cool whip is thawed. Stir so that it is creamy, not lumpy. Mix the cool whip and all other ingredients together really good.
  • Pour mixture on top of crackers.
  • Chill in the refrigerater for at least 1 hour and serve. Cooking time is the chill time.

2-1/4 cups butter-flavored cracker crumbs (about 64 crackers)
1/2 cup butter, melted
3 tablespoons sugar
2 cans (14 ounces each) sweetened condensed milk
1 can (12 ounces) frozen lemonade concentrate, thawed
1 carton (12 ounces) frozen whipped topping, thawed
1 can (11 ounces) mandarin oranges, drained
6 to 8 maraschino cherries

Steps:

  • Combine cracker crumbs, butter and sugar. Press into an ungreased 13-in. x 9-in. dish; set aside. , In a bowl, combine milk and lemonade concentrate until smooth (mixture will begin to thicken). Gently fold in whipped topping. Pour over crust. Cover and refrigerate for 3-4 hours. Garnish with oranges and cherries.

1/4 cup sugar
1/2 cup melted butter or 1/2 cup margarine
1 (14 ounce) can sweetened condensed milk
8 ounces whipped cream
1 (6 ounce) can frozen pink lemonade concentrate
3 -5 drops red food coloring

Steps:

  • Combine the cracker crumbs, sugar and melted butter in a 9x13 inch dish.
  • Reserving 2 or 3 tablespoons for topping press down with a tablespoon.
  • Combine milk, whipped topping, lemonade concentrate and food color in a bowl and mix well.
  • Spread over the crumbs.

  • 1. Prepare the crust by mixing the crushed crackers, powdered sugar and butter together thoroughly. Press into a 9 x 13 pan.
