Cumin Chicken with Curry Tacos or Tortillas image

8 ounces Ingredients For 2 used about 1/3-1/2 of spices and 1 TBS curry for hummus mix CHICKEN 1/4 cup extra-virgin olive oil1 tablespoon rosemary leaves1 teaspoon chopped thyme1 teaspoon chopped oregano1 teaspoon ground cumin1 1/2 pounds skinless, boneless chicken breast halves, cut into 1 1/2-inch cubes WF Organic Tacos salt to taste Tomatoes, lettuce , zucchini, avocado on side to add if desired

Steps:

  • Step 1 In a large bowl, mix the olive oil with the rosemary, thyme, oregano and ground cumin. Add the chicken and toss well. Cover and refrigerate for at least 2 hours or overnight. Make hummus mix with about 5 tbs hummus, Two tbs non fat yogurt and one tablespoon curry and refrigerate up to 24 hours.
