2 pounds jumbo lump blue crabmeat
1/2 cup mayonnaise or homemade aioli
4 teaspoons seafood seasoning (recommended: Old Bay)
6 scallions, finely chopped, about 3/4 of the green part
3 tablespoons chopped fresh basil leaves
2 large eggs
Salt and pepper
3 to 6 tablespoons fine bread crumbs (use just enough to help the cakes start to bind)
Canola-olive oil blend
Cocktail Sauce, recipe follows, for serving
Flavored aioli, for serving, optional
1 quart ketchup
2 tablespoons horseradish
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
1 teaspoon chili powder
Pinch cayenne
2 tablespoons fresh lemon juice

Steps:

  • Pick over the crabmeat to remove any shells. Be gentle, as the lumps of crab are delicate and will fall apart. Set aside. Mix together the mayonnaise, seafood seasoning, scallions, basil, eggs, and salt and pepper. Pour mixture over the crabmeat and with your hands gently mix together. Sprinkle the bread crumbs over the crab mixture and continue to mix. Divide the mixture into 4 parts and mold the cakes with your hands (do not rinse off you hands between mixing and forming the cakes, as it is mixture on your hands that help the cakes stay together).
  • Refrigerate the cakes for at least 30 minutes.
  • Preheat the oven to 400 degrees F.
  • Paint the crab cakes with a minuscule amount of oil and sear in a hot oven-safe skillet or on a griddle top until lightly golden brown on both sides. The cakes have such little binder that you need to be careful when flipping them over so that they don't fall apart. Place the pan in the oven for about 5 minutes, or to heat through.
  • Serve with a red Cocktail Sauce and/or a flavored aioli.
  • Mix all ingredients together in a small bowl. Refrigerate until ready to serve.

1 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon dry mustard
2 teaspoons Worcestershire sauce
1 tablespoon mayonnaise

Steps:

  • Preheat the broiler.
  • In a large bowl, combine the egg yolk, salt, pepper, mustard, Worcestershire, mayonnaise, and parsley. Then, gently fold in crabmeat (be careful not to break up the lumps). Shape into cakes and broil for 5 minutes.

5 Idaho potatoes, peeled and chopped
1 cup hot milk
4 ounces melted butter
2 tablespoons oil
1 to 2 ears corn, shucked, kernels removed from the cob
Salt and pepper
Chipotle Puree, recipe follows
1 1/2 to 2 pounds jumbo lump crabmeat
1 ounce garlic, chopped
4 ounces mayonnaise
Pinch chopped fresh herbs (tarragon, thyme, sage)
Salt and pepper
2 cups all-purpose flour
2 eggs, lightly beaten
2 cups bread crumbs
4 tablespoons butter
Basil Oil, recipe follows
Remoulade, recipe follows
3 ounces chipotle in adobo
1/4 bunch cilantro, stemmed
1 ounce garlic
1 bunch basil, leaves picked
1 cup olive oil
2 cloves garlic
Salt and pepper
1 ounce shallot, peeled and sliced
3 ounces cornishons or 1/2 dill pickle
1 tablespoon capers
1/4 teaspoon cayenne pepper
1 cup mayonnaise
1 tablespoon brandy
Salt and pepper

Steps:

  • Mashed Potatoes: Place potatoes in boiling, salted water and cook until soft, about 15 to 20 minutes. Drain. While the potatoes are cooking, combine the hot milk and melted butter. In a small saute pan, add the oil and heat. Add the corn and saute until tender, about 5 minutes. Season with salt and pepper. Add the milk mixture to the drained potatoes with the chipotle puree and sauteed corn and mash. Season with salt and pepper, to taste. Set aside and keep warm.
  • Mix the crabmeat, garlic, mayonnaise, and herbs. Season with salt and pepper. Divide the mixture into 8 equal portions.
  • Place the flour in a shallow dish or bowl. Place the eggs in a separate bowl, and the bread crumbs in a separate bowl. Dredge each crab cake in the flour, then the egg, then the bread crumbs, shaking off any excess. Refrigerate until ready to cook.
  • Melt 1/2 of the butter in a large saute pan. Add the crab cakes in batches and cook until golden brown on both sides, adding more butter as necessary.
  • Place potatoes in center of plate. Stack crab cakes onto mashed potatoes. Drizzle chipotle honey and basil oil around plate. Place a dollop of remoulade sauce on top of crab cakes.
  • Combine all ingredients in a blender or food processor and puree until smooth.
  • Chipotle Honey:
  • 4 ounces honey
  • 1 ounce chipotle peppers in adobo sauce, pureed
  • Combine the honey with the chipotle puree
  • Blanch the basil leaves in boiling water for 10 seconds. Drain and plunge in a water bath. Dry the leaves well and place in a blender. Add the garlic and puree with oil until smooth. Season with salt and pepper.
  • Combine all ingredients in food processor or blender until smooth.

I got this recipe from chef Jimmy Sneed when he had his Frog & The Redneck restaurant in Richmond, VA. Fantastic. Sometimes less is best, and with this recipe, the crab meat takes center stage. I serve them with a flavorful rice and a fresh vegetable and fruit compote on the side. If you want to serve these as appetizers, make more patties and watch the cooking time so that you don't overbake and dry them out.

1 lb large lump crabmeat
1 tablespoon whole grain mustard
1 egg, well beaten
1/2 cup mayonnaise

Steps:

  • Preheat oven to 400°.
  • Lightly brush 9x13" pan with olive oil.
  • Pick through crab meat, removing any cartilage and place in a medium bowl.

2 pounds jumbo lump crabmeat
1/2 small onion, finely minced
1/2 small red bell pepper, minced
1 teaspoon butter, plus more for sauteing
1 extra-large egg
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon dry mustard
1 teaspoon chopped parsley leaves
Pinch cayenne
Sea salt and fresh ground pepper
3 drops hot sauce, or to taste
4 tablespoons vegetable oil
2 cups fine bread crumbs, seasoned with salt and pepper
1/2 cup creme fraiche
1/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1 tablespoon honey mustard
1/2 teaspoon salt
1/2 teaspoon ground white pepper
2 drops hot sauce (recommended: Tabasco)

Steps:

  • To make the crab cakes: Pick through the lump crab for shells (VERY GENTLY).
  • In a saucepan over moderate heat, sweat the onion and pepper in the butter. Remove from heat and cool.
  • In a stainless bowl mix the egg, mayonnaise, mustards, parsley, cayenne, hot sauce, salt and pepper. Add in onions and peppers and fold in the crabmeat. Form into cakes about 3 inches across by 1 and 1/2 inches thick. Pack firmly, but do not crush the lumps, the cake should just hold together. Dredge on top and bottom in bread crumbs and chill for at least 1 hour in the refrigerator.
  • Preheat an oven to 400 degrees F.
  • In a saute pan over medium high heat, add 2 tablespoons of the vegetable oil and when hot, saute the crab cakes on 1 side. Do not crowd the pan. Do it in batches if serving several. Add a nut of whole butter to the pan and cook the cakes until brown on the other side. Place in the oven for about 2 to 3 minutes to heat through.
  • To make the creme fraiche: Mix all ingredients together and serve at room temperature. This will keep refrigerated for 3 to 4 days.

1 pound jumbo lump crabmeat, drained well, patted dry, and picked over for shells
6 tablespoons (3/4 stick) unsalted butter
1 small shallot, minced
1 teaspoon Old Bay seasoning
Kosher salt and freshly ground black pepper
1/2 teaspoon dry mustard
Pinch of cayenne pepper
1/3 cup heavy cream
2 scallions, white and green parts, chopped
1 cup all-purpose flour
1 large egg
1 cup panko bread crumbs
1/4 cup vegetable oil
Carrot Butter Sauce (recipe follows)
Alfalfa sprouts (optional)
Carrot Butter Sauce
1 cup carrot juice
1 small carrot, thinly sliced
1 shallot, coarsely chopped
1 teaspoon kosher salt
2 tablespoons heavy cream
8 tablespoons (1 stick) unsalted butter, cut into chunks, at room temperature
(makes 1 1/2 cups)

Steps:

  • Put the crab in a mixing bowl and set aside. Combine the butter and shallot in a small pot over medium heat. Once the butter has melted, add the Old Bay, 1 teaspoon salt, 1/2 teaspoon pepper, the mustard, and cayenne. Stir to combine. Remove from the heat and whisk in the cream. Pour the butter mixture over the crab. Add the scallions. Fold the ingredients together gently but thoroughly, taking care not to mash the crabmeat. The mixture will look almost runny; don't worry, it will firm up in the fridge. Cover with plastic wrap and chill in the refrigerator for at least 1 hour; overnight is even better.
  • When ready to cook, use your hands to form the mixture into 6 crab cakes that are 1 1/2 inches thick. They should be moist and just hold together. Put the crab cakes on a plate, cover with plastic wrap, and refrigerate while setting up your breading station. This allows the flavors to blend and the crab cakes to set.
  • To create a breading station, put the flour in a pie plate and season with salt and pepper. Crack the egg into a shallow bowl, add 1 tablespoon water, and beat with a fork until frothy. Put the bread crumbs in another shallow bowl.
  • Put a large skillet over medium heat, add a couple tablespoons of the oil, and swirl the pan around to coat the bottom. Working with 3 crab cakes at a time (keep the remaining cakes in the fridge), lightly dredge both sides of the cakes in the seasoned flour, dip into the beaten egg, and then coat completely with bread crumbs. Gently lay the cakes in the hot oil and brown for 3 to 4 minutes on each side (turning only once or they will break up). Drain on paper towels. Add the remaining 2 tablespoons oil, and repeat with the remaining 3 crab cakes.
  • To serve, pool 1/4 cup of the carrot butter sauce on each of 6 plates, set a crab cake in the center, and, if you like, put a pile of sprouts on top.
  • Carrot Butter Sauce
  • Combine the carrot juice, carrot, shallot, and salt in a small pot over medium-low heat. Simmer until the carrot is completely soft and mushy, 10 minutes. The liquid will reduce almost, but not quite, by half.
  • Stir in the cream and simmer for 2 to 3 minutes to combine. It will look kind of a mess, a bit grainy and separated, but not to worry.
  • Remove from the heat. Whisk in the butter a few chunks at a time; all of a sudden, the sauce will come together. Pour the sauce into a blender and hold a kitchen towel over the top for safety. Buzz until completely smooth and a beautiful sunset color appears. Serve hot.

THESE CRAB CAKES ARE TOPPED WITH MY CURRY MANGO AIOLI. IT IS ALSO POSTED HERE ON JAP AS WELL. THESE TRULY AREN'T THE SAME WITHOUT IT!
1 large egg
2 heaping Tbsp mayonnaise
2 tsp dijon mustard
1/2 Tbsp worcestershire sauce
1 tsp tabasco sauce
1/4 tsp lemon juice, fresh
1 pkg ritz crackers, crushed ( you may not need this many if crab meat pieces aren't huge, use your judgement)
1 lb jumbo lump crab meat
2 tsp old bay seasoning
2 Tbsp fresh parsley, chopped
1/4 tsp salt
1/4 tsp pepper

Steps:

  • 1. Gather all your ingredients ahead of time to make things easier on yourself.
  • 2. In a medium bowl, combine the egg, mayonnaise, mustard, Worcestershire, Tabasco, lemon juice, Old Bay, salt and pepper. Mix so that all the ingredients are well-incorporated.
  • 3. Add the cracker crumbs and parsley and mix well.
  • 4. Gently fold in crabmeat until just combined (try not to break up lumps of crabmeat).
  • 5. Using wet hands, shape mixture into 6 patties---8 patties if you like them smaller (do not pack too firmly; cakes should be as loose as possible and still hold their shape).
  • 6. Put the crab cakes on a large platter or cookie sheet as they're shaped. Cover with foil and refrigerate at least 1 hour before cooking.
  • 7. Set oven on Broil ( or around 450 ) and place crab cakes a non stick sprayed cookie sheet. Put crab cakes in oven on medium height rack.
  • 8. After 3 minutes of initial cooking time open oven to check crab cakes, if golden brown turn over using a spatula and your hands. Cook an additional 2-3 minutes or until golden brown. (Every oven varies so cooking time will vary. You will know to turn when they are golden brown)

MARYLAND STYLE JUMBO LUMP CRAB CAKES

I prepared this crab cake recipe adding different ingredients over the years and I have found this to be the best combination. I'm a Marylander and there are only a select few restaurants that serve awesome crab cakes. I frequent these establishments trying their crab cakes, and crab balls, and cream of crab soup. That's where I get ideas. I combined the best ingredients to come up with the best crab cake.

1/2 cup(s) mayonnaise
3 tablespoon(s) worcestershire
1 large egg
16 ounce(s) mozzarella cheese
1/2 bag(s) baby spinach
1 cup(s) fresh italian parsley
1 cup(s) fresh oregano
1 1/2 stick(s) melted butter
1/8 cup(s) olive oil
1 tablespoon(s) cayenne pepper
1 tablespoon(s) salt
1 tablespoon(s) pepper

Steps:

  • Heat olive oil in sauce pan and add spinach. Cook until wilted and remove from heat. The olive oil will prevent the spinach from sticking together when you add it to your mixture.
  • Next, in a medium size mixing bowl, whip the egg and add the mayonnaise, melted butter, parsley, oregano, worcestershire, cayenne, salt and pepper. Mix it well.
  • Add the mozzarella, and spinach last mixing it well. If the mixture is too watery then add more mozzarella until it feels right.
  • Add lump crab meat folding it carefully trying not to break the lumps apart. Cover and place in refrigerator for 30 minutes.
  • Preheat broiler to medium or high. Remove mixture from the refrigerator. Shape crab cakes into 4oz or 8oz cakes. Coat glass baking dish or stainless steel baking pan, with a hardened stick of butter then olive oil. Place crab cakes in dish or pan. Melt another stick of butter and drizzle or brush on top of crab cakes.
  • Broil crab cakes for 12 to 15 minutes or until golden brown. While broiling if your oven allows it, leave the oven door cracked open to the first notch.
  • It pairs nicely with a sweet white wine with red skin mash potatoes and asparagus.

1/4 cup chives (minced)
1/4 cup parsley leaves (minced)
1/4 cup dill leaves (minced)
2 cups fresh bread crumbs (no crust ) (and I usually use whole wheat to make it healthier)
1 red pepper
1 yellow pepper
1 1/2 cups mayonnaise
2 tbls. dijon mustard
salt (to taste)
white pepper (to taste)
tobasco (to taste)
Panko bread crumbs

Steps:

  • 1. Mix crabmeat with herbs, peppers, salt, pepper, tabasco. Toss gently to combine. 2. Add regular bread crumbs and toss again. 3. Add mayo, dijon, and combine. 4. Place thin layer of Panko bread crumbs into bottom of mold. 5. Fill mold with crab cake mix (just below rim). 6. Sprinkle top with more Panko bread crumbs. 7. Pack crab cake mix firmly into the mold and gently push crab cake from mold. 8. In a Saute pan, Saute until golden-brown on top and bottom. 9. Finish in 425 degree oven for about 6min.

1 pound jumbo lump or backfin lump crabmeat, fresh or pasteurized
20 saltine crackers, crushed into crumbs (65 grams or just less than 1 cup of crumbs)
1 tablespoon minced chives or parsley, optional
1/4 cup (55 grams or 2 ounces) mayonnaise, try our homemade mayonnaise recipe
1 large egg
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1/4 cup (60 ml) canola oil, or mild flavored oil
1 tablespoon butter
Lemon wedges, for serving

Steps:

  • Prepare Crab Cakes: Drain the crabmeat, if necessary, and pick through it for any rogue shells. Toss the cracker crumbs, herbs (optional) and crabmeat together, using your fingers to gently break apart some of the lumps. Whisk the mayonnaise, egg, mustard and Worcestershire sauce together then stir into the crab mixture until mixed. It will look somewhat loose. Cover with plastic wrap and refrigerate for 1 to 3 hours. Scoop the crab mixture into six 1/2-cup mounds and lightly pack into 6 patties, about 1 1/2 inches thick. Cook the crab cakes -- our method for pan-searing and broiling are below. How to Cook Pan-Seared Crab Cakes: In a 12-inch nonstick or cast iron skillet, heat the oil over medium heat. When the oil shimmers, add the crab cakes to the pan. Cook until the underside of the cakes are dark golden brown, 4 to 6 minutes. Carefully flip the cakes, reduce the heat to medium-low, and add the butter. Continue cooking until the second side is well browned, 4 to 6 minutes.
