LENTIL AND KIELBASA SALAD



Lentil and Kielbasa Salad image

Good olive oil
2 cups medium-diced leeks, white and light green parts
1 cup (1/4-inch-diced) carrots (2 carrots)
1 pound green French Le Puy lentils, rinsed and drained
1 whole peeled onion stuck with 6 whole dried cloves
1 small turnip
1 tablespoon minced garlic (3 cloves)
3 tablespoons Dijon mustard
5 tablespoons good red wine vinegar
Kosher salt and freshly ground black pepper
6 scallions, white and green parts, thinly sliced crosswise
1 1/2 teaspoons chopped fresh thyme leaves
1/2 cup minced fresh parsley leaves
10 ounces kielbasa, halved lengthwise and sliced 1/2 inch thick diagonally
6 (1/2-inch-thick) diagonal slices of a baguette
4 ounces creamy herbed goat cheese, such as Montrachet

Steps:

  • Heat 2 tablespoons of olive oil in a large saucepan, add the leeks, and cook uncovered over medium heat for 5 minutes. Add the carrots and cook for one minute. Add the lentils, onion, turnip, and 6 cups of water. Bring to a boil, lower the heat, and simmer uncovered for 20 to 25 minutes, until the lentils are tender. Discard the onion and turnip and drain the lentils, reserving some of the cooking liquid. Place the lentils in a large bowl
  • Meanwhile, in a small bowl or glass measuring cup, whisk together the garlic, mustard, vinegar, 2 teaspoons salt, and 1 teaspoon pepper. Slowly whisk in 1/2 cup olive oil, add to the lentils, and toss. If it's dry, add a few tablespoons of the reserved cooking liquid.
  • Add the scallions, thyme, parsley, kielbasa, 2 teaspoons salt, and 1 teaspoon pepper and toss. Set aside to cool.
  • Toast the baguette slices and spread with the goat cheese. Taste the salad for seasonings and serve at room temperature with the goat cheese toasts.

WARM POTATO AND KIELBASA SALAD

2 pounds baby potatoes, halved
Kosher salt
1/4 cup extra-virgin olive oil
12 ounces kielbasa, cut into 1/2-inch chunks
1 large red onion, thickly sliced
1/4 cup apple cider vinegar
2 tablespoons whole-grain mustard
Freshly ground pepper
4 stalks celery, chopped, plus 1/2 cup celery leaves
1/2 cup chopped fresh parsley
1/4 cup chopped fresh dill

Steps:

  • Put the potatoes in a large pot and cover with water by a few inches; season with salt. Bring to a simmer and cook until tender, 8 to 10 minutes. Drain the potatoes.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the kielbasa and cook, tossing, until well browned, 3 to 4 minutes. Add the red onion and cook until just wilted but still crunchy, 1 to 2 minutes. Reduce the heat to low and whisk in the vinegar and mustard. Whisk in the remaining 2 tablespoons olive oil until smooth; season with 1/2 teaspoon salt and a few grinds of pepper.
  • Transfer the hot potatoes to a large serving dish. Season the potatoes with 1 teaspoon salt, then pour the kielbasa mixture on top and gently toss. Add the celery, celery leaves, parsley and dill; toss. Serve warm.

1/3 cup vegetable oil

Steps:

  • Generously cover potatoes with water in a large saucepan and add 1 tsp salt. Bring to a boil, then simmer, partially covered, until potatoes are tender, 10 to 15 minutes. Drain.
  • Meanwhile, whisk together onion, oil, vinegar, 1/2 tsp salt, and 1/4 tsp pepper in a large bowl.
  • Add hot potatoes and parsley to vinaigrette and toss.

6 potatoes, peeled and sliced
6 slices bacon (more if desired)
1 onion, chopped
1/4 cup flour
1 cup water
1/2 cup vinegar
2 tablespoons sugar
1 teaspoon salt
1 lb kielbasa
3 eggs, hard cooked
pepper, to taste

Steps:

  • Cook potatoes, drain and keep warm.
  • Heat kielbasa in water to cover. Retain water and keep meat warm.
  • Brown and drain bacon. In 1/4 cup of drippings cook onion until tender. Add flour to drippings and onion.
  • Add water and vinegar. Stir until thick. If too thick add additional water.
  • Add sugar and seasonings. Remove from heat. Pour over warm potatoes and add kielbasa and crumbled bacon and chopped eggs.
  • Serve or keep warm in slow cooker.

8 slices bacon
3 tablespoons olive oil
1 medium red onion, sliced

Steps:

  • Preheat the oven to 400°F.
  • Place the potatoes in a pot and cover with water. Bring to a boil and cook until fork tender, about 15 to 18 minutes.
  • Arrange the bacon on a slotted broiler pan and place in the middle of the oven. Bake the bacon until crisp, 10 to 12 minutes. Cool, chop, and reserve.

2 tablespoons coarse-grained Dijon mustard
1 1/2 teaspoons sugar
2 tablespoons plus 1/2 cup olive oil
1 pound fully cooked smoked kielbasa sausage, thinly sliced
3 garlic cloves, peeled, flattened
1 large fennel bulb with fronds, bulb and fronds chopped and reserved separately
5 green onions, chopped
2 heads frisée lettuce or 1 large head curly endive, separated into leaves

Steps:

  • Place lentils, carrots and celery in heavy large saucepan. Add enough cold water to cover. Stir in salt and bring to boil. Reduce heat, cover and simmer until lentils are just tender, about 20 minutes. Drain. Transfer lentil mixture to bowl.
  • Meanwhile, whisk vinegar, mustard and sugar in small bowl to blend; set aside. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add kielbasa and sauté until brown, about 5 minutes. Using slotted spoon, transfer to paper towels. Cover to keep warm.
  • Pour off any fat from skillet and discard. Add remaining 1/2 cup oil to skillet; heat over medium heat. Add garlic and stir until golden, about 2 minutes. Discard garlic. Add fennel bulb to skillet and sauté until crisp-tender, about 4 minutes. Add green onions and stir 1 minute. Whisk in vinegar mixture and bring to boil. Pour fennel mixture over lentils. Toss to coat. Season with salt and pepper.
  • Line large shallow bowl with frisée leaves. Spoon in lentil salad. Arrange kielbasa slices atop lentils. Sprinkle with chopped fennel fronds and serve.

1/2 lb kielbasa or 1/2 lb smoked sausage, cut into 1/8-inch slices
1 cup finely shredded red cabbage
1 medium cucumber, sliced thin
4 red radishes, sliced thin
1/2 cup mayonnaise (Hellman's is good)
1/2 cup sour cream
2 tablespoons Dijon mustard
1 tablespoon horseradish
1/2 teaspoon dried dill weed
1/2 teaspoon garlic powder
salt and black pepper
1/4-1/3 cup crumbled feta cheese
fresh parsley (to garnish) (optional)

Steps:

  • Saute the sausage in a skillet over medium heat until lightly brown; drain on paper towels, and let cool (of coarse, this may be done a day ahead if desired).
  • Place the sauted sausage, cabbage, cucumber and radishes in a large bowl; toss to combine.
  • In a small bowl, combine the mayo, sour cream, Dijon mustard, horseradish, dill weed, garlic powder, salt (add a small amount of salt, as the feta is salty!) and pepper; stir to blend.
  • Stir in the crumbled feta; mix well.
  • Pour the dressing over the sausage/veggie mixture, and stir slightly until well mixed.
  • Cover, and refrigerate for 30 minutes before serving.
  • When ready to serve, sprinkle with chopped parsley if desired.

1 medium red onion, quartered and thinly sliced
4 cups coarsely chopped kale (1 small bunch)
3 tablespoons red wine vinegar
1 cup beef stock
3/4 pound kielbasa, cut into half-moons
1/4 cup fresh flat-leaf parsley, finely chopped Coarse black pepper

Steps:

  • Preheat the oven to 400°F.
  • Place the potatoes in a pot and cover with water. Bring to a boil, add the salt, and boil the potatoes until just fork tender, 15 to 18 minutes.

3 lb (about 9 medium) russet potatoes
6 slice bacon, diced
3/4 c chopped onion
3/4 c water
1/3 c vinegar
2 Tbsp flour
2 Tbsp sugar
2 tsp salt
dash(es) white pepper
1/2 tsp celery seed
1 pkg turkey kielbasa, sliced or 1 pkg. little smokies, cut up

Steps:

  • 1. Wash potatoes; peel and cut into eighths. Place potatoes in a large cooking pot and cover with water. Bring to a boil and cook for 10 min.
  • 2. While potatoes are boiling, mix together flour, sugar, salt, pepper, and celery seed. in a 2 cup measuring cup, mix the water and vinegar.
  • 3. Drain potatoes, place back in cooking pot; set aside.
  • 4. In a large skillet, fry bacon until crisp; remove and drain. cook and stir onion in bacon drippings until tender and golden brown. stir in flour mixture. Cook over low heat stirring until bubbly. Remove from heat; stir in water and vinegar. Heat to boiling, stirring constantly.
  • 5. Add kielbasa or smokies. Boil and stir 1 min. Crumble bacon over potatoes; pour meat mixture over potatoes and bacon. Stir until well coated.
