LAYERED GUACAMOLE DIP WITH SHRIMP AND SALSA
This is a different take on the traditional layered taco dip. The guacamole can be prepared 1 day ahead, and then the next day all the ingredients can be layered up to 4 hours before use, covered and refrigerated. (The cooking time is actually the chilling time.)

Steps:
- To make the guacamole, mash the avocados, sour cream, and lime juice in a medium bowl with a slotted spoon or large serving fork until the mixture is chunky.
- Fold in the onion and garlic, and season generously with the salt.
- Cover tightly with plastic wrap and refrigerate until chilled, at least 2 hours, or overnight. (The guacamole can be made up to 1 day ahead -- the sour cream and lime juice keep the guacamole from discoloring.).
- After chilling the guacamole, toss the shrimp with the oil and lime juice.
- Spread the shrimp in a thick layer of about 9 inches in diameter on a rimmed serving platter.
- Spread the chilled guacamole on the shrimp, leaving a border exposed.
- Spread the salsa over the guacamole, leaving a border.
- Finally, spread the sour cream on the salsa, again leaving a border around the edges.
- Sprinkle the cilantro over the dip.
- This can be prepared up to 4 hours ahead, covered tightly with plastic wrap and refrigerated, or can be served right away.
- Serve with tortilla chips for dipping.
- *Note: Hass avocados are the small, dark avocados. They should be ripe and give a little when pressed, but if they are firm you can ripen them at home by putting them in a paper bag with a ripe banana or an apple. This will cut the ripening time in half.

LAYERED SHRIMP DIP
Olives not only make this creamy layered shrimp dip look pretty, they add a nice flavor twist to an otherwise straightforward party favorite. Crab may be substituted for shrimp.

LAYERED SHRIMP DIP
This recipe and a crab dip, went around in the 1970's. I have made it every Christmas since. The original recipe called for canned shrimp but i hate the stuff, so I use cooked baby shrimp instead. The tomato soup in it sounds wierd, but believe me, u can't taste it, and mixed with the cream cheese and mayo, it has the perfect...

Steps:
- 1. Mix together water & gelatin and set aside to soften. Next I chop my veggies in a food processor, it gets them the right size faster than old hands..lol.. In medium sized saucepan heat soup and whisk in gelatin. Cool a bit and then whisk in creamed cheese and mayonaise. Stir in celery, green onions, and spices. Coursly chop shrimp up a bit but do NOT add it to tomato mixture. Spray a 5 cup mold with cooking spray. spread 1/4 of the shrimp in the bottom of mold, Then 1/4 of the tomato mixture over it. Repeat to make 4 layers of shrimp and tomato mixture, starting and ending with shrimp. Cover and refrigerate overnight or for at least 3-4 hours. Unmold on serving plate and put crackers all around it. We like the with veggie crackers and sourdough bread pieces. I hope u enjoy this dip. It's delicious.
- 2. You can make a crab version of this dip by using cream of celery or mushroom soup, and some old bay seasioning and use crab instead of shrimp. I am still partial to the shrimp though.

Steps:
- Cook shrimp ahead of time and chill. Let cream cheese sit out to room temp. Clean shrimp and cut in half or thirds if large.
- Mix cream cheese, garlic, Worcestershire, Tabasco and creole seasoning and spread on pizza pan or serving platter. Blot well the shrimp, bell peppers and tomatoes with paper towels (or you'll get a watery ring around the dip).
- Layer the remaining ingredients in above order. Serve chilled with crackers of choice and watch it disappear.
