SIMPLY BAKED MONTE CRISTOS
A french toast style sandwich that is baked so you can cook several at one time. It's a great idea for breakfast, and It's a pretty flexible recipe. You can use any kind of bread, add turkey and another layer of bread to make a triple decker, and even add mustard.

Steps:
- Preheat oven to 425°F and grease a cookie sheet.
- Layout 4 slices of bread and top each with a slice of ham, a slice of cheese and the remaining bread to make 4 sandwiches.
- In a large bowl whisk the eggs, milk, cinnamon sugar, and vanilla.
- Dip the sandwiches into the egg mixture, coating both sides, and place onto the greased cookie sheet.
- Bake 15 minutes, turn sandwiches over, and continue baking 10 more minutes.
- Dust with powdered sugar and serve with raspberry jam.

- Preheat the oven to 350 degrees F. Spread 4 bread slices with the mustard and the other 4 with the preserves. Toss both cheeses in a bowl, then divide half the mixture among the mustard-covered bread. Top with the ham, then the remaining cheese and the preserves-covered bread. Press each sandwich slightly. Whisk the eggs, milk, 1/2 teaspoon salt and a few grinds of pepper in a baking dish.
- Melt 1 1/2 tablespoons butter in a large nonstick skillet over medium-high heat until just starting to brown. Dip 2 sandwiches in the egg mixture, turning to coat. Let the excess drip off, then transfer to the hot skillet and cook until browned and crisp, about 2 minutes per side. Transfer the sandwiches to a rack set on a baking sheet. Wipe out the skillet, add the remaining 1 1/2 tablespoons butter and cook the remaining 2 sandwiches. Transfer to the rack, then transfer the baking sheet to the oven to melt the cheese completely, about 5 minutes.
- Meanwhile, toss the greens with the vinegar, a pinch of salt and a few grinds of pepper. Serve with the sandwiches.

- To make the Batter: In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, cayenne, and salt.
- Whisk in the club soda and beer.
- The mixture should be the consistency of pancake batter.
- Refrigerate until you're ready to use it.
- To assemble the Sandwiches: Set half of the slices buttered side down, and cover with the cheese slices, folding them over if they extend past the edges.
- Layer the ham and turkey over the cheese, and spread the jam over the turkey.
- Place the top slice of bread on, buttered side up.
- Grill the sandwiches on both sides.
- Pour the oil into a deep heavy-duty saucepan to fill it halfway.
- Heat the oil to 350°F (175°C), measuring the temperature on a deep-fat thermometer.
- Cut the sandwiches on a diagonal into thirds, to make 9 triangular pieces.
- Stir the batter.
- Dip each sandwich piece into the batter, thoroughly coating it.
- Fry the pieces 2 or 3 at a time, being careful not to overcrowd them in the pan.
- Cook them for about 3 minutes on each side, until they're nicely browned, and transfer to a paper towel to drain.
- Allow the oil to come back up to temperature before you fry the next batch of sandwiches.
- Place the sandwiches on a platter.
- Sift a very heavy layer of powdered sugar over them, and serve with a side of jam.
