Been trying to make a great low carb bread for a long time. A lot of wasted ingredients. What I miss most about low carb, is a slice of rye toast. Not anymore! I finally got this right. And now that I did, I'll be able to use this recipe for other bread, including sweet breads.

1/2 c coconut oil
1/4 c coconut milk from can

1 Tbsp each dill weed & caraway seeds

  • 1. In a medium size bowl mix all Your dry ingredients, except dill and caraway.
  • 2. Next add all the wet ingredients and mix well. After mixed add dill and caraway seed on top.
  • 3. In a greased 9in. Bread pan. Pour mix in and spread evenly. I like to add some more caraway seeds.
  • 4. Bake in preheated 300 degree oven for 1 hour. Remove and let cool before slicing

60g coconut oil, melted, plus extra for the tin
100g almond flour
12g psyllium husk
2 tsp baking powder
1 tsp baking soda
100g milled seeds (we used 50g sunflower seeds and 50g pumpkin seeds)
20g coconut flour
12g milled flaxseed
3g salt
3 eggs, beaten
1 medium courgette, grated
1 tbsp apple cider vinegar

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Oil and line a 900g loaf tin with baking parchment. Set aside.
  • Put all the dry ingredients in a large mixing bowl, stir together and set aside.
  • Put the coconut oil, eggs, courgette and 115ml hot water in a separate large mixing bowl, then tip into the bowl with the dry ingredients and combine. Stir in the apple cider vinegar, mixing gently - try not to overmix the dough.
  • Transfer the mix to the loaf tin. Wet your fingers to smooth the top of the bread, or use the back of a spoon. Bake for 20 mins, then reduce the oven to 150C/130C fan/gas 2 and bake for 30 mins more. Remove from the oven and leave to cool in the tin for 10 mins, then transfer to a cooling rack. Slice the bread and toast the slices in a pan or oven.

ROSEMARY SEA SALT KETO BREAD - A FAMILY FEAST®



Rosemary Sea Salt Keto Bread - A Family Feast® image

This Rosemary Sea Salt Keto Bread has all of the same flavor and texture of real bread, but with a fraction of the carbs.

Number Of Ingredients 15

1 cup tap water heated to exactly 110 degrees F.
½ teaspoon granulated sugar* or honey
2 teaspoons rapid rise dry yeast
3 whole eggs
3 tablespoons extra virgin olive oil
2/3 cup golden flaxseed meal
2/3 cup almond flour
¾ cup oat fiber (not oat flour)
1 ¼ cups Vital wheat gluten
2 tablespoon monk fruit sweetener*, or granulated Stevia
½ teaspoon xanthan gum powder
1 ½ teaspoon coarse sea salt (or kosher salt)
1 ½ teaspoons garlic powder
½ cup fresh rosemary
Oil and coarse sea salt, for top of baked bread

Steps:

  • Dissolve sugar in warmed water and add yeast. Set aside to bloom.
  • In the bowl of a stand mixer with the paddle attachment, add eggs and beat five minutes on medium.
  • Add olive oil and beat to combine.
  • In a large bowl whisk together flax, almond flour, oat fiber, wheat gluten, monk fruit sweetener, xanthan gum powder, salt, garlic powder and fresh rosemary.
  • Once the yeast has bloomed (froth formed on the top of the water), alternate adding the yeast mixture and the dry mixture until everything is in and mix on medium low for eight minutes. (The dough needs to be kneaded this long to develop the gluten.)
  • Remove the dough and form into a neat ball with your hands then stretch to fit a 9X5X3-inch loaf pan. Do not oil or spray the pan, you want the dough to stick to the sides as it rises. Our 9X5X3-inch loaf pan was nonstick.
  • Spray a piece of plastic wrap and place over the top of the pan so the dough doesn't stick to the plastic.
  • Proof for 1 ½ to 2 hours until doubled in size.
  • I have an oven that I can set to 80 degrees F so I placed the dough in at that temperature then microwaved a 2-cup measuring cup filled with water until it was boiling hot and placed it in the oven with the dough. Then every thirty minutes I reheated the water until the dough doubled in size and was cresting the edge of the pan. In this humid environment, my dough rose in one hour and 45 minutes.
  • You could also just use the inside cavity of your microwave with a container of hot water reheated every 30 minutes. Either have a tea kettle going to fill the cup or remove the dough and microwave the water then place the dough back in.
  • Preheat oven to 375 degrees F with rack in center.
  • Bake for 30 minutes until golden brown and when poked with a probe thermometer, will register between 190-200 degrees F.
  • Remove from pan while hot by running a knife down each side to loosen, then cool on a rack. While hot, brush the top with olive oil and sprinkle on sea or kosher salt.
  • Serve warm or cool and slice. Keep wrapped at room temperature like regular bread.

1 1/4 c almond flour
5 Tbsp psyllium husk powder
2 tsp baking powder
1 tsp sea salt
2 tsp cider vinegar
1 c boiling water
3 egg whites
2 Tbsp sesame seeds

Steps:

  • 1. Preheat the oven to 350°F (175°C). Mix the dry ingredients in a bowl.
  • 2. Bring the water to a boil and add it, the vinegar and egg whites to the bowl, while beating with a hand mixer for about 30 seconds. Don't over mix the dough, the consistency should resemble Play-Doh.
  • 3. Moisten hands and form dough into 4 or 8 pieces of bread. You can also make hot dog or hamburger buns. Place on a greased baking sheet.
  • 4. Bake on lower rack in oven for 50-60 minutes, depending on the size of your bread. They're done when you hear a hollow sound when tapping the bottom of the bun.
  • 5. Serve with butter and toppings of your choice. Store the bread in the fridge or freezer.

KETO NAAN BREAD RECIPE

3 cups shredded mozzarella cheese
2 tablespoons sour cream
2 large eggs
1 ½ cups almond flour
½ teaspoon garlic powder
3 teaspoons baking powder
2 tablespoons butter (melted)
chopped parsley for garnish

Steps:

  • Preheat the oven to 350°F.
  • Add the mozzarella cheese to a microwave safe bowl, and heat at 30 second intervals until completely melted and formed into a cheese dough ball.
  • Place the cheese dough into a mixing bowl with the rest of the ingredients except for the butter and parsley. Beat on high until well combined.
  • Wet your hands slightly, and form the dough into 8 even pieces.
  • Flatten the dough into a ¼ inch thick naan shapes on a parchment or silicone mat lined baking sheet.
  • Bake for 15-20 minutes until browned and cooked through.
  • Brush the melted butter on the warm naan bread and sprinkle with chopped parsley before serving.
