I'm always looking for new recipes to make in my crock pot. Here's another easy and tasty one. I finally got around to making this I used pork spare ribs. I cooked them longer till they were falling off the bone. The sauce has a very good flavor. My husband was pleasantly surprised at the flavor.I found this in Family Circle Magazine.

1/2 cup low sodium soy sauce
1/2 cup packed light brown sugar
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 tablespoons minced fresh ginger
4 garlic cloves, crushed
1/2 teaspoon red pepper flakes
5 lbs beef short ribs or 5 lbs pork ribs
3 tablespoons cornstarch
1 1/2 cups shredded carrots
3 scallions, trimmed and thinly sliced
1 tablespoon sesame seeds
3 cups cooked white rice

Steps:

  • Blend soy sauce, sugar, oil, vinegar, ginger, garlic and red pepper in bowl.
  • Place ribs in 5 quart slow cooker, add sauce. Cover, cook on High for 6 hours or Low for 9 hours, until meat is tender.
  • Transfer ribs to a platter. Skim and discard excess fat from liquid. Combine cornstarch and 3 tablespoons water; blend with liquid in a saucepan. Bring to a boil over high heat and cook for 2 minutes, stirring, until thickened. Stir in carrots. Top ribs with sauce, scallions and sesame seeds.
  • Serve over cooked rice.

GALBI (KOREAN-STYLE SHORT RIBS)

This dish, known as galbi, is a fine thing to eat in a restaurant, but it also makes for a wonderful and easy meal at home. If you buy English-style short ribs, which are cut along the bone, you must butterfly the meat into a thin, long strip. If the ribs you buy are flanken-style, in which a band saw is used to cut across the ribs, creating half-inch slices of beef dotted with three little bones, rinse them under cold water before seasoning to remove any bone fragments. It's a good idea to let the ribs marinate for at least two hours to allow the seasoning to penetrate; marinating overnight is even better.

3 pounds short ribs, cut in 1/2-inch slices across the bones (flanken-style)
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup rice wine

Steps:

  • Rinse short ribs in cold water, pat dry and place in a wide shallow bowl. In another bowl, mix together soy sauce, brown sugar, rice wine, sesame oil, black pepper and cayenne.
  • Put onion, garlic, pear and ginger in the work bowl of a food processor. Grind ingredients to a smooth purée, then add to soy sauce mixture. Add sesame seeds. Thin with ¼ cup water. Pour marinade over short ribs and mix well. Cover and refrigerate for at least 2 hours, or overnight. Bring to room temperature, drain and discard marinade.
  • Cook short ribs on a hot grill or under the broiler for 2 to 3 minutes per side, until nicely browned but juicy. Pile grilled meat on a platter and serve immediately with lettuce leaves on the side. Accompany with sliced hot peppers, ssamjang and steamed rice, if desired.

Steps:

  • Mix pear slices, sherry wine, soy sauce, rice vinegar, brown sugar, garlic, ginger, hoisin sauce, hot chili paste, and sesame oil in a blender until smooth, about 4 minutes.
  • Arrange short ribs in a 9x13-inch baking dish and coat completely with marinade. Cover baking dish with plastic wrap and transfer to the refrigerator to marinate for 8 to 12 hours.

3/4-1 cup soy sauce
2 tablespoons sherry wine
3 tablespoons honey

1/2 cup chopped scallion, plus more green tips for sprinkling (green and white parts, mixed)
2 teaspoons red chili pepper flakes
6 lbs beef short ribs, cut into thin pieces, about 2 1/2 inches long

Steps:

  • Grind the sesame seeds in a coffee grinder until fine. Place the ground sesame seeds in a medium bowl and add the garlic, soy, sherry, honey, sesame oil, water, ginger, scallions, and red chili flakes, stir until thoroughly combined.
  • Put the ribs in a large baking dish, pour the marinade over, and turn to coat. Cover and let marinate in the refrigerator for 2 to 3 hours.

3 tablespoons Oriental sesame oil

Steps:

  • Cut through the meaty side of each short rib to the bone at 1/2-inch intervals, leaving the meat attached to the bone. Steps:

  • Soak ribs in a large bowl of water for 1 hour.

1/2 cup soy sauce
1/4 cup sesame oil
1 teaspoon sesame seeds

Cucumber Kimchi, recipe follows, optional
5 small pickling cucumbers
2 tablespoons salt
2 cups water
1 pound Chinese turnips, some julienned and some cut into circles
1/4 cup julienned carrot

2 scallions, julienned
3 hot red peppers, seeded and minced
1 teaspoon minced fresh ginger
1 teaspoon sugar
1 teaspoon salt
3/4 teaspoon cayenne pepper

Steps:

  • Score ribs every 1/2-inch along the length and width of the bone, making sure not to cut too deep so the meat will stay attached to the bone.
  • Combine the remaining ingredients in a bowl to make the marinade. Pour the marinade over the ribs and push the sauce into the cuts so it gets all the way down to the bone. Turn the ribs over face down in the marinade and cover for a minimum of 2 hours or refrigerate overnight for a stronger flavor.
  • Remove ribs from the marinade and barbecue over a charcoal grill. Serve ribs with Cucumber Kimchi, steamed rice, and green Korean peppers. Enjoy!
  • Make 3 deep slashes of equal size along the length of the cucumbers. Make sure not to cut all the way to the end of the cucumber to keep the cucumbers whole.
  • Dissolve the 2 tablespoons of salt in the water. Soak the cucumbers for 2 hours to soften so they won't crack when they get stuffed.
  • For the stuffing, combine the remaining ingredients except for the chicken stock and mix well.
  • Squeeze as much water as possible out of the cucumbers. Stuff the turnip mixture tightly into the cuts. Place the cucumbers in a jar with the remaining stuffing and let sit for 3hours. Pour the chicken stock over the cucumbers and let stand at room temperature for 24 hours. Refrigerate and serve with Korean short ribs.

  • Place all ingredients, with the exception of the ribs, into your food processor and run until the garlic and ginger are both minced to small pieces. (You can also use a blender and mix in two or three batches or even mince the garlic and ginger by hand and stir everything in a large bowl) Once all items are mixed together, place ribs in a shallow pan or tub and pour the marinade over them being careful to make sure they are as submerged as possible. You can marinade them for as long as three days but I have had them within 24 hours and the flavor is still quite complete. Once the marinade has done its thing, you should barbeque these on a medium hot grill for about four to five minutes per side. Keep your eyes on these babies as with all that sweet marinade they will burn quickly if not watched closely. Serve with a crispy fresh salad, baked potato with all the trimmings, a slice of pineapple for a garnish and a nice glass of Merlot or Pinot Gris. Mmmmmm. I think I know what's going on the barbie tonight!

Steps:

  • Grind sesame seeds to a coarse powder in grinder. Reserve 1/4 cup scallion greens, then whisk together remaining scallions, garlic, soy sauce, brown sugar, hot-pepper paste, sesame oil, and 2 tablespoons sesame-seed powder in a large bowl.   • Chop onion, pear or apple, and ginger into small pieces and place in blender with garlic and just enough water to blend into a smooth pourable paste. Pour into medium mixing bowl.
  • Slice green onion and add to bowl.
  • Add all other ingredients. Mix well and let stand for at least fifteen minutes.
  • If too thick, add equal parts soy sauce and water until reach desired consistency.
  • PREPARE MEAT.
  • Very lightly salt meat on both sides and let sit 10 minutes.
  • Place meat into a bowl, pour in enough marinade to just cover the meat and mix well. Refrigerate for 6 to 24 hours.
  • GRILL MEAT.
  • Remove meat from refrigerator and let set at room temperature for 20 minutes.
  • Heat grill to high heat.
  • Cook until browned then turn and cook until browned on the other side, about 2 minutes per side.
  • NOTE:.
  • If you can't get the butcher to butterfly the ribs, you can do it yourself. Separate the ribs, then slice into the meaty side at the center of the rib section, stopping just before cutting through the membrane. Turn your knife 90º (flat to the bone) right and carefully slice the meat at roughly 1/8 inch thickness outward until just short of slicing through, roll the loosened flap of meat away from the knife, and continue slicing until again just short of slicing through. Repeat until you reach the "end" of the meat. Do the same for the left side and repeat this with each rib section.

The aroma of these cooking on your grill is enough to make your neighbors drool. The longer you let this marinate, the better. I like to make the ribs in the marinade, freeze and vacuum seal for when ever company comes or to take to office potlucks.

2 tablespoons sesame seeds
1/2 cup low sodium chicken broth
1/3 cup soy sauce
1/4 cup chinese rice wine or 1/4 cup dry sherry
2 1/2 tablespoons sugar
2 tablespoons garlic, minced
1 tablespoon ginger, minced
2 green onions, finely chopped
2 teaspoons chili-garlic sauce
2 lbs beef short ribs, Korean style (flanken ribs)
1 teaspoon cornstarch, dissolved in 2 tsp water

Steps:

  • Place seseme seeds in a small frying pan over medium heat to toast. Stirring frequently until lightly browned, about 3-4 minutes. Immediately remove from heat & cool. When seeds are cooled, grind in a spice grinder or food processer. Place ground seeds in a large bowl with broth, soy sauce, rice wine, sugar, garlic, ginger, green onions, and chili garlic sauce. Mix well and add ribs to coat. Cover and let stand in refrigerator for 4 hrs to overnight, turning once.
  • Lift meat from marinade and drain briefly. Reserve the marinade in a small pan.
  • Place ribs on a well oiled grill 3-4 inches abouve a solid bed of low-glowing coals or medium heat on a gas grill. Cook about 3 minutes per side for medium rare ribs.
  • While meat is cooking, simmer marinade for 3 minutes. Add cornstarch solution, stirring, until sauce boils and thickens.
  • Serve ribs with rice and sauce on the side.

1/4 cup sesame seeds, toasted and cooled completely
1 bunch scallion, trimmed and finely chopped
6 garlic cloves, minced
1/2 cup soy sauce
1/4 cup packed light brown sugar
3 tablespoons korean red pepper paste (gochujang)
1 tablespoon sesame oil
6 lbs beef short ribs
3 cups water
1 (2 inch) peeled fresh ginger, smashed

Steps:

  • Grind sesame seeds to a coarse powder in grinder. Reserve 1/4 cup scallion greens, then whisk together remaining scallions, garlic, soy sauce, brown sugar, hot-pepper paste, sesame oil, and 2 tablespoons sesame-seed powder in a large bowl. Reserve remaining sesame-seed powder for serving. Add short ribs to soy sauce mixture, rubbing mixture into them. Transfer ribs to a large sealable plastic bag and seal bag, pressing out excess air. Marinate, chilled, at least 8 hours.
  • Transfer ribs to a wide 6- to 8-quart heavy pot and add water and ginger. Simmer, tightly covered, until ribs are very tender, about 3 hours.
  • Transfer ribs to a platter using tongs and keep warm, covered with foil. Skim fat from sauce and pour sauce through a sieve lined with a dampened paper towel into a bowl, then discard solids. Serve ribs with sauce in shallow bowls and sprinkle with reserved scallion greens and remaining sesame-seed powder.
  • Cooks' notes:.
  • • Ribs can be marinated up to 1 day.
  • • Ribs can be braised 2 days ahead and cooled in sauce, uncovered, then chilled, covered. Remove fat from sauce, then reheat, covered, over moderate heat and proceed with recipe.

  • 1 pound Flaken Ribs, "cross cut short ribs", per person. Store bought Korean teriyaki sauce. Sauce for the plate. MARINADE: Use a large Ziploc style freezer bag and remember I don't measure so the amounts are estimated. Soy sauce - 1/4 cup Good Mustard - table spoon full. Ginger, fresh, and as much as you like. Table spoon or so. Garlic, same as ginger. Sesame Oil - 2 table spoons Rice wine Vinegar - 3 table spoons. Hot sauce - I don't like Tabasco but that style. Figure it out! COOKING: Hot grill, throw on as many as you can and don't leave the grill!!!!! Have your tongs ready too. You'll see why. Like how I don't measure I also don't keep time. You want a little char, so when you get a little char flip them over, 3-5 minutes per side. Ok done. Use your store bought sauce for dipping if you like. Add stir fry noodles or rice to complete the meal.

1 cup soy sauce
1/2 cup sugar
1/8 cup sliced green onion
1 tablespoon white sesame seeds
2 tablespoons sesame oil
2 tablespoons ko chu jang (Korean hot pepper sauce)
1 1/2 pounds short ribs (have your butcher cut 1/8-inch thick slices of short ribs, bone attached)

Steps:

  • Preheat a grill.
  • Combine soy sauce, sugar, green onions, sesame seeds, sesame oil, and ko chu jang with ribs and marinate for 30 minutes to 1 hour. Grill over charcoal barbecue grill.
  • Note: Adjust sweetness or spiciness by adding more or less of either sugar or ko chu jang sauce.
