Baked Meatballs image

This is a great, versatile make-ahead recipe. I often double the batch and freeze dinner-sized portions to use later in spaghetti sauce, Swedish meatballs, and bbq meatball subs. They can also be made smaller for appetizers.

Number Of Ingredients 12

1 lb ground beef
1 lb pork sausage
2 eggs
2 clove garlic, minced
1 medium onion, chopped fine
1 c bread crumbs, seasoned
1/4 c parmesan, finely grated
2 Tbsp parsley flakes
2 Tbsp basil, dried
1/4 c milk
1/2 tsp salt
fresh ground pepper

Steps:

  • 1. Preheat oven to 400 degrees. Line baking dishes with aluminum foil (optional, for easier clean-up).
  • 2. Mix all ingredients together in a large bowl. Use a small cookie scoop to make balls of the meat mixture. Place meatballs 1 inch apart in baking dishes.
  • 3. Bake approx 15 minutes, or until browned (depending, of course, on the size of the meatballs.
  • 4. The meatballs will peel right off the foil if you let them cool a minute or two. These can be frozen in an airtight container for up to 3 months.
