Wonderful sweet, tart, tender, moist muffins. I bought some really large California plums at the store and with the heat, they weren't going to last long. So, I decided to try them in one of my favorite muffins recipes. My family just loves them. I hope you try them sometime, they go wonderful with your morning coffee or tea. Enjoy!

3 cup(s) flour
1/2 teaspoon(s) nutmeg
1 teaspoon(s) salt
1 teaspoon(s) cinnamon
3 teaspoon(s) baking powder
2/3 cup(s) crisco shortening
2 - eggs
1 cup(s) sugar
1 cup(s) milk
1 - 1 1/2 cup(s) chopped, plums
TOPPING
1 1/2 tablespoon(s) sugar
1/2 teaspoon(s) cinnamon

Steps:

  • Preheat oven to 350 degree F. Grease or spray with non stick cooking spray a standard sized muffin pan. ( I use silicone cups ) Whisk together the flour, salt, baking powder, cinnamon and nutmeg in a medium bowl, set aside.
  • In a large bowl, cream together the sugar and shortening. Add eggs one at a time and mix well after each addition. To the creamed mixture, alternate adding flour and milk, ending with flour. Mix thoroughly. Fold in the chopped plums.
  • Fill each muffin cup 2/3 way full each. Mix sugar and cinnamon and sprinkle each muffin, liberally.
  • Bake for 20 - 25 minutes or until a pick inserted comes out clean. Cool on racks, then gently remove from muffin tin. While still hot I sprinkled each with more sugar mixture.
  • I will be honest, I had never used fresh plums in a muffin before, and wasn't sure what they would turn out like. They are just awesome! Love how tender the muffins are as well. The cinnamon and sugar gives it just enough sweetness to the tiny bit of tartness of the plum.

In my hurry to use up some peaches, I came up with this muffin recipe. It turned out so good, just like peach cobbler in a muffin, that I thought I'd share it with everyone! This is also really good bread! Just increase the baking time to 1 hour at 350 degrees F and use 2 loaf pans.

3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 ¼ cups vegetable oil
3 eggs, lightly beaten
2 cups white sugar
2 cups peeled, pitted, and chopped peaches

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease the bottoms and sides of 16 muffin cups, or line with paper liners.
  • In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups.
  • Bake 25 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely.
