- Fill a cocktail glass with ice, then add the bourbon and lime juice. Stir, top with a splash of ginger beer to taste and a splash of club soda if using to taste and garnish with the lime wedge and mint.
KENTUCKY MULE
Larry Rice's Louisville bar, the Silver Dollar, is all about whiskey. So its version of the Moscow Mule is bourbon based. Nothing complicated here, just good Kentucky whiskey subbed for the usual vodka. Ginger syrup is used instead of ginger beer, pushing the drink very close to whiskey sour territory, albeit one served under a mound of crushed ice.

- Fill a mug, preferably copper, three-quarters full with crushed ice. In a cocktail shaker three-quarters filled with ice cubes, shake all ingredients for 15 seconds and strain into the mug. Top with more crushed ice.
