LAYERED STRAWBERRY-LIME GELATIN RING

Layered Strawberry-Lime Gelatin Ring image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 4h35m

Yield 10 to 12 servings

Number Of Ingredients 8

One 14-ounce can sweetened condensed milk
8 ounces cream cheese, at room temperature
8 ounces sour cream
Two 3-ounce packages lime gelatin
Nonstick cooking spray, for the bundt pan
1/2 cup drained crushed pineapple
1/4 cup maraschino cherries, halved
Two 3-ounce packages strawberry gelatin

Steps:

  • In the bowl of an electric mixer fitted with a whisk attachment, combine the sweetened condensed milk and cream cheese and mix on low until smooth, 2 to 3 minutes. Add the sour cream and mix until smooth.
  • Put the lime gelatin in a medium heatsafe bowl, pour in 1 cup boiling water and gently stir until completely dissolved. Add the gelatin mixture to the cream cheese mixture and stir until combined. Pour the mixture through a fine-mesh strainer into a mixing bowl to remove any lumps.
  • Spray a 10-cup fluted bundt pan with cooking spray. Pour the lime gelatin mixture into the prepared pan. Use a spoon to push the pineapple and cherries into the mixture and distribute them throughout. Refrigerate until set, about 2 hours.
  • After about 1 1/2 hours, put 2 cups cold water in a medium heatsafe bowl. Add the strawberry gelatin and let bloom for 5 minutes. Add 2 cups boiling water and stir until completely dissolved. Cool to room temperature, about 30 minutes.
  • Dampen a baking sheet with a little water and set aside. Fill a bowl larger than the bundt pan with warm water (make sure it's not too hot). Dip the bundt pan into the water in 5-second intervals (don't hold it in there too long) to loosen the lime gelatin from the pan. This may need to be repeated a few times until you see it start to loosen from the sides and center. Once loosened, place the baking sheet on top of the bundt pan and flip to invert the lime gelatin onto the baking sheet. Lift the bundt pan off the gelatin and rotate it slightly, then place it back over the gelatin so the fluted ridges of the bundt pan and the molded gelatin do NOT line up (the strawberry gelatin layer will fill the spaces).
  • Flip the bundt pan and baking sheet back right-side up so the lime gelatin is back in the pan but slightly off center. Pour in the cooled strawberry gelatin mixture; the lime gelatin should float in the strawberry liquid. Using your fingers, realign the lime gelatin with the proper grooves of the pan. Refrigerate until set, about 2 hours.
  • Dip the bundt pan into a bowl of warm water (following the method above), being careful not to hold it in there too long. Place a serving dish on top of the bundt pan and flip to invert the gelatin ring onto the dish.

Layered Strawberry Jello Salad with Ripe Bananas Recipe image

This Strawberry Jello Salad uses ripe bananas, crushed pineapple, and strawberries to add sweetness to it. With a layer of sour cream in the middle to offset the sweetness, it's the perfect dish.

Provided by Camille Beckstrand

Categories     Dessert

Time 3h15m

Number Of Ingredients 6

6 ounces strawberry jello (1 box)
1½ cups boiling water
8 ounces crushed pineapple (drained)
2 bananas (ripe, and mashed without lumps)
20 strawberries (divided and thinly sliced, fresh or frozen)
1 cup sour cream (regular or light)

Steps:

  • Pour package of jell-o into a medium bowl.
  • Pour boiling water over strawberry jello and mix until gelatin is fully dissolved.
  • Add in crushed pineapple and bananas and stir well.
  • Add in 12 strawberries and mix until all fruit is covered
  • In a small bowl, stir sour cream until it becomes creamy and loosened up a bit.
  • In a medium-sized bowl or 9x13" baking pan, pour half the gelatin mixture. To help the jello set up a bit quicker, place the pan into the freezer for 5-10 minutes or until the jello has started to set.
  • Carefully ladle the sour cream over the jello and spread in an even layer.
  • Carefully pour the other half of the jello mixture over the sour cream.
  • Cover and refrigerate for at least 3 hours
  • Top with a sliced strawberry.

STRAWBERRY JELLO SALAD

Strawberry Jello Salad image

This is one of those dishes that my mother is always asked to bring to Christmas and Thanksgiving gatherings. She makes different versions based on the tastes of those receiving it. Some prefer no nuts, others prefer no sour cream, others prefer no bananas. I think the original name of this salad is Strawberry Sour Cream Salad, but since she omits sour cream most of the time, we usually just call it Strawberry Salad.

Time 3h30m

Yield 12 serving(s)

Number Of Ingredients 7

2 (3 ounce) packages strawberry Jell-O gelatin dessert (or one large pkg)
2 cups boiling water
1 (10 ounce) package frozen sliced strawberries in syrup, thawed, drained (reserve liquid)
1 (20 ounce) can crushed pineapple, drained (reserve liquid)
3 medium bananas, sliced
1 cup walnuts, chopped (optional)
1 pint sour cream (optional)

Steps:

  • Using a strainer placed over a bowl, drain the strawberries and pineapple, reserving 2 cups of the fruit juice.
  • Dissolve jello in boiling water.
  • Add 2 cups reserved fruit juice. (If you do not have enough juice from the fruit, add cold water).
  • Add the sliced bananas, drained strawberries, and drained crushed pineapple. (IF you are not using the sour cream, mix in walnuts, then pour entire batch into 9x13 dish and skip to final step).
  • Pour half the jello mixture into a 9x13 dish.
  • Refrigerate until set. Do not refrigerate the remaining jello mixture in the bowl-otherwise it will begin to set.
  • Spread set layer with the sour cream and sprinkle with walnuts (if using). Pour remaining jello mixture over sour cream layer.
  • Refrigerate several hours. This sets up best overnight.
