Super easy and delicious granola that is really versatile. I love it tossed with craisins and pecans, but you could add whatever you like! Add to corn flakes for homemade Honey Bunches of Oats. Use as trail mix, cereal, snacks, etc.

Yield 1 big pan of yumminess, 6-8 serving(s)

Number Of Ingredients 8

1/2 cup brown sugar
1/2 cup vegetable oil
1/2 cup honey
2 teaspoons cinnamon
2 teaspoons vanilla
7 cups rolled oats
1 cup pecans, chopped (or more (optional)
1 cup craisins, add after baking ((or more (optional)

Steps:

  • Mix brown sugar, oil, and honey in a sauce pan. Bring to low boil.
  • Remove from heat. Stir in cinnamon and vanilla.
  • Pour oats in a large bowl and pour sauce over, stirring well.
  • Spread oats in a greased or sprayed 9x13 pan.
  • Bake at 375 for 10 minute.
  • Take out and stir.
  • Return to oven and turn the oven off.
  • Leave granola in oven till the oven is completely cool.
  • Take out and chunk up till broken apart.
  • Toss in craisins.
  • Eat as a snack or cereal with hot or cold milk.

Yield About 10 cups

Number Of Ingredients 9

4 cups rolled oats
2 cups unsweetened coconut
2 cups slivered almonds
1 cup cashews
3/4 cup olive oil
1/2 cup honey
2 teaspoons ground cinnamon
1 teaspoon kosher salt
2 cups of your favorite dried fruit, such as dates and dried cherries, chopped

Steps:

  • Preheat the oven to 325 degrees F. Combine the oats, coconut, almonds, cashews, oil, honey, cinnamon and salt in a large bowl, and toss together to coat. Spread evenly on a baking sheet. Bake until golden, 30 minutes. Let cool completely on the baking sheet. Add the dried fruit and serve. If not using right away, store in an airtight container, adding the dried fruit to order.

This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

3 cups rolled oats
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon (see Cook's Notes)
1/2 teaspoon kosher salt
1/3 cup honey (see Cook's Notes)
1/4 cup canola oil (see Cook's Notes)
1 teaspoon vanilla extract (see Cook's Notes)
1/2 cup coarsely chopped almonds (see Cook's Notes)
1/2 cup dried cranberries (see Cook's Notes)

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.
