GRILLED KOREAN-STYLE BBQ GLAZED PORK CHOPS WITH RED ONIONS AND BABY BOK CHOY



Grilled Korean-Style BBQ Glazed Pork Chops with Red Onions and Baby Bok Choy image

Instead of marinating the meat, which is typical of Korean BBQ, these pork chops are brushed in a nutty hoisin glaze while they're on the grill. Grilled veggies, tossed in that same sweet and spicy glaze are served alongside.

2 tablespoons soy sauce
1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar
1 tablespoon peeled and finely grated fresh ginger
1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

I started off with another recipe on this site but wound up changing so much that I think it needs it's own mention. The bean paste makes it a little bit spicy. Sauce was great over rice.

½ cup chicken broth
1 tablespoon Korean chile bean paste
½ cup soy sauce
6 pork chops
salt and pepper to taste

Steps:

  • In the crock of a slow cooker, stir together the garlic, chicken broth, bean paste and soy sauce. Season the pork chops with salt and pepper, and place them in the crock. Turn to coat with sauce. Cover, and cook for 5 hours on the Low setting.

1/3 c soy sauce
1/3 c brown sugar
2 Tbsp sesame oil
1 Tbsp garlic, minced
6 bone-in pork loin chops
2 Tbsp toasted sesame seeds (optional)

Steps:

  • 1. Combine together soy sauce, brown sugar, sesame oil and garlic.
  • 2. Place pork chops and marinade into a large zip lock bag and refrigerate 30 minutes, turning bag over frequently.
  • 3. Remove chops from marinade and grill over high heat 15-18 minutes, turning over halfway through cooking time.
  • 4. Garnish with sesame seeds, if desired, and serve. Tip: For that special Korean BBQ flavor, grill the pork chops on high to produce a pleasing crispy crust. Can substiute pork chops with Chicken Breast Filets or any of our USDA Choice Steaks.

Pan Fried Korean Pork Chops - An easy pork chop recipe, packed with flavor and spice! A simple marinade turns pork loin chops into something spectacular.

4 boneless center-cut pork chops, (3/4- to 1-inch thick)
1/4 cup low-sodium soy sauce
1/4 cup Korean gochugang sauce
2 tablespoons honey
1 tbsp Sriracha sauce
2 cloves garlic, (minced)
1 teaspoon fresh grated ginger
1 tablespoon sesame oil, (for cooking)
Possible garnishes: (sesame seeds and chopped scallions)

Steps:

  • Pour the soy sauce, gochugang, honey, Sriracha, garlic and ginger in a small bowl. Stir well. Place the pork chops in a baking dish.
  • Pour half of the marinade over the pork chops, reserving the rest for later. Allow the pork chops to marinate at least 30 minutes at room temperature. If marinating longer, cover and refrigerate the pork chops until ready to use. Then let them sit out at room temperature for 30 minutes before cooking.
  • Heat a large skillet over medium heat. Once hot add the sesame oil and swirl around the pan.
  • Place the pork chops in the hot skillet. Cook for 3-4 minutes. Flip and cook another 3-4 minutes. Then flip once more and pour in the remaining marinade. Let the pork chops simmer in the marinade 2 minutes, then remove from heat. The chops should rest 5 minutes before serving.

4 New York pork chops (center cut)
1/2 cup soy sauce
4 tablespoons honey
12 cloves garlic, minced
2 teaspoons sesame oil
4 teaspoons fresh ginger, grated
2 tablespoons sweet chili sauce
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 F degrees.
  • In a medium size bowl whisk together soy sauce, honey, garlic, ginger, sesame oil and sweet chili sauce. It'll make just over 1 cup of marinade. Reserve half the marinade, set aside.
  • Pour the other half of the marinade over pork chops and marinate for at least 10 minutes.
  • Heat olive oil in a large skillet over medium-high heat.; add pork chops to skillet, discard remaining marinade
  • Cook for 5 minutes or until chops have browned on one side.
  • Flip the pork chops and add the reserved marinade to the pan; cook for 5 more minutes or until the pork reaches an internal temperature between 145°F (medium rare) and 160°F (medium). Let it rest for 3 minutes before serving.
