STUFFED KIELBASA
Another comfort food recipe using three favorites, kielbasa, garlic mashed potatoes and sauerkraut. I used a 4 oz. pkg. of potatoes and it was plenty. I also think I would use cheddar next time as the mozzarella vanished. Found this on Allrecipes website.

Steps:
- Preheat oven to 350°F (175 C) Bring a large pot of water to a boil and simmer kielbasa for@ 8 minute to reduce fat.
- Prepare mashed potatoes according to pkg.
- Cut kielbasa in 4 equal portions and split each lengthwise almost all the way through so they lie flat.
- Layer each kielbasa with sauerkraut, then potatoes, then cheese.
- Bake in preheated oven 10-12 minute until heated through and cheese is melted.

- In a large skillet, cook bacon until crisp; remove to paper towels. Reserve 2 tablespoons drippings. Saute onion in drippings until tender. Stir in the sauerkraut, sausage, brown sugar, garlic salt, caraway and pepper. Cook and stir for 5 minutes. Remove from the heat; add bacon. Set aside to cool. , In a large bowl, combine contents of the roll mix and its yeast packet. Stir in one egg, water and butter to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Cover dough with a large bowl; let stand for 5 minutes. , Divide dough into 16 pieces. On a floured surface, roll out each piece into a 4-in. circle. Top each with 1/4 cup filling. Fold dough around filling, forming a ball; pinch edges to seal. Place seam side down on greased baking sheets. Cover loosely with plastic wrap that has been coated with cooking spray. Let rise in a warm place for 15 minutes. , Beat remaining egg; brush over bundles. Sprinkle with poppy seeds. Bake at 350° for 16-17 minutes or until golden brown. Serve warm. Freeze option: Freeze cooled bundles in a freezer container, separating layers with waxed paper. To use, reheat bundles on a greased baking sheet in a preheated 325° oven until heated through.

This is a family recipe passed down from my grandfather and my father who still make every New Year's Day. It's the best. Trust me, you'll love this recipe. It's original and kinda simple. It's 'old school.' Serve with Jewish rye bread, butter, and horseradish. A good side is mashed potatoes with cheese, milk, and butter to create a rich, creamy, tasty mashed potatoes to go with the dish.

- Cook fatback in a large pot over low heat until the drippings render out, about 45 minutes, stirring often. Stir sauerkraut and cabbage into the pork drippings, bring to a simmer, and cook until cabbage is very tender, about 3 hours. Stir occasionally. Mix kielbasa into the cabbage and kraut; cook 45 minutes to 1 hour to blend flavors.

- Preheat oven to 350 degrees F. Lay a large sheet of Reynolds Wrap® Heavy Duty Aluminum Foil on a baking sheet. In the center of the foil, combine the sausage, onion, sauerkraut, oil, butter, pepper and caraway seeds; mix well. Bring up foil sides. Double fold top and ends to make a packet, leaving room for heat circulation inside. Place the foil package in preheated oven and roast for 30 minutes.
- Open packets carefully by cutting along top fold with a sharp knife, allowing steam to escape; then open top of foil packet. Stir in the green apples and reseal, adding another piece of foil to the top if necessary. Return to the oven for 10 more minutes. Remove from the oven, add salt to taste and serve.

Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Grill kielbasa ring on one side for 4 minutes. Transfer to a cutting board, grilled side up.
- Cut a slit down the length of the kielbasa, leaving an inch on both ends. Be careful not to cut all the way through as you are just making a pocket. Stuff sauerkraut into the pocket.
- Carefully place the kielbasa back on the grill, stuffed side up. Grill for 4 minutes more. Slice into serving portions and serve.

- pre heat oven to 400 degrees Cut kielbasa into bite size pieces,sautee in butter on medium heat in a frying pan until brown and heated through,take off stove when finished strain excess butter,set kielbasa aside. Strain the sauerkraut really well squeeze to almost dry, pat on paper towel to remove excess liquid, add mustard, mix well Stretch pizza dough on a flat surface into a rectangle
- On one side of the dough add 1/2 the bag of shredded swiss cheese,kielbasa,the sauerkraut mixture and the remaining cheese. spread it out but leave a little room on the edges.
- Fold over the other side of dough crimp and pinch the edges closed shape into a loaf, place on a greased cookie sheet,cut tiny slits on the top of bread for air to escape,bake 25 mins or until the bread is lightly golden brown wait 5 mins before cutting, cut into slices and ENJOY!!
