VERY BLUEBERRY MUFFINS image

Yield 12 muffins

Number Of Ingredients 9

1 tablespoon ground flax seed
3 tablespoons water
6 tablespoons canola oil
1/3 cup brown sugar
1/2 cup milk (soy milk works really well)
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 1/2 cup frozen blueberries

Steps:

  • Preheat oven to 400 degrees. Mix flax seed and water; set aside. Whisk together oil, sugar, milk, and your mixture. Add dry ingredients, stirring just until combined. Fold in blueberries. Pour into muffin cups. Bake 25 minutes.
