1 ½ cups all-purpose flour
Pinch of nutmeg
Pinch of cinnamon
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups mashed banana ((about 3 large or 4 medium very ripe bananas))
6 tablespoons salted butter, melted and slightly cooled
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan and set aside.
  • In a medium bowl, sift or whisk together flour, nutmeg, cinnamon, baking soda and salt. Set aside.
  • In a separate large bowl, whisk together mashed banana, melted butter, sugar, egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.
  • Pour batter into prepared loaf pan. Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, about 50-60 minutes. Do not overbake.
  • Remove from the oven, unmold from the pan, and cool completely on a wire rack before slicing and serving.

1 ⅓ cups vegetable oil
2 cups white sugar
4 eggs, whisked
5 cups mashed bananas
1 tablespoon lemon juice
4 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
2 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5-inch loaf pans.
  • Beat vegetable oil and sugar together in a bowl until creamy and smooth; stir in eggs.
  • Mash bananas and lemon juice together in a separate bowl; mix into oil mixture until just incorporated.
  • Sift flour, baking powder, and salt together in a third bowl; slowly mix into wet mixture using an electric mixer on low until just incorporated. Fold in walnuts. Pour batter into the two prepared loaf pans.
  • Bake in the preheated oven until a knife inserted in the center of the loaf comes out clean, about 1 hour 15 minutes.

25 lbs all-purpose flour
7 7/8 ounces baking soda
2 5/8 ounces salt
20 lbs sugar
3 1/2 lbs eggs
13 lbs vegetable oil
2 1/2 lbs milk
30 lbs bananas, mashed (about two large)
12 lbs chopped nuts

Steps:

  • Mix flour, soda, salt and sugar.
  • Blend in eggs, oil and milk.
  • Stir in banana and nuts.
  • Pour into greased loaf pans and bake at 350 degrees approximately one hour.
  • ALTERNATELY: Pour batter into pans and freeze before baking. When you're ready to bake, allow to thaw at room temp for 30 minutes and then bake as directed.

1 c of butter, softened
1 1/2 c sugar
4 eggs
1 c buttermilk, room temp
2 tsp vanilla extract
8 ripe bananas, mashed
4 1/4 c flour
1 tsp kosher salt
1 tsp baking soda
2 tsp baking powder
1/2 tsp cinnamon

Steps:

  • Preheat the oven to 325
  • Beat the butter and sugar together until light and creamy
  • Add in the eggs, one at a time, blend well
  • Stir in the buttermilk, vanilla and mashed banana
  • In a separate bowl sift together the flour, salt, baking powder, baking soda and cinnamon
  • Add the dry ingredients to the wet ingredients and stir to combine (low speed or use a spoon until just combined)
  • Grab two loaf pans
  • Line them with parchment paper (alternatively you can butter and flour your loaf pans)
  • Pour an even amount in to each pan
  • Bake for 65-75 minutes, turn the pans 180 degrees in the oven half way through cooking (so turn once the first 35 minutes have passed)
  • Use a toothpick to check for doneness, center should come out clean, if it is still gooey continue cooking in 5 minute increments
  • Remove from the oven, rest 10 minutes, transfer to a wire rack to cool
  • Serve with butter, while the banana bread is still warm!

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Steps:

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
  • With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.
