5 cups day-old bread cubes
4 cups scalded milk
½ cup butter, melted and cooled
1 cup white sugar
½ teaspoon salt
4 eggs, beaten
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup raisins
½ cup white sugar
½ tablespoon cornstarch
1 cup hot water
2 tablespoons butter
3 tablespoons lemon juice
1 tablespoon lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8x11 inch casserole with nonstick spray.
  • In a large bowl, combine bread cubes, 1 cup sugar, salt, cinnamon, and nutmeg. Mix in raisins, if desired.
  • In another bowl, blend milk, melted butter, and eggs. Add wet ingredients to dry, and mix together without turning bread mixture into mush. Pour mixture into prepared casserole dish.
  • Place casserole dish into a larger baking pan. Pour hot water into baking pan about 1/3 up the side of the casserole dish, creating a water bath. Bake for 45 minutes.
  • In a small saucepan, combine 1/2 cup sugar, cornstarch, 1 cup hot water, 2 tablespoons butter, lemon juice, and lemon zest. Cook on medium heat until bubbling and thickened. Stir constantly to avoid scorching. Serve with bread pudding.

I have saved this recipe from a 1983 magazine article highlighting the wonderful recipes from New Orleans. It is a little different take on an old familiar dessert.

3 large eggs
1 1/4 cups sugar
1 1/4 teaspoons nutmeg
1 1/4 teaspoons cinnamon
2 teaspoons vanilla extract
1/4 cup butter, melted
2 cups milk
1/2 cup raisins
1/2 cup pecans, coarsely chopped and roasted
5 cups bread cubes, very stale French bread
1 lemon, cut in half
1/2 cup water
1/4 cup sugar
2 teaspoons cornstarch, dissolved in 1/2 cup water
1 teaspoon vanilla extract

Steps:

  • In the large bowl of an electric mixer, beat the eggs on high until extremely frothy, about 3 minutes (or for about 6 minutes with a metal whisk).
  • Add the sugar, cinnamon, nutmeg, vanilla extract and butter and beat on high speed until well blended.
  • Beat in the milk. Stir in the raisins and pecans.
  • Put the bread cubes in a greased 9 x 5 x 3 inch loaf pan.
  • Pour the egg mixture over the cubes and toss until the bread is soaked.
  • Let sit about 45 minutes, patting the bread down into the liquid occasionally.
  • Put in a 350* oven. Immediately lower the heat to 300* and bake 40 minutes. Increase oven temperature to 425* and bake 15-20 minutes more, or until pudding is well browned and puffy.
  • To serve, put 1 1/2 Tbs lemon sauce in each dessert dish, then spoon in 1/2 cup bread pudding. Top with 1/4 cup whipped cream.
  • Lemon Sauce (makes about 3/4 cup).
  • Squeeze the juice from the lemon halves into a 1 qt saucepan; add the lemon rinds, water and sugar; bring to a boil.
  • Stir in the dissolved cornstarch and vanilla.
  • Cook 1 minute over high heat, stirring constantly.
  • Strain, squeezing the sauce from the lemon rind.

1 loaf eggy bread such as challah or brioche
Softened butter, for greasing the baking dish
2 cups half-and-half
4 large eggs
Zest and juice of 2 lemons
1 cup sugar
Bourbon Whipped Cream, recipe follows, for serving
1 cup heavy cream, very cold
2 tablespoons sugar
2 tablespoons bourbon

Steps:

  • Cut the bread into 1-inch cubes. Spread out on a baking sheet to dry out for at least 1 hour or overnight.
  • Grease a 9-inch-by-13-inch baking dish with butter.
  • Whisk together the half-and-half, eggs and lemon zest and juice. Add the sugar and stir until it dissolves. Put the bread cubes in the prepared baking dish. Pour the liquid over the bread. Let the bread soak up the liquid while you preheat the oven to 325 degrees F.
  • Bake until the crust is golden brown, 50 to 55 minutes. Let rest for at least 15 minutes.
  • Serve warm with Bourbon Whipped Cream.
  • Combine the heavy cream, sugar and bourbon in a large mixing bowl with an electric mixer and begin mixing immediately on high speed until stiff, about 4 minutes.

4 cups dried bread, diced
2 cups milk
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon apple pie spice (or use 1/2 tsp. cinnamon and 1/2 tsp. nutmeg)
1/2 cup pitted dates, chopped (optional)
6 tablespoons butter
1 cup sugar (or use Splenda Blend)
2 tablespoons cornstarch
1 1/2 cups water
1 lemon, zest
1 lemon, the juice (about 2-1/2 tbsps.)
2 tablespoons butter

Steps:

  • BREAD PUDDING: preheat oven to 350ºF. In a bowl large enough to hold bread and liquid, beat eggs with a fork until lemon yellow in color. Whisk in milk, vanilla and almond extract.
  • Soak bread in egg and milk mixture until the bread has absorbed most of the liquid, about 5 to 10 minutes.
  • Mix sugar, salt, spices (and chopped dates) in a separate bowl. When bread has soaked up the liquid, add dry ingredients and mix well.
  • Butter a baking dish large enough to hold the bread mixture 2 -1/2 qt pan or 8x8" will work. Pour bread mixture into pan and dot top with pieces of butter.
  • Bake for 30 minutes or until a cake tester or toothpick inserted into center comes out clean. Remove from oven and allow to cool or serve immediately.
  • LEMON SAUCE: blend sugar, cornstarch and water in a sauce pan.
  • Bring to a boil over med-high heat. Cook 2 - 3 min until mixture is thickened.
  • Remove from heat and add lemon zest, lemon juice and butter.
  • Cut in squares and serve warm lemon sauce over bread pudding.

4 eggs
3/4 cup whole milk
3/4 cup heavy cream
1 tablespoon vanilla extract
1 teaspoon lemon zest
1/2 cup sugar, plus more for dusting and topping
4 large slices brioche bread
2 cups mixed berries (blueberries, strawberries, raspberries, blackberries), plus more for garnish
2 cups powdered sugar
2 tablespoons water
2 lemons, zested and juiced

Steps:

  • Butter and sugar 6 (6-ounce) ramekins.
  • In a medium bowl, whisk together the eggs, milk, cream, vanilla extract, lemon zest, and sugar. Combine well with a whisk - then let it settle so there are no air bubbles on the surface otherwise these will cause lumps in your anglaise.
  • Preheat the oven to 350 degrees F.
  • Tear the brioche up into large pieces using your hands, add to the custard mixture and toss to combine. Equally divide the berries among the ramekins and top with the bread mixture. Gently press down so they are packed evenly. Sprinkle with more sugar, then refrigerate for 10 to 15 minutes to let soak.
  • Bake for 25 minutes in the center of the oven. The pudding is ready when it has puffed up and the custard is set. The top should be a nice golden color. Remove and allow to cool slightly.
  • Make the fondant. In a mixing bowl combine sifted powdered sugar, water, lemon zest and juice.
  • Once the pudding has cooled slightly, invert onto an individual serving plate. Drizzle the lemon fondant over warm bread pudding and serve with extra fresh berries.

3/4 cup raisins
2 cups milk

Steps:

  • Toss bread and raisins in an ungreased 1-1/2-qt. baking dish. In a small saucepan, combine milk, sugar, butter and salt; cook and stir until butter melts. Remove from the heat. Whisk eggs and vanilla in a small bowl. Stir a small amount of the hot milk mixture into the egg mixture; return all to the pan, stirring constantly. Pour over bread and raisins. , Place dish in a larger baking pan. Fill larger pan with hot water to a depth of 1-in. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. , For sauce, combine the sugar and cornstarch in a saucepan. Stir in water until smooth. 3 cups of day old French bread or 3 cups Italian bread, in 1/2 inch cubes
4 teaspoons grated lemons, zest of
1 cup whipping cream
1 cup whole milk
1 cup sugar
3 tablespoons butter, cut into small pieces
1/4 teaspoon salt
4 large eggs, separated
1/2 cup fresh lemon juice
confectioners' sugar

Steps:

  • Preheat oven to 325°F.
  • Butter the bottom only of a 2-quart casserole or soufflé dish.
  • Combine bread cubes and lemon zest in large bowl.
  • Set aside.
  • Combine whipping cream, milk, sugar, butter and salt in a heavy saucepan.
  • Over medium heat, cook until butter melts, stirring occasionally.

16 ounces brioche (weighed after crust removed) about 1 large loaf, cut into 1 1/2 -inch cubes
3 3/4 cups heavy cream
1 1/4 cups granulated sugar
Zest of 1 Meyer lemon
6 large eggs
2 large egg yolks
1 teaspoon vanilla extract
1 1/2 pints fresh blackberries
1 tablespoon Meyer lemon juice
Meyer Lemon Whipped Cream, recipe follows
1 1/2 cups cold heavy cream
1 1/2 tablespoons granulated sugar
1 tablespoon Meyer lemon juice
Zest of 1 Meyer lemon
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 325 degrees F. Place the bread cubes on a large baking sheet in a single layer and toast until lightly golden brown on all sides, turning a few times, about 15 minutes. Remove and let cool slightly.
  • Bring cream, 1 cup of sugar, and lemon zest, to a simmer over medium heat. Whisk together the eggs and yolks in a medium bowl. Slowly whisk the warm milk into the eggs and add the vanilla.
  • Transfer the bread cubes to a 9 by 15-inch baking dish, pour the custard mixture over and press on the bread to submerge in the custard. Let the mixture sit at room temperature for 30 minutes to allow the bread to absorb more of the custard.
  • Place the baking dish inside a larger roasting pan and fill the outer pan with warm water halfway up the sides of the baking dish. Bake until puffed around the outside but still slightly jiggly in the center, about 45 minutes. Remove from the water bath and let rest at least 15 minutes before serving. Toss the remaining 1/4 cup sugar with the blackberries. Serve bread pudding topped with macerated berries and Meyer Lemon Whipped Cream.
  • Combine the heavy cream, sugar, juice, zest and vanilla extract in a large bowl and whip with a balloon whisk until soft peaks form.

PUDDING INGREDIENTS:
6 c dry bread chunks
1/2 c raisins or dried cranberries, soaked in warm water
2 tsp cinnamon
3/4 c sugar
3 c milk (or more)
1/4 c melted butter
4 eggs, slightly beaten
2 tsp pure vanilla
1/2 c chopped pecans (optional)
LEMON SAUCE INGREDIENTS:
1/2 c butter
1 c sugar
1 egg, slightly beaten by hand
3 Tbsp real lemon juice

Steps:

  • 1. For Bread Pudding: Spray Rameikins or deep casserole dish.
  • 2. Mix all pudding ingredients in large bowl except bread. Then add bread. May have to use more or less milk. You want enough to just cover bread after it has set for a few minutes & soaked some up.
  • 3. Spoon into prepared dishes. May need to add more milk.
  • 4. Bake @ 350° for about 20-30 minutes or until set & slightly browned on top. Remove from oven & let set about 10 minutes or so before serving.
  • 5. NOTE: For the best flavor, serve the pudding slightly warm & refrigerate the lemon sauce & pour it over the warm pudding while the sauce is cold.
  • 6. For LEMON SAUCE:
  • 7. *Heat butter & sugar in double boiler until sugar dissolves. Pour in food processor. With lid on, drizzle beaten egg slowly into hot mixture so egg doesn't cook or scramble. Add lemon juice. May adjust lemon juice to taste.
  • 8. *I have made this hundreds of times & could never get the sugar to dissolve completely. I tried this again today, at a slower pace than doing it at a restaurant and I still couldn't get it to dissolve completely on top of the stove. I did cook it a little longer though and it seemed to dissolve more of the sugar. I then put it in the food processor & processed it for a longer time. it came out perfect.

6 cups thin baguette slices (from an 18-inch length)
3 whole large eggs
3 large egg yolks
1 cup sugar plus more for sprinkling
2 tablespoons grated lemon zest
2 tablespoons fresh lemon juice
5 cups heavy cream, divided
1 tablespoon pure maple syrup
Accompaniment: fresh berries

Steps:

  • Preheat oven to 325°F with rack in middle.
  • Put bread in a 3-quart flameproof shallow baking dish (not glass). Whisk in zest, lemon juice, and 4 cups cream (chill remaining cup cream) and pour over bread. Press down with a spatula to help bread soak up some of custard.
  • Whisk together whole eggs, yolks, and sugar in a large bowl until pale and thick, about 1 minute.
  • Lightly sprinkle with sugar and bake in a water bath until custard is barely set and edges of bread are golden, 40 to 45 minutes.
  • Turn on broiler and broil bread pudding 4 to 5 inches from heat until golden-brown in spots, 2 to 3 minutes. Cool to warm, about 30 minutes (pudding will continue to set).
  • Just before serving, beat remaining cup cream with syrup using an electric mixer or a whisk until it just holds soft peaks. Serve pudding, warm or chilled, with cream.

  • Lemon Whipped Cream: In a medium bowl, beat ½ cup heavy cream at medium speed.
  • As cream begins to thicken, add grated lemon peel and powdered sugar.
  • Drizzle in the lemon juice and whip until stiff. Refrigerate.

8 eggs
4 3/4 c sugar
6 c milk
1 Tbsp pure vanilla extract
1/2 tsp salt
6 c toasted and buttered french bread, diced
1/2 c butter
1/2 c water
3/4 c fresh lemon juice
1 Tbsp grated lemon zest

Steps:

  • 1. Preheat oven to 350 degrees. Spray or butter a 13"by 9" pan.
  • 2. Beat 6 eggs with 2 and 3/4 c. sugar, milk,vanilla, and salt.
  • 3. Place bread cubes in prepared pan and pour liquid mixture over. Let soak for 20-30 minutes.
  • 4. Place pan into larger pan and fill with hot water for water bath; this will keep pudding from drying out.
  • 5. Bake for 1 hour, or till knife inserted in center comes out clean.
  • 6. While pudding is in oven, prepare lemon sauce. In small saucepan over med. high heat, melt butter.
  • 7. Beat the 2 remaining eggs.
  • 8. Add remaining sugar, beaten eggs, water, lemon juice and zest to butter and stir till bubbling. Remove from heat.
  • 9. After carefully removing pudding from oven, pour lemon sauce over and let stand till sauce is set. Best served warm.

6 large eggs
2 cups sugar
3 cups condensed milk
1 cup whole milk
2 tablespoons vanilla extract
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
Butter for baking dish
5 cups French bread cubes
1/4 cup golden raisins
1/2 pound (2 sticks) butter, cut into pats
1/2 cup sugar
1 tablespoon cornstarch
1 teaspoon grated lemon zest
1 1/2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350 degrees. To make the pudding, combine eggs and sugar in a large mixing bowl. Mix well. Add condensed milk, whole milk, vanilla, nutmeg and cinnamon. Stir to blend well.
  • Butter a shallow 2-quart baking dish. Put bread cubes in the dish, and sprinkle with raisins and butter pats. Pour in egg mixture, making sure all bread cubes are covered. Cover the dish with foil.
  • Put baking dish on middle rack of oven, and place a pan of water on the lower shelf directly beneath it. Bake until the mixture is browned and set, 1 hour 15 minutes.
  • Meanwhile, to make the sauce, combine the sugar, cornstarch and 1 cup of water in the top half of a double boiler. Place over boiling water, and stir until thickened. Stir in lemon zest and juice, and remove from heat. Drizzle over warm pudding, and serve.

I got this wonderful fresh springtime recipe from another favorite site, Chowhounds,posted by wyf4lyf. This is just perfect for summer. This is great with a raspberry or strawberry coulis and fresh berries, or vanilla ice cream. Prep time includes letting it soak.

2 butter poundcake (thawed, if using frozen ones)
8 lemons
6 eggs
1 cup sugar
3 cups milk

Steps:

  • Butter a 13x9 pan. Cut pound cake into cubes (not bite size -- large pieces like you'd do for bread pudding) and place in buttered pan.
  • Squeeze juice from lemons over cake.
  • Whisk eggs and sugar in bowl until combined.
  • Whisk in milk. (I'll sometimes add some lemon zest to this, too.)
  • Pour over pound cake; let soak for an hour.
  • Heat oven to 350.
  • Cover pan with foil and bake 45-60 minutes. Sometimes I'll uncover the pan for the last 10 minutes or so to crisp up the top.

3/4 cup whole milk
3/4 cup heavy cream
1 tablespoon vanilla extract

4 large slice challah or 4 large brioche bread
2 cups mixed berries, plus more for garnish (blueberries, strawberries, raspberries, blackberries)
2 cups confectioners' sugar
2 tablespoons water
2 lemons, zest of
2 lemons, juice of

Steps:

  • Preheat oven to 350°F Generously butter a large casserole dish, or 8 6-ounce ramekins. Pour in sugar, and rotate dish so all of the buttered surfaces are coated with sugar; knock out any excess sugar.
  • In a medium bowl, whisk together eggs, milk, cream, vanilla, lemon zest and sugar, until well combined.
  • Roughly tear bread into large pieces with your hands. Add bread to custard and stir to combine. Spread berries evenly over the bottom of the casserole, or divide amongst the prepared ramekins. Pour custard mixture into pan or divide amongst ramekins, and push down to submerge the bread. Sprinkle the top evenly with additional sugar, then refrigerate 10-15 minutes to soak.
  • Bake in preheated oven 25 minutes, or until puffy, the custard is set, and the top is golden-brown. Set aside.
  • In a mixing bowl, stir together confectioner's sugar, water, lemon zest and lemon juice, until smooth.
  • When slightly cooled, if using individual ramekins, invert each pudding onto a serving plate; otherwise, simply dish a portion onto each plate. Drizzle pudding with lemon fondant. Serve with additional fresh berries.

6 cups brioche bread cubes (1/2-inch cubes)
1/4 cup unsalted butter, melted (1/2 stick)
1/2 cup sugar
1 tablespoon sugar
4 cups half-and-half
6 slices lemon zest, removed with a vegetable peeler
2 tablespoons minced crystallized ginger
6 large eggs
salt, a pinch
1 teaspoon pure vanilla extract (or paste)
1/2 cup thinly sliced dried apricot (preferably Del Monte Pacific-style)

Steps:

  • Position an oven rack in the middle of the oven; preheat oven to 350°.
  • Butter an 8-inch square glass baking dish.
  • Place the bread on a large baking sheet; drizzle with the butter.
  • Sprinkle with 1 tablespoon sugar, and toss to coat.
  • Spread the bread in a single layer and bake, stirring halfway through, for 15 minutes or until a deep golden brown.
  • Let cool on the baking sheet.
  • Meanwhile, bring the half-and-half just to a boil in a large heavy saucepan over medium-high heat.
  • Remove the pan from the heat; stir in the zest and ginger; let stand, covered, for 20 minutes.
  • Pour the half-and-half through a fine strainer set over a large glass measure or bowl, and wipe out the saucepan.
  • Whisk together the eggs, the remaining 1/2 cup sugar, and the salt in a medium bowl.
  • Slowly pour in the warm half-and-half, whisking constantly.
  • Return mixture to the saucepan and cook, whisking constantly, over med-low heat for 5-7 minutes, until the custard has thickened and coats the back of a spoon; if you draw your finger across it, it should leave a track.
  • Do not let the custard boil or scorch on the bottom; if tiny bubbles appear around the edges, remove the pan from the heat for a few minutes to cool the custard, continuing to whisk.
  • Remove from the heat and whisk in the vanilla.
  • Pour the mixture through a fine strainer set over a large glass measure or bowl.
  • Transfer the bread to the baking dish and toss with the apricots.
  • Pour the custard over the bread.
  • Push down the bread with a spoon to submerge it.
  • Let stand for 30 minutes, or until the bread is softened.
  • Preheat the oven to 300°; have ready a roasting pan.
  • Put on a kettle of water to boil for the water bath.
  • Cover the baking dish with foil and seal the edges tightly.
  • Place the baking dish in the roasting pan and place in the oven.
  • Pour in enough boiling water the pan the come halfway up the sides of the baking dish.
  • Bake for 1 hour.
  • Carefully remove the foil and bake the bread pudding for 15 minutes longer, or until the top is golden brown but the center is still slightly jiggly.
  • Carefully remove the baking dish from the pan and let cool slightly on a wire rack.
  • Serve the pudding warm in bowls.

My sister made this for us last Thanksgiving. What a wonderful dessert and change from the normally served on this day. The Meyer lemon is a citrus fruit native to China thought to be a cross between a true lemon and either a mandarin or common orange. Meyer lemons are a little hard to find some places. If you are unable to find add about 1/2 C sugar to the recipe of both the Pudding and Whipped Cream.

16 ounce(s) brioche (weighed after crust removed) about 1 large loaf, cut into 1 1/2 -inch cubes
3 3/4 cup(s) heavy cream, cold
1 1/4 cup(s) sugar
1 - zest of meyer lemon
6 large eggs
2 large egg yolks
1 teaspoon(s) vanilla extract
1 1/2 pint(s) blackberries
1 tablespoon(s) meyer lemon juice
MEYER LEMON WHIPPED CREAM
1 1/2 cup(s) heavy cream, cold
1 1/2 tablespoon(s) sugar
1 tablespoon(s) meyer lemon juice
1 - zest of meyer lemon
1/2 teaspoon(s) vanilla extract

Steps:

  • Preheat the oven to 325 degrees F. Place the bread cubes on a large baking sheet in a single layer and toast until lightly golden brown on all sides, turning a few times, about 15 minutes. Remove and let cool slightly.
  • Bring cream, 1 cup of sugar, and lemon zest, to a simmer over medium heat. Whisk together the eggs and yolks in a medium bowl. Slowly whisk the warm milk into the eggs and add the vanilla.
  • Transfer the bread cubes to a 9 by 15-inch baking dish, pour the custard mixture over and press on the bread to submerge in the custard. Let the mixture sit at room temperature for 30 minutes to allow the bread to absorb more of the custard. Add ½ of the blackberries during this stage if desired or save all for a topping later with the whipped cream.
  • Place the baking dish inside a larger roasting pan and fill the outer pan with warm water halfway up the sides of the baking dish. Bake until puffed around the outside but still slightly jiggly in the center, about 45 minutes. Remove from the water bath and let rest at least 15 minutes before serving.
  • To make whipped cream, combine the heavy cream, sugar, juice, zest and vanilla extract in a large bowl and whip with a balloon whisk until soft peaks form. Top pudding with dollops of cream and remainder of berries.
