Lemon Souffles image

These individual souffles are easier to make than you might think. To help them rise properly, use upward brush strokes to butter the dishes.

2 tablespoons unsalted butter, plus more, room temperature, for dishes
1/2 cup granulated sugar, plus more for dishes
8 large egg yolks plus 10 large egg whites, room temperature
2 tablespoons all-purpose flour
1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons), plus 2 tablespoons finely grated lemon zest
1 cup whole milk
Garnish: confectioners' sugar

Steps:

  • Preheat oven to 375 degrees. Butter six 12-ounce souffle dishes, and then dust with granulated sugar. Whisk together yolks, flour, zest, and 2 tablespoons granulated sugar.
  • Bring milk to a boil in a small saucepan. Slowly pour milk into yolk mixture, whisking constantly to prevent yolks from cooking. Return mixture to pan, and whisk until thick like a pudding, 1 to 2 minutes. Strain through a sieve, and whisk in butter and lemon juice.
  • Beat whites until foamy. Gradually add remaining 1/4 cup plus 2 tablespoons granulated sugar, and beat until stiff peaks form. Stir a third of the whites into the yolk mixture. Gently fold in the remaining whites using a rubber spatula.
  • Fill each souffle dish to the top, and smooth. Run your thumb around edges to remove batter from rims.
  • Bake on a rimmed baking sheet until souffles rise and are golden, about 16 minutes. Dust with confectioners' sugar, and serve immediately, before souffles lose their height.

With their tangy lemon flavor and creamy texture, these pretty little souffles make the perfect finish to a special meal. Dress up each serving with lemon peel or other garnish.

1 large egg, separated
1/3 cup sugar
1/3 cup 2% milk
1 tablespoon butter, melted
1 tablespoon all-purpose flour

Coarse sugar, edible pansies and fresh mint leaves, optional

Steps:

  • In a small bowl, beat egg yolk until slightly thickened. Gradually add sugar, beating until thick and lemon-colored. Beat in the milk, butter, flour and salt. Stir in lemon juice and zest., In a small bowl, beat egg white until stiff peaks form. With a spatula, stir a fourth of the egg white into lemon mixture until no white streaks remain. Fold in remaining egg white until combined. , Divide between 2 ungreased 6-oz. ramekins or custard cups. Place in an 8-in. square baking dish; add 1 in. of hot water to dish. , Bake at 350° for 25-30 minutes or until tops are golden brown. If desired, sprinkle with coarse sugar, and garnish with pansies and mint. Serve immediately.

Steps:

  • Preheat oven to 400°F. Coat six 3/4-cup soufflé dishes with butter and sugar. Bring milk to simmer in medium saucepan over medium heat. Whisk 1/4 cup sugar, cornstarch, and yolks in bowl to blend. Gradually whisk in hot milk. Return mixture to saucepan; bring to simmer, whisking constantly. Remove from heat. Whisk in lemon juice and peel. Cool.
  • Using electric mixer, beat egg whites to soft peaks. Gradually beat in remaining 1/2 cup sugar. Continue beating until stiff but not dry. Fold 1/4 of whites into lemon mixture. Fold in remaining whites. Spoon mixture into prepared dishes, dividing equally. Bake until puffed and brown on top, about 18 minutes. Serve immediately.

8 large lemons
3 eggs, separated
1/2 cup sugar, divided
2 tablespoons all-purpose flour
confectioners' sugar
1/2 teaspoon lemon zest

Steps:

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsuis). Line a sheet pan with parchment paper.
  • Slice the stem ends from the lemons so they can sit level. Cut off the tip end of each lemon, parallel with the bottom and roughly ⅓ of the way down. Reserve the tops.
  • Hold each lemon firmly and use a serrated knife to cut out the pulp. Use a melon baller to scoop out the flesh into a sieve placed over a bowl. Squeeze the juice from the pulp and reserve for later. Place the hollowed-out lemons on the sheet pan.
  • In a heat-proof bowl, combine the egg yolks, ¼ cup sugar, ¼ cup reserved lemon juice, lemon zest and flour. Whisk until pale yellow. Place the bowl over a pot of simmering water and continue to whisk for about 8 minutes, until very thick. Remove from the heat and beat with an electric mixer for about 10 minutes, until cooled, while scraping down the sides. Transfer to a clean bowl and set aside.
  • In a medium mixing bowl, combine the egg whites with the remaining ¼ cup sugar. Beat with the electric mixer on low speed until frothy. Slowly increase the mixer speed until the meringue is shiny and hold soft peaks, about 2 to 3 minutes.
  • Whisk about ⅓ of the meringue into the yolk mixture, then fold in the remaining meringue gently. Fill the lemon shells to just below the rim.
  • Bake for approximately 14 to 16 minutes, until the tops are golden and have risen about 1 inch above the shell.
  • Serve immediately, garnished with confectioners' sugar and the reserved lemon tops.

Vegetable oil
1/4 cup water
1 teaspoon unflavored gelatin
3 large eggs, separated
2 tablespoons cornstarch
1 cup plus 2 tablespoons whole milk
6 tablespoons sugar, divided
6 tablespoons fresh lemon juice
1 1/2 teaspoons finely grated lemon peel
Caramel Sauce

Steps:

  • Lightly oil six 3/4-cup soufflé dishes or custard cups; set aside. Pour 1/4 cup water into small bowl. Sprinkle gelatin over; let stand until gelatin softens, about 15 minutes.
  • Meanwhile, whisk egg yolks and cornstarch in medium bowl until smooth. Combine milk and 3 tablespoons sugar in heavy medium saucepan; stir over medium heat until sugar dissolves and mixture comes to simmer. Gradually whisk 1/3 of hot milk mixture into yolk mixture. Pour mixture back into remaining milk mixture in saucepan. Whisk constantly over medium-high heat until mixture boils and thickens, about 2 minutes. Reduce heat to medium and whisk 2 minutes longer. Remove from heat; whisk in lemon juice and lemon peel. Add gelatin mixture; stir until gelatin dissolves.
  • Whisk egg whites and remaining 3 tablespoons sugar in medium bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); whisk constantly until instant-read thermometer inserted into mixture registers 140°F, about 2 minutes. Transfer egg white mixture to large bowl of stand mixer and beat until stiff peaks form. Fold egg white mixture into warm lemon custard in 3 additions. Transfer mixture to medium bowl; let stand 10 minutes to cool slightly.
  • Divide lemon custard among prepared soufflé dishes; level off tops with back of knife. Refrigerate soufflés uncovered overnight. (Can be prepared 2 days ahead. Cover and keep refrigerated.).
  • Run small knife around soufflés to loosen. Place small plate atop 1 soufflé and invert. Using both hands, hold plate and soufflé dish tightly together and shake gently, allowing soufflé to settle on plate (if soufflé does not release from dish, place bottom of soufflé dish in 1 inch of warm water for 20 seconds). Repeat with remaining soufflés. Spoon room-temperature Caramel Sauce generously over top of each soufflé and serve.

LITTLE LEMON SOUFFLES



Little Lemon Souffles image

If you're lucky enough to find them, sweet, fragrant Meyer lemons will make this airy concoction a little more special.

8 large lemons, preferably Meyer
3 large eggs, separated
1/2 cup granulated sugar
2 tablespoons all-purpose flour
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with parchment. Trim tip end from a lemon so fruit sits level. Cut stem end one-third of the way down, making cut parallel with bottom; reserve top. Repeat with remaining lemons.
  • Hold a lemon above a sieve set over a bowl, and scoop out the pulp. Squeeze the juice from the pulp, and reserve. Repeat with all lemons. Place shells on prepared baking sheet.
  • Combine egg yolks, 1/4 cup granulated sugar, 1/4 cup reserved lemon juice, and flour in the heat-proof bowl of an electric mixer fitted with the whisk attachment. Beat mixture on medium speed until pale yellow, about 3 minutes. Place bowl over a pan of simmering water; whisk constantly until very thick, about 8 minutes. Remove bowl from heat, and return to mixer. Beat on medium speed until cool, scraping down sides several times, about 10 minutes. Transfer to a medium bowl, and set aside.
  • Combine egg whites and remaining 1/4 cup granulated sugar in clean mixer bowl. Place the bowl over the pan of simmering water, and stir until sugar has dissolved and mixture is warm to the touch. Remove bowl from heat, and return to mixer; beat on low speed until frothy. Gradually increase speed until meringue is shiny and holds soft peaks, 2 to 3 minutes, being careful not to overbeat.
  • Whisk 1/3 of the meringue into the yolk mixture. Gently fold in the remaining meringue. Carefully fill the prepared lemon shells to just below the rims.
  • Transfer baking sheet to oven, and bake until meringue is slightly golden and rises about 1 inch above the shell, about 14 minutes. Remove from oven, and transfer to serving plates. Garnish with the reserved lemon tops, and dust with confectioners' sugar. Serve immediately.

Gently fold whipped egg whites into a citrusy lemon custard for a light and impressive dessert.

1 stick (8 tablespoons) unsalted butter, plus more, for the ramekins
3/4 cup sugar, plus more, for the ramekins
1/2 cup freshly squeezed lemon juice (from about 4 lemons), plus 1 teaspoon finely grated lemon zest
4 large eggs, separated
2 tablespoons all-purpose flour
Pinch of salt
Pinch of cream of tartar, optional
Raspberry sorbet, optional

Steps:

  • Lightly brush four 8-ounce ramekins with butter, then dust each with sugar. (This can be done up to 2 hours ahead.)
  • Melt the butter in a heavy medium saucepan over medium-low heat, then cool to warm. Whisk in the sugar and lemon juice and zest until the sugar is dissolved. Whisk in the egg yolks. Cook over medium-low heat, whisking constantly, until the mixture thickens and an instant-read thermometer registers 175 degrees F, about 10 minutes. Do not boil. Transfer the egg yolk mixture to a large bowl and whisk in the flour until smooth. Cool to room temperature, about 30 minutes.
  • Place an oven rack in the center of the oven; preheat the oven to 400 degrees F.
  • Put the egg whites, salt and cream of tartar if using in a large, clean nonreactive bowl. Beat the egg whites with an electric mixer until they hold soft peaks. Fold a quarter of the beaten egg whites into the egg yolk mixture to lighten. Gently fold in the remaining egg whites.
  • Divide the souffle mixture evenly among the prepared ramekins. Place the filled ramekins in a roasting pan. Carefully fill the pan with enough hot water to come halfway up the sides of the ramekins. Bake the souffles until golden brown on top, 12 to 14 minutes. Using tongs as an aid, carefully remove the hot souffles from the water to a plate.
  • If desired, make a small indentation in the center of each souffle and place a small scoop of raspberry sorbet in the indentations. Serve the souffles immediately.

FROZEN LEMON SOUFFLES



Frozen Lemon Souffles image

These delectable little souffles have a tart lemon curd-like layer sandwiched between layers of fluffy lemon souffle. This can also be made in a 32 oz. souffle dish. The recipe is from an April 1984 issue of Bon Appetit.Refrigerating and freezing times are not included in prep time.

1/2 cup sugar
1/2 cup fresh lemon juice, strained
6 tablespoons unsalted butter
5 egg yolks
1 tablespoon lemon peel, finely grated
10 egg yolks, room temperature
1 1/4 cups sugar
2/3 cup fresh lemon juice, strained
2/3 cup water
2 tablespoons lemon peel, finely grated
2 3/4 cups whipping cream

Steps:

  • For Filling.
  • Whisk all ingredients in top of nonaluminum double boiler set over boiling water until mixture thickens enough to coat back of spoon, about 8 minutes;do not let mixture boil.
  • Pour into nonaluminum container; cool to room temperature.
  • Cover and refrigerate until very cold and firm.
  • (Can be prepared 2 weeks ahead and chilled.).
  • For Souffle.
  • Tie strip of parchment or foil around each of 8 (4 oz.) ceramic souffle dishes so that paper extends 1 1/2 inches above rim;set aside.
  • Place yolks in large mixer bowl and whisk to blend well.
  • Bring large saucepan of water to gentle simmer.
  • In a small saucepan, cook sugar, lemon juice ,2/3 cup water and peel over low heat until sugar disolves completely, swirling pan occasionally.
  • Increase heat and bring to a boil;whisk into yolks in bowl.
  • Immediately set bowl over simmering water and whisk until mixture triples in volume and forms slowly disolving ribbon when whisk is lifted, about 10 minutes; do not boil.
  • Set souffle base aside until cool, stirring mixture occasionally.
  • Beat 2 1/2 cups whipping cream to soft peaks.
  • Fold into cooled souffle base.
  • Fill each prepared dish 3/4 full.
  • Whip remaining 1/4 cup cream to stiff peaks.
  • Reserve 1/4 cup lemon filling in refrigerator; fold whipped cream into remaining filling.
  • Spoon thin layer into each dish,spreading evenly.
  • Spoon remaining souffle base into dishes,smoothing tops if necessary.
  • Cover and freeze until firm, about 4 hours.
  • Spoon reserved filling into pastry bag fitted with small open star tip(freeze mixture if too runny to pipe).
  • Pipe single star or rosette in center of each souffle; remove paper collars.
  • If souffles are solidly frozen, let soften slightly in refrigerator before serving.

Found this in Taste of Home Magazine and it sounds wonderful. Tangy lemon flavor with creamy souffles, recommends dressing up each serving with lemon peel or other garnish. What a wonderful taste of lemon (I put in a little extra as I like it tart) and the cake soufle mixed with the lemony pudding. YUM!

1 12-ounce package frozen unsweetened raspberries, thawed
7 tablespoons sugar
3 tablespoons seedless raspberry jam
1 tablespoon cornstarch
1 teaspoon grated lemon peel
1 teaspoon vanilla extract
4 large egg whites
Pinch of salt
Powdered sugar (optional)

Steps:

  • Preheat oven to 400°F. Spray six 3/4-cup soufflé dishes or custard cups with oil spray. Place dishes on baking sheet. Puree raspberries with juices in processor. Strain puree into heavy medium saucepan, pressing to extract as much liquid as possible. Add 4 tablespoons sugar, jam and cornstarch to saucepan. Whisk over medium heat until mixture boils and thickens, about 2 minutes. Add lemon peel and vanilla. Transfer to large bowl. Cool, whisking occasionally.
  • Using electric mixer, beat egg whites and salt in another large bowl until soft peaks form. Gradually add 3 tablespoons sugar; beat until stiff but not dry.   • Place oven rack in the middle position and preheat the oven to 350 degrees.Using butter of nonstick spray oil,lightly grease 8 ounce ramekins and place them in a large baking pan.Set a kettle of water on the stove to boil.In a large bowl,add the sugar,flour,salt,lemon juice& zest,milk and melted butter & whisk until smooth.Beat N egg yolks 1 @ a time & whisk until mixture is thick & pale yellow.N a med.bowl,using a handheld mixer,beat egg whites until stiff but not dry.Fold whites N2 the lemon mixute.Ladle mixture N2 prepared ramekins until each is three quarters full.Place the pan on the middle rack N oven & carefully pour the boiler H20 N2 baking pan until it comes 1/2 inch up the sides of ramekins.Bake til souffles R lightly browned & pudding jiggles slightly,about 40 mins.Carefully remove pan from oven&lift the puddings on2 a rack 2 cool then cover & refrig.When ready 2 serve,heat overn to 325 degrees then turn oven off.place puddings in the warm oven 4 30 mins.Meanwhile,cut off tops& bottoms of oranges.Remove all peel &pith.Separate segments from the membrane & put the segments N a small bow.Squeeze any remaining juice on top and add sugar 2 taste.Orange segments & juice can be spooned on2 or served alongside the warmed puddings.

Easy Lemon Souffles (Diabetic Friendly) image

Light, fluffy lemon souffles that are low in calories, fat and carbs. Exchanges: 0.5 starch, 1 carb, 1 lean meat. Found this in the Spring 2013 Diabetic Living magazine. 1/2 cup Splenda sugar substitute, sugar blend
1/3 cup all-purpose flour
1/8 teaspoon salt
2/3 cup nonfat milk
2 teaspoons finely shredded lemon peel
1/2 cup lemon juice
4 egg yolks
6 egg whites
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 350°F Lightly coat six 8-ounce souffle dishes with nonstick cooking spray; place dishes on a baking sheet. Chill dishes.
  • In a small saucepan stir together sugar, flour and 1/8 tsp salt. Whisk in milk and lemon juice. Cook and stir over medium-low heat 8 to 10 minutes or until thickened and bubbly. Stir in peel. Remove from heat.
  • In a large bowl beat egg yolks with an electric mixer on medium to high speed 3 to 5 minutes or until thick and lemon color. Stir milk mixture into yolks to combine.
  • Thoroughly wash beaters. In another large bowl beat egg whites with an electric mixer on medium to high speed until foamy. Add cream of tartar. Beat on high speed until stiff peaks form (tips stand straight).
  • Gently fold egg whites into milk mixture. Divide batter among prepared dishes. Bake 20 minutes or until a knife inserted near centers comes out clean. If desired, sift powdered sugar over souffles. Serve immediately.
