4 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
2 cups unsalted butter at room temperature
1 cup confectioners' sugar
2 tablespoons fresh lemon juice
6 tablespoons unsalted butter, melted
⅓ cup lemon juice, or more to taste
3 cups confectioners' sugar
lemons, zested

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sift or whisk flour, salt, and baking powder together in a bowl.
  • Place butter in a large mixing bowl and mix with a wooden spoon until very creamy. Add confectioners' sugar, lemon juice, and flour mixture; mix until well combined.
  • Roll dough out on a lightly floured surface to 1/4-inch thickness. Cut into rounds using a round cookie cutter. Transfer cookies to ungreased baking sheets.
  • Bake in the preheated oven until cookies are light brown on the bottom but still very light on top, about 10 minutes. Allow cookies to cool on the baking sheets for about 2 minutes before transferring to wire racks to cool completely.
  • Whisk melted butter and lemon juice together in a small bowl. Add lemon zest and whisk again. Whisk in confectioners' sugar 1 cup at a time. Add more lemon juice if necessary for a thin consistency.
  • Dip the top of each cookie in the glaze and transfer to a wire rack placed over waxed paper or parchment paper. Allow cookies to sit until glaze has set, about 2 hours.
  • Store cookies in an airtight container between layers of waxed paper.

3 sticks (1 1/2 cups) unsalted butter, softened, plus more for the pan
1 cup sugar
1 tablespoon finely grated lemon zest
2 teaspoons finely chopped fresh rosemary
1/2 teaspoon kosher salt
1/2 teaspoon vanilla
3 1/2 cups all-purpose flour
1 1/2 cups confectioners' sugar
1 lemon, zested and juiced

Steps:

  • For the cookies: Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on two sides. Lightly butter the foil and sides of the pan.
  • Pulse the sugar with the lemon zest and rosemary in a food processor until well combined. Remove 2 tablespoons of the sugar mixture and reserve.
  • Add the butter, salt and vanilla to the food processor with the sugar and pulse until combined. Add the flour, about 1 cup at a time, pulsing to combine after each addition. (After the last addition, you may need to stir and scrape down the sides of the food processor to incorporate all of the flour.) Continue to pulse until a dough comes together.
  • Turn the dough out onto the prepared baking pan and press it evenly into the pan. Poke the dough all over with a fork and sprinkle it with the reserved sugar.
  • Bake until the edges are golden brown and the center is golden, about 25 minutes. As soon as it's out of the oven, use a bench scraper or knife to cut the shortbread into 1-by-3-inch cookies. Cool in the pan for 15 minutes, then carefully remove the cookies using the foil as handles. Cool completely on a rack.
  • For the icing: Combine the confectioners' sugar, lemon zest and juice in a medium bowl. Whisk to combine. Whisk in 1 tablespoon water or more for the desired thickness.
  • Drizzle the icing over the cookies and allow to set, or serve the icing alongside to dip or drizzle upon serving.

½ teaspoon almond extract

  • Combine butter, sugar, and almond extract for cookies in a bowl. Beat with an electric mixer on medium speed, scraping the bowl often, until creamy. Reduce speed to low and slowly add flour, a little at a time. Mix well.

2 sticks unsalted butter, room temperature
1 tablespoon packed finely grated Meyer-lemon zest, plus 2 tablespoons fresh juice (from 2 lemons)
3/4 cup confectioners' sugar
1 1/4 teaspoons kosher salt
2 cups unbleached all-purpose flour, plus more for dusting
60 sprigs (each about 1 inch long) fresh thyme or rosemary, or a combination
1 large egg white, beaten
Granulated sugar, for sprinkling
3/4 cup plus 2 tablespoons confectioners' sugar
3 tablespoons fresh Meyer-lemon juice
Small red, white, and green candies, such as nonpareils and pearls

Steps:

  • Cookies: Line 2 baking sheets with parchment. In the bowl of a mixer fitted with the paddle attachment, beat butter with zest on medium-high speed until fluffy, about 2 minutes. Beat in confectioners' sugar until pale and fluffy, about 1 minute more. Reduce speed to low. Beat in lemon juice and salt, then flour, until combined. 2 1/2 cups granulated sugar
4 large eggs
1/3 cup lemon juice (about 3 lemons)

Steps:

  • For the lemon and cranberry shortbread dough: Preheat the oven to 350 degrees F. Line a 9-by-13-inch pan with aluminum foil (with a 2-inch overhang on all four sides) and grease the bottom and sides with butter.
  • In a small bowl, combine the flour and baking powder. Set aside. In the bowl of a stand mixer fitted with a paddle attachment, cream the butter with the sugar and vanilla on medium-high speed until light and fluffy, about 4 minutes. Add the dry ingredients and mix on medium-low until incorporated. Mix in the cranberries and lemon zest.
  • Press the mixture into the bottom of the prepared pan. Bake until slightly brown, about 25 minutes.

Steps:

  • Preheat oven to 375°F. Place flour, 1/2 cup powdered sugar, butter, basil, both zests, lemon juice, and salt in a food processor. Pulse until large, moist clumps form. Measure level tablespoonfuls of dough; roll between your palms to form balls. Place on a large baking sheet, spacing 2" apart. If you want a very easy recipe including the sunshiny flavor of lemon, these Meyer lemon shortbread cookies are for you! This recipe only has four ingredients, and the bright lemon flavor is a perfect complement to the flaky, buttery shortbread.

1 1/2 cups unbleached all-purpose flour
1/2 cup granulated sugar
1/2 cup butter (=1 stick) (cut into cubes)
1 Meyer lemon, zest and juice (juice will be ~ 2 tbsp)

Steps:

  • Spray or butter a 9" pie plate. Cut out a piece of parchment and line the pie plate.
  • You can make this one of two ways (both ways are easy, one is noisy). If you have a food processor (like this), add the flour, sugar, and butter and pulse around 20 times. Alternatively you could blend it for 10 seconds in the processor. Stop, then add the lemon zest and juice. Pulse a few more times until it's all mixed together. It should look a bit wet at this point.
  • If you don't have a food processor or don't want to wash one, you can use a pastry cutter like this. I often use this instead if I bake during nap time because it's the quiet option and we live in a small house. It's more of an arm workout but that's not necessarily a bad thing. In this case, put the flour, sugar, and butter into a bowl and use the pastry cutter to mix everything together. The butter should be in teeny pieces by the time you're done and the dough should look slightly wet. Add the lemon zest and juice and use the pastry cutter briefly to mix them in so it's uniform.
  • In either case, dump out the dough (it will just look like crumbly bits at this point) into your prepared pie plate. Press very firmly into the parchment-lined dish. Really press it down. This will help it hold together and will cut nicely for you after it's baked.
  • Put the pie plate with the shortbread dough in the freezer for 20 minutes. This chills the dough so it doesn't puff up as much while it's baking and keeps its shape. While the dough is chilling, preheat the oven to 350F.
  • After the chill time, remove the pie plate from the freezer and prick the dough all over with a fork. Bake at 350F for ~35 minutes, until it starts to lightly brown.
  • When you take it from the oven, immediately cut it into 16 wedges while it's still hot. This will making slicing it much easier before it firms up more. Let it cool completely in the dish, then remove and devour. Or bite daintily. Whichever.

1/2 cup cornstarch
1/4 teaspoon kosher salt
14 tablespoons (1 3/4 sticks) unsalted butter, at room temperature
2 1/2 cups confectioners' sugar
1/4 cup shelled pistachios, finely chopped
1 teaspoon grated lemon zest (from 1 lemon)
3 tablespoons freshly squeezed lemon juice (from 1 lemon)

Steps:

  • Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cornstarch, and salt.
  • Working with a stand mixer, preferably fitted with the paddle attachment, or with a hand mixer with a large bowl, beat the butter and 1 cup of the confectioners' sugar on medium speed until smooth. With the mixer on low speed, gradually mix in the flour mixture until just combined and it holds together when squeezed (it will be slightly crumbly). Stir in the pistachios.
  • Gather the dough into a disk. On a lightly floured surface, roll the dough out to a generous 1/4 inch thick. Cut into rounds with a 1 1/2-inch cookie cutter and place 2 inches apart onto the prepared baking sheets, rerolling and cutting the scraps as necessary. Refrigerate until firm, about 30 minutes.
  • Bake until the edges are set and light golden brown, 12 to 15 minutes. Transfer to a wire rack and let cool completely.
  • Meanwhile, in a medium bowl, whisk together the remaining 1 1/2 cups confectioners' sugar, lemon zest, and lemon juice until smooth. Place the wire rack over a baking sheet to catch any drips. Dip the tops of the cookies into the glaze and place on the rack. Let set for 15 minutes.

  • 10. just an fyi... you can make this recipe with a regular mixer as long as the cashews are pulverized.
