- Flatten each tenderloin slice to 1/4-in. thickness. Sprinkle with salt and pepper. In a large nonstick skillet over medium heat, cook pork in oil until tender. Remove and keep warm., Add peaches and lemon juice, stirring to loosen browned bits from pan. Cook and stir until peaches are tender, 3-4 minutes. Stir in the pork and preserves; heat through.

JUST PEACHY SPINACH SALAD
Sweet peaches, crunchy nuts, and tangy vinaigrette. After being on a strawberry spinach salad kick lately, I thought it would be fun to vary the ingredients a little and this is what resulted. Hope you like it as much as I did. :)

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 9x5 inch loaf pans.
- Place peaches, peach juice and 6 tablespoons sugar in a blender; puree until smooth.
- In a large bowl, sift together flour, baking powder, baking soda, salt and cinnamon. In a large bowl, cream together the shortening and 1 1/2 cups sugar. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. Blend this mixture into the flour mixture, alternately with the peach puree; stir just to combine. Fold in the nuts. Pour batter into prepared pans.
- Bake at 325 degrees for 55 to 60 minutes, or until a toothpick inserted into the center of a loaf comes out clean. Cool 10 minutes in pans; turn out on rack and let cool completely.

These take time because of the long marinating time, but are well worth it. They are to die for if you love ribs! I didn't include the marinating or cook time in the preparation time and only included the actual time boiling & grilling in the cook time, but because of the long marinating time, you'll need to do start these the day before you want to prepare them.

Steps:
- Cut ribs into serving size pieces and place in a Dutch oven, cover with water.
- Bring to a boil, reduce heat and simmer until tender 1 to 1 1/2 hours.
- Drain and place meat in a 9 x 13 inch pan.
- Combine peaches, ketchup, vinegar, soy sauce, brown sugar, garlic and ginger.
- Pour over meat, let marinate in refrigerator overnight.
- Drain well, reserving marinade.
- Grill ribs over hot coals 30- 60 minutes depending on thickness, basting frequently with marinade.
- Great on grill, but you can bake at 425 degrees for the same time.

- 1. Preheat oven to 375 degree F. In a med bowl, cream together the sugars and butter. Beat in the vanilla and egg. Sift flour, salt, baking soda, baking powder and cinnamon. Add a little flour at a time, alternating with the sour cream. Fold in peaches. Grease cookie sheet and drop by teaspoonfuls. Bake for 12 - 15 minutes. Remove from sheet to cooling rack. JUST PEACHY SPICED CHRISTMAS TEA
I was looking for the bag I had of spiced tea mix and while digging through my cabinet I found the box of packets that you pour into a water bottle for peach tea flavor. I could not find the mix so I used the recipe I have here. I used the True Lemon packets because the instant tea did not have lemon. I used allspice instead of cloves and was pleasantly surprised when I made a cup because it had the same taste without the stuff floating on top from the ground cloves. I was also very happy with the flavor of peach, cinnamon, allspice, lemon and Tang combined. I hope you enjoy it.

- Melt butter in a skillet over medium heat. Combine cornstarch with 1/3 cup sugar; add to skillet. Stir in peaches, cinnamon and salt. Cook until mixture thickens and boils, about 25 minutes, stirring frequently. Boil for one minute; remove from heat and stir in lemon juice. Cool completely; set aside.
- Cut crusts into quarters; spoon 2 tablespoons filling into the center of each quarter, leaving 3/4-inch dough uncovered on each side. Fold dough over filling; press edges together to seal.
- Transfer pies to 2 ungreased baking sheets. Brush tops of pies with egg; sprinkle with remaining sugar. Cut a one-inch slit in the top of each pie.
- Bake at 425 degrees for 18 to 20 minutes until golden, rotating baking sheets between upper and lower racks halfway through baking. Remove to wire racks to cool.

- 1. Preheat oven to 350° Prepare pan(s) by spraying lightly with cooking spray.
- 2. In large mixing bowl, cream butter and sugar together with mixer until fluffy. Add eggs and mix well.
- 3. Measure out flour, soda, salt and cinnamon into another small bowl and whisk together.
- 4. Peel, cut up and mash well, the peaches and banana. It should measure about 1 1/4 c. Add vanilla and almond extract and lemon juice. Stir to mix.
- 5. Add flour mixture to butter mixture and mix until you see no more loose flour. Stir in the mashed fruit, sour cream and nuts just until incorporated.
- 6. Spoon batter into prepared pan(s), level top with spatula and bake. For large pan, 1 hr 15 minutes, for medium pan (4x8), 45 minutes to 1 hour, for mini loaf approximately 30 minutes. Check progress during the final 15 to 30 minutes by inserting a toothpick into the center of the loaf. If it comes out clean, remove bread from oven.
- 7. Let cool in the pan for 10-15 minutes then turn out and finish cooling on wire rack.
