The addition of cornstarch to these cookies really makes them melt in your mouth! The fact that they are egg-free makes them good for those allergic to eggs, and since the cookies are little, it is easy to eat a bunch - unfortunately... :) These are a nice addition to a summer BBQ, a baby shower, or any get-together. These can be made with any citrus fruit, but we like lemon the best!

2 cups butter, softened
1 cup powdered sugar
3 1/2 cups all-purpose flour
1/2 cup cornstarch
2 tablespoons lemon zest (about 3 medium lemons)
1 tablespoon vanilla extract
1 cup powdered sugar
2 1/3 tablespoons lemon juice (squeeze from the lemons just zested)
2 teaspoons lemon zest

Steps:

  • Heat the oven to 350°F
  • In large bowl, beat butter and 1 cup powdered sugar with electric mixer on medium speed. Stir in flour, cornstarch, lemon zest and vanilla until well blended.
  • Shape dough into 3/4-inch balls and place about 1 1/2 inches apart on a parchment-lined cookie sheet and flatten a little.
  • Bake 9 to 11 minutes, or until edges are light golden brown. Remove carefully from cookie sheet to wire rack. Cool completely.
  • Whisk together 1 cup powdered sugar, lemon juice, and zest in a small bowl. Stir in additional juice if necessary, or powdered sugar to thicken.
  • Dip the tops of the cooled cookies in icing and place on the parchment paper that you baked the cookies on, to harden.

These are a Christmas family tradition at our house and they don't last long. Even better (more moist and very sweet) the second and third day if kept in an air tight container.

⅓ cup white sugar
1 egg
⅔ cup honey
1 teaspoon lemon extract
2 ¾ cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Mix sugar, egg, honey, and lemon in a medium bowl with mixer. Sift together and stir in flour, soda, and salt. Chill dough for 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll out 1/4 inch dough and cut shapes using flour to roll and cut. Place on greased cookie sheets. Bake for 8-10 minutes. Do not let cookies get brown. Follow by icing with a butter cream icing. DELICIOUS!!!

"These cookies literally melt in your mouth!" These cookies have a shortbread-like texture and taste wonderful! If you like lemon, you will definitely love these cookies. ***Make sure butter is at room temperature not too cold and not melted.** Bake for 8-12 minutes per batch.

3/4 cup butter, room temperature
1/3 cup powdered sugar (confectioner's)
1 teaspoon lemon zest, grated
1 tablespoon lemon juice, freshly-squeezed
1 1/4 cups all-purpose flour
1/2 cup cornstarch
1/4 cup butter, room temperature
1 teaspoon lemon zest, grated
1 teaspoon lemon juice, freshly-squeezed
3/4 cup powdered sugar (confectioner's)

Steps:

  • In a large bowl at low speed, beat butter until creamy looking. Add powdered sugar; mix until light and fluffy. Add lemon zest and lemon juice; beat well. Add flour and cornstarch into butter mixture and mix well until well combined.
  • Divide dough in half and shape each half into 8" x 1" rolls. Wrap each individual roll in plastic wrap. Refrigerate until firm, approximately 1 to 2 hours.
  • Preheat oven to 350 degrees F.
  • Using a sharp knife, cut each roll into 1/4-inch slices. Place cookie slices onto ungreased cookie sheets, place 2 inches apart on cookie sheet, and bake approximately 8 to 12 minutes or until bottoms are light brown (tops should not brown). Remove from oven, carefully remove from baking sheet, and cool on wire cooling racks (when warm the cookies are delicate). When cool, spread Lemon Frosting onto top of cookies.

  • In a medium bowl, combine butter, lemon zest, lemon juice, and powdered sugar; stir until well mixed.
  • NOTE: Additional lemon juice may be needed to get the frosting thin enough.

LEMON AND POPPY SEED MELT AWAY COOKIES

As far as I can tell, this is quite different than other lemon and poppy seed cookie postings on zaar. Nice to serve at a holiday gathering. You can also freeze the cookies prior to coating in powdered sugar. Then when company is coming just thaw for about 15 minutes and coat in powdered sugar as directed. This recipe comes from Better Homes and Gardens Homemade Cookies book.

1/2 cup butter, softened
1/2 cup granulated sugar
1 tablespoon poppy seed
1/8 teaspoon baking soda
1 egg yolk
1 tablespoon milk
2 teaspoons finely shredded lemon peel
1/2 teaspoon vanilla
1 1/2 cups flour
1 cup sifted powdered sugar

Steps:

  • In medium mixing bowl beat butter with electric mixer on medium to high for 30 seconds.
  • Add granulated sugar, poppy seeds, and baking soda and beat until combined.
  • Beat in egg yolk, milk, lemon peel, and vanilla until combined.
  • Beat in as much of flour as you can with electric mixer, then using wooden spoon, stir in any remaining flour.
  • Divide dough in half.
  • Shape each half into 9 inch long roll.
  • Wrap both "logs" in plastic wrap.
  • Chill in refrigerator for 4 or more hours (up to 24).
  • Using a sharp knife (or string/dental floss) cut dough into 1/2 inch slices.
  • Place slices 1 inch apart on ungreased baking sheet.
  • Bake at 375°F for 7-9 minutes or until edges are firm and bottom is light brown.
  • Place powdered sugar in plastic bag. While still warm transfer several cookies at a time to bag and shake gently until coated. Transfer to wire rack to cool completely. When completely cool, shake cookies in powdered sugar one more time.

1 cup(s) soft butter, unsalted (2 cubes)
1/2 cup(s) powdered sugar
2 tablespoon(s) lemon zest, grated
4 tablespoon(s) lemon juice
1 tablespoon(s) pure vanilla extract
2 1/3 cup(s) all purpose flour
3 tablespoon(s) corn starch
1/4 teaspoon(s) salt
3/4 cup(s) powdered sugar for dusting

Steps:

  • Preheat oven to 350. Line baking sheets with parchment paper.
  • In bowl combine flour, cornstarch and salt, set aside.
  • Cream butter and powdered sugar till light and fluffy. Add lemon zest and juice and vanilla, mix well.
  • Slowly add flour mixture in 4 additions to the butter mixture. Beating together on low till completely blended in.
  • Scoop dough into 1" balls, place on baking sheet and press down with with glass that is dusted lightly with powdered sugar. Bake for 10 to 12 minutes, they should just start to brown on the edges.
  • Using a strainer lightly dust with powdered sugar. Now all you need is a cup of tea and just enjoy your cookies!

1 1/4 c flour
3/4 c butter (use real butter)
1/2 c corn starch
1/3 c powdered sugar
1 Tbsp fresh lemon juice
1 tsp fresh lemon zest

Steps:

  • 1. Combine all ingred. and add a bit more lemon juice if needed. Roll into a 2inch round log and place in the fridge for 1-2 hrs. Cut into 1/4 inch rounds and bake for 8-12min @ 350. *Note the cookies do not brown
  • 2. Glaze with a mixture of icing(powder)sugar and lemon juice
