Beer-Battered Calamari with Garlic-Lemon Mayonnaise image

Make pub-worthy, beer-battered calamari right at home. You can also substitute the squid with shrimp, fish or veggies.

1 lb fresh squid bodies
2 cloves garlic, chopped
1/2 teaspoon lime juice
1/2 teaspoon salt
Freshly ground black pepper to taste
2 cups Gold Medal™ all-purpose flour
1 tablespoon olive oil
1 1/2 teaspoons salt
1/4 teaspoon ground red pepper (cayenne)
Freshly ground black pepper to taste
1 cup cold regular or nonalcoholic beer
Vegetable oil for deep frying
1 cup mayonnaise
1 clove garlic, peeled
Juice of 1/2 lemon
Salt and black pepper to taste
2 tablespoons chopped fresh basil leaves

Steps:

  • Thoroughly rinse squid; pat dry. Cut into 1/4-inch rings; place in medium bowl. Add 2 chopped garlic cloves, the lime juice, 1/2 teaspoon salt and black pepper to taste; stir to coat. Cover; refrigerate at least 30 minutes to marinate.
  • Meanwhile, in deep bowl, mix 1 cup of the flour, the olive oil, 1 1/2 teaspoons salt, the red pepper and black pepper to taste. Slowly add beer, stirring gently until batter is smooth. Cover; refrigerate 30 minutes.
  • In food processor, place mayonnaise, 1 garlic clove and the lemon juice. Cover; process until garlic is chopped and mixture is blended. Transfer to small bowl; season with salt and black pepper. Stir in basil. Cover; refrigerate until serving time.
  • In deep fryer or heavy saucepan, heat 2 inches vegetable oil to 375°F. In shallow bowl, place remaining 1 cup flour. Dip squid rings in flour, shaking off excess, then coat completely with beer batter. Fry squid in batches in hot oil until deep golden brown, about 2 minutes. Drain on paper towels.
  • Serve calamari hot with Garlic-Lemon Mayonnaise.

1 bunch scallion, thinly sliced
1 red bell pepper, diced
2 eggs, beaten
8 whole wheat hamburger buns
1/2 cup mayonnaise
2 tablespoons garlic
1 tablespoon lemon juice

Steps:

  • Sautee garlic in pan until brown.
  • Combine garlic, lemon juice and mayonnaise.
  • Combine tuna, scallions, bell pepper and eggs in a bowl.
  • Separate tuna mixture into 8 patties.
  • Grill patties.
  • Put a patty on each sandwich thin with about a tbsp of the mayonnaise mixture.
  • Note: You may want to put the tuna in a sieve with something heavy on top for a couple of hours to get it to drain, otherwise it's harder to get these burgers to stick together.

This recipe is inspired by the popular Spanish tapa patatas bravas, or papas bravas, crispy potatoes that are typically served with a paprika-stained sauce or a garlic aioli. Here, chickpeas crisped in the oven instead of the fryer are seasoned with smoked paprika and ground cayenne, then swaddled in a garlicky mayonnaise cut with lemon. Eat half a batch of these chickpeas for a great dinner, or eat them over lemon-dressed lettuces or parsley, steamed greens, pasta, toast or a fried egg. You can also roast another vegetable with the chickpeas, like cauliflower, broccoli, potatoes or carrots for a complete one-pan meal.

3 tablespoons extra-virgin olive oil
Kosher salt and black pepper

Steps:

  • Heat the oven to 400 degrees. Transfer the chickpeas to a baking sheet and drizzle with the olive oil. Season with salt and pepper and toss to combine. Roast the chickpeas, shaking a few times, until they're dry and bronzed, 25 to 30 minutes.
  • Right when the chickpeas come out of the oven, sprinkle with the paprika, lemon zest and cayenne. Shake vigorously to fully coat, then season to taste with salt and pepper.

Mayonnaise started out in life as a salad dressing, but the modern supermarket version isn't something you'd want to serve on its own -- or use to highlight the vegetables of the season. This soft, lemony version makes irresistible dribbles and pools on top of a composed salad, or can be spooned onto the side of the plate and used for dipping. The hot water keeps the mayonnaise smooth and fluffy. For an even lighter texture, use grapeseed oil instead of olive oil.

1 clove garlic, minced
4 oil-packed anchovies, minced (optional)
1 large egg yolk, at room temperature
1 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice, plus more to taste
Salt and freshly ground black pepper

Steps:

  • In small food processor or container of an immersion blender, combine garlic, anchovies, egg yolk and mustard. With machine running, slowly drizzle in 2 tablespoons olive oil and process until mixture is smooth and starts to thicken, about 2 minutes.
  • With machine still running, slowly add remaining olive oil, lemon juice and 1 teaspoon very hot water. (A small splash from the kettle or tap is the right amount.) Process just until mixture reaches a loose mayonnaise consistency. If it curdles or becomes too thick, mix in more hot water a little at a time, pulsing machine so as not to overmix.   • SAFFRON MAYONNAISE: Grind 2 pinches of saffron in a mortar and add 1 tablespoon boiling water to infuse for several minutes. Stir this into 1 cup of mayonnaise. Serve with roasted red peppers and tomatoes, fried potatoes, Mediterranean soups, lentil or chickpeas.
  • GARLIC MAYONNAISE: Coarsely chop 4 to 6 cloves garlic. Transfer into a mortar and pound with a pinch of salt until it turns into a paste. Stir into a cup of mayonnaise and add a little lemon juice to taste. Serve with chargrilled summer vegetables (eggplant, zucchini and charred red onion), a summer vegetable soup, or use as a dip for crudite.
  • DILL AND LEMON MAYONNAISE: Add a quarter cup of chopped dill, 1 teaspoon lemon zest and lemon juice to taste to 1 cup mayonnaise. Serve with poached eggs, steamed vegetables and boiled new potatoes

For the calamari:
vegetable oil, for deep frying
250g/9oz plain flour
½ tsp cayenne pepper
½ tsp smoked Spanish paprika (many supermarkets and delis sell smoked Spanish paprika. If you can't get hold of any, use the traditional paprika instead)
½ tsp salt
500g/1lb 2oz squid, cut into 5mm/¼in rings
2 eggs, beaten
For the mayonnaise:
200ml/7fl oz mayonnaise
1 garlic clove, crushed
½ lemon, juice only

Steps:

  • 1. For the mayonnaise, mix all the ingredients together and set aside. 2. For the calamari, place enough oil in a wok, large saucepan or deep-fat fryer to come halfway up the pan. Place over a medium heat. If you're using a deep-fat fryer or have a thermometer, heat the oil to 180C/350F. If not, to check the oil is at the right temperature, drop a 2-3cm/¾-1¼in cube of bread into the hot oil. It should become golden and crispy in 1 minute. 3. While the oil is heating, place the flour, cayenne, paprika and salt in a large sandwich bag. Drop in the squid and shake around to coat evenly. This may need to be done in two batches, depending on the size of the bag. 4. Dip the floured squid into the beaten egg and then carefully drop into the hot oil. Fry for 2-3 minutes until golden. Remove from the oil and briefly drain on kitchen paper before serving with the garlic and lemon mayonnaise.

1/2 cup milk
2 cloves of garlic, minced
Zest from 2 lemons
1 cup mayonnaise
1/2 cup plain nonfat yogurt

Steps:

  • 1. Remove crusts, then soak the bread in the milk for 1 minute; squeeze bread well and place in the bowl of a food processor with garlic and lemon zest. Pulse the machine on and off about 5 times to combine ingredients.

  • 3. With the motor running, drizzle in olive oil through the feed tube and process until smooth.

To butterfly the chicken breast, place the breast flat onto a work surface, and with one hand on top to hold it in place, slice through the middle horizontally to cut almost in half and open out flat. To peel and chop a lemon, cut a slice from the top and the bottom of the fruit. Cut away the rind, pith and skin, working from top to bottom, following the curve of the fruit. Slice the peeled fruit crosswise into 1/4 inch slices and then stack and chop the slices finely. Please note, cooking time indicated includes marinating time and roasting time of garlic for garlic mayo.

1 lemon, peeled and chopped
2 garlic cloves, crushed

Steps:

  • To make the garlic mayo, slice off the top of garlic (the pointy ends) cutting through the cloves (leaving the skin on).
  • Pre-heat oven to gas mark 2/300°F/150°C.
  • Place the garlic cut-side up into an oven tray and drizzle over with olive oil and sprinkle with salt and pepper.
  • Roast garlic head for 1 hour until completely soft.
  • Leave to cool then squeeze out the cloves and mash until smooth and then whisk into the mayonnaise.

  • Pre-heat the grill to medium-hot, for outdoors medium-hot coals.
  • Grill chicken for about 4-5 minutes on each side basting with any remaining marinade until the chicken is opaque with no trace of pink.
  • Cut baguette into 4 equal-sized pieces.
  • Split and toast on the cut side until just crisp for about 1 minute.
  • Fill baguette with chicken, tomatoes, salad leaves, season with salt and pepper if you wish and drizzle garlic mayo on top.
  • Serve warm.
