1 cup dry red wine, or water
1 cup chicken stock, or reduced-sodium canned broth
1/2 teaspoon salt
Garlic-Roasted Leg of Lamb

Steps:

  • Pour red wine into the roasting pan in which the Lamb was cooked.
  • Place over medium heat, and scrape up browned bits from bottom of pan.
  • Add stock and salt; bring to a simmer. Cook, stirring, until liquid has reduced to 1 1/2 cups, about 10 minutes. Skim fat from surface, as needed.
  • Strain sauce into a gravy boat, and serve hot with sliced lamb.

LAMB CHOPS WITH BLACKBERRY PAN SAUCE AND ARUGULA



Lamb Chops with Blackberry Pan Sauce and Arugula image

A mouthwatering recipe with a jammy pan reduction made with blackberry, shallots, fresh rosemary, and a splash of wine to balance the dish.

Number Of Ingredients 12

8 lamb loin chops, about 2 1/2 pounds
kosher salt for sprinkling, plus 1 teaspoon, divided
freshly ground black pepper
2 tablespoons canola or vegetable oil
1 large shallot, diced (about 1/3 cup)
1/2 teaspoon finely chopped rosemary leaves
1 6 oz. package blackberries, halved (or quartered if very large), divided
1/2 cup red wine
2 tablespoons butter, cut into small pieces
6 cups (about 4 oz.) loosely packed arugula
5 teaspoons freshly squeezed lemon juice
3 tablespoons olive oil

Steps:

  • Preheat oven to 350°. Season lamb chops with a 5-finger pinch of salt on all sides as well as black pepper. Heat a large sauté pan (not non-stick) over high heat and add canola oil. Once the oil shimmers when you tilt the pan (this means it's sizzling hot), add the chops in a single layer (sear in 2 batches, if necessary, to avoid overcrowding the pan). Sear until chops are well browned, and beginning to char around edges, about 3 minutes. Flip and repeat on the other side. Transfer to a baking sheet (reserve pan and drippings) and continue to cook in oven until an instant-read thermometer inserted into thickest part of the chop registers 145° for medium-rare, about 5 minutes.
  • If necessary, pour off excess fat from pan to equal about two tablespoons (this might not be necessary, depending on the fat content of the chops). Add shallot and rosemary to pan over medium-low heat and cook, frequently stirring to scrape up any brown bits on the bottom of the pan, until starting to soften, about 3 minutes. Add about 1 cup of the blackberries (reserving a few for the salad), and cook until softening and releasing their juice, about 3 minutes. Add wine and increase heat to medium. Cook until wine is reduced by half, about 4 minutes. Reduce heat to low and swirl in butter and season with scant 1/2-teaspoon salt.
  • Arrange arugula on a large platter. Mix lemon juice with olive oil in a small bowl with the remaining 1/2-teaspoon salt. Drizzle over arugula and toss gently with reserved blackberries. Place lamb chop on top of the arugula and spoon the pan sauce over the chops and some of the arugula.
  • Pair with a rich and full-bodied Cabernet Sauvignon from Tom Gore Vineyards.

SEARED LAMB SHOULDER CHOPS WITH MUSTARD-DILL PAN SAUCE



Seared Lamb Shoulder Chops With Mustard-Dill Pan Sauce image

The sauce in the recipe is absolutely yummy. If you don't have lamb chops, you may substitute pork chops or boneless chicken breasts.

4 lamb shoulder, chops
kosher salt
freshly ground black pepper
1 tablespoon extra-virgin olive oil
2 shallots, finely chopped
1/2 cup chicken broth
1/2 cup dry white wine
1 tablespoon Dijon mustard
2 teaspoons lemon juice
2 tablespoons unsalted butter, chilled and cut into small pieces
1 tablespoon fresh dill, finely chopped

Steps:

  • Season the lamb chops all over with salt and pepper.
  • Heat the oil in a large skillet over medium-high heat.
  • Put two of the chops in the skillet and cook, flipping once, until deep golden brown and medium-rare, about 10 minutes.
  • Transfer to a large plate, cover loosely with foil, and keep warm.
  • Repeat with the remaining two chops.
  • Add the shallots to the skillet and cook, stirring, until softened, about 1 minute.
  • Add the broth and wine and cook, scraping up any browned bits, until reduced by half, 4 to 5 minutes.
  • Reduce the heat to medium low, stir in the mustard and lemon juice, and cook for 1 minute more.
  • Add the butter, a piece or two at a time, swirling the skillet to melt into the sauce.
  • Remove the skillet from the heat and stir in the dill.
  • Season to taste with salt and pepper.
  • Serve the lamb with the sauce.

3/4 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper
8 3/4- to 1-inch-thick lamb rib chops
1 tablespoon butter
1 tablespoon olive oil
1 medium red onion, halved, thinly sliced (about 2 cups)
1 cup unsweetened black cherry juice
1 cup halved pitted fresh Bing cherries or other dark sweet cherries (about 7 ounces whole unpitted cherries)
1/3 cup thinly sliced fresh basil, divided
Ingredient Tip: Look for unsweetened black cherry juice at the supermarket and natural foods stores.

Steps:

  • Preheat oven to 250°F. Mix flour, 3/4 teaspoon coarse salt, and 1/2 teaspoon ground pepper on large plate. Lightly coat lamb chops with flour mixture; shake off excess. Melt butter with oil in large nonstick skillet over medium-high heat. Add lamb chops and cook to desired doneness, about 3 minutes per side for medium-rare. Transfer chops to baking sheet and keep warm in oven while preparing sauce (do not clean skillet).
  • Add onion to same skillet and sauté 2 minutes. Add cherry juice and bring to boil, scraping up any browned bits. Boil until liquid is slightly reduced and onion is slightly softened, stirring frequently, about 4 minutes. Stir in cherries and half of basil and cook 1 minute. Season sauce to taste with salt and pepper.
  • Place 2 lamb chops on each of 4 plates. Spoon sauce over. Sprinkle remaining basil over and serve.

1 quince, peeled, cored, cut into 1/4-inch-thick slices

8 3/4-inch-thick lamb rib chops or eight 1 1/4-inch-thick lamb loin chops
1 tablespoon vegetable oil
1 tablespoon aged balsamic vinegar
1 tablespoon butter
1/2 teaspoon chopped fresh oregano
1/2 teaspoon chopped fresh rosemary

Steps:

  • Combine apple juice and sugar in small saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Add quince slices and thyme sprigs. Reduce heat to medium-low, cover, and simmer until quince is tender, about 20 minutes. Strain, reserving quince and juices separately. Discard thyme sprigs.
  • Sprinkle lamb with salt and pepper. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add lamb; cook to desired doneness, about 2 1/2 minutes per side for rib chops and 3 1/2 minutes per side for loin chops for medium-rare. Transfer lamb to platter; cover to keep warm. Pour off drippings from skillet; place skillet over medium heat. Add reserved quince juices; boil until reduced to 1/4 cup, scraping up any browned bits, about 2 minutes. Remove skillet from heat; stir in vinegar, butter, oregano, rosemary, and 1/2 teaspoon chopped thyme. Season pan sauce to taste with salt and pepper.
  • Top lamb with poached quince. Spoon pan sauce over and serve.

1 Tbs. Dijon mustard
2 tsp. fresh lemon juice
2 Tbs. cold unsalted butter, cut into small pieces
1 Tbs. finely chopped fresh dill

Steps:

  • Season the lamb chops all over with 1­1/2 tsp. salt and 1/2 tsp. pepper. Heat the oil in a large skillet over medium­high heat. Put 2 of the chops in the skillet and cook, flipping once, until deep golden­brown and medium rare (130°F), about 10 minutes. Transfer to a large plate, cover loosely with foil, and keep warm. Repeat with the remaining 2 chops. Add the shallots to the skillet and cook, stirring, until softened, about 1 minute. Add the broth and wine and cook, scraping up any browned bits, until reduced by half, 4 to 5 minutes. Reduce the heat to medium low, stir in the mustard and lemon juice, and cook for 1 minute more. PAN SEARED RACK OF LAMB WITH FIG CHIPOTLE BARBEQUE SAUCE

4 fire-roasted canned plum tomatoes, pureed
1 apple, peeled and cored
2 to 4 chipotle peppers in adobe sauce
1 tablespoon molasses
2 tablespoon honey
1/4 cup fig preserves, plus more to taste
Kosher salt
1 (8-bone) rack of lamb, trimmed of all fat
Olive oil

Steps:

  • In a food processor, combine the tomato puree, apple, 2 of the chipotles, the molasses, honey and fig preserves. Adjust the heat and sweetness by adding more chipotles or more figs preserve or both. Season with salt. Sauce may be made several days in advance and works well on all meats. If sauce becomes too thick, thin with a splash of water or apple cider.
  • Coat lamb with a little of the sauce, reserving most of the sauce for later. Refrigerate for al least 1 hour, up to overnight.
  • Heat a splash of olive oil in a skillet over high heat until just under the smoking point. Add the lamb carefully to the oil and sear for 2 to 3 minutes on each side. The sauce coating the lamb will caramelize and darken. Reduce heat and continue cooking until desired temperature (medium rare is recommended). Heat remaining barbeque sauce to warm. Slice chops and serve with sauce.

2 cups halved seedless red grapes
2 cups tawny Port
2 cups low-salt chicken broth
2 teaspoons chopped fresh rosemary
Sausage Crust and Lamb:
1/2 cup halved seedless red grapes
1/4 cup halved pitted Kalamata olives
1 tablespoon chopped fresh rosemary
1 teaspoon balsamic vinegar
1 small garlic clove
8 ounces ground lamb
1/2 teaspoon coarse kosher salt
1/4 teaspoon freshly ground black pepper
2 2- to 2 1/2-pound well-trimmed racks of lamb (each with 8 bones)
4 tablespoons olive oil, divided
1/2 cup low-salt chicken broth
4 tablespoons Dijon mustard, divided
2 1/2 cups fresh breadcrumbs made from crustless French bread

Steps:

  • For sauce:
  • Boil all ingredients in large saucepan until reduced to 2 1/3 cups, about 20 minutes. Cool. Puree in blender. DO AHEAD: Can be made 5 days ahead. Cover and refrigerate.
  • For lamb:
  • Pulse grapes, olives, chopped rosemary, vinegar, and garlic clove in mini processor until olives are chopped. Transfer to bowl. Mix in ground lamb,1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Sprinkle racks of lamb with salt and pepper. Heat 1 tablespoon oil in large skillet over medium-high heat. Add 1 rack, meat side down, and cook until browned, about 5 minutes. Set on rimmed baking sheet, meat side up. Repeat with 1 tablespoon oil and remaining rack; reserve skillet. Cool lamb completely.
  • Add 1/2 cup broth to skillet. Boil until reduced to glaze, scraping up browned bits. Add to sauce. Cover and chill.
  • Spread each rack with 1 tablespoon mustard. Press half of lamb sausage over top of each rack (layer will be thin). DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Preheat oven to 425°F. Combine breadcrumbs, 2 tablespoons oil, and 2 tablespoons mustard in medium skillet. Toss over medium heat until beginning to color, about 5 minutes. Press crumbs over sausage on each rack. Cut through crumb crust (not lamb) between bones to score. Roast until thermometer inserted into center registers 135°F, about 30 minutes for medium-rare.
  • Transfer lamb to platter; let rest 10 minutes. Pour juices from baking sheet into sauce. Simmer in small saucepan until reduced to about 1 1/3 cups, about 9 minutes (sauce will thicken slightly). Season with salt and pepper.
  • Cut lamb between bones into chops. Set two on each plate. Spoon sauce over.
