1 1/2 pounds ground beef chuck
Four 1/2-inch cubes pepper jack cheese (about 1 ounce total)
Kosher salt and freshly ground black pepper
1/2 tablespoon vegetable oil
4 slices Cheddar cheese (about 2 ounces)
4 hamburger buns
Ketchup, mustard and/or mayonnaise, for spreading (optional)
Lettuce leaves, sliced tomato and/or sliced red onion, for topping
Pickles, for serving (optional)

Steps:

  • Divide the beef into 4 equal portions. Press a cube of pepper jack into the center of each and shape the meat around the cheese; form into patties, about 4 inches wide and 3/4 inch thick. Season the patties with salt and pepper.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the patties and cook until browned on the bottom, about 4 minutes. Flip the patties and top each with a slice of Cheddar; cook 4 to 5 more minutes.
  • Meanwhile, toast the hamburger buns and spread with ketchup, mustard and/or mayonnaise. Fill with the burgers and top with lettuce, tomato and/or red onion. Serve with pickles.

These quarter-pounders are lightened up with 90-percent lean beef and a mere half-ounce of Cheddar, and they're served on wholesome whole wheat English muffins.

Canola oil or nonstick grilling cooking spray, for oiling the grates
1 medium red onion, thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons ketchup
2 tablespoons yellow mustard
4 whole wheat English muffins, split
1 medium ripe tomato, cored and cut into 4 thick slices
1 pound 90-percent lean ground beef
2 ounces 50-percent reduced-fat sharp Cheddar, grated (about 1/2 cup)
Pickles, for serving, optional

Steps:

  • Heat a grill to medium-high direct heat and lightly oil the grates using a paper towel soaked in canola oil or nonstick grilling cooking spray.
  • Spread a 16-inch-long piece of nonstick aluminum foil on a cutting board (or mist a piece of regular aluminum foil with nonstick cooking spray). Top with the onions, 1/4 teaspoon each salt and pepper and 1 tablespoon water. Bring two sides of the foil together, fold over twice to create a seal and then seal the remaining two ends. Put on the grill and cook for 12 minutes, flipping once. The onions should be tender with only a bit of charring. Carefully open the top of the foil to let all the steam out and continue to cook the onions, tossing, until browned and lightly charred, 3 minutes longer. Remove from the heat.
  • While the onions cook, mix the ketchup and mustard together in a small bowl. Season with pepper and set aside.
  • Lightly toast the English muffins on the grill and place one top and bottom on each of 4 plates. Spread some of the ketchup sauce on the bottom half of each muffin and top with a slice of tomato.
  • Divide the beef into 4 patties about 4 inches in diameter and just under 1/2-inch thick. Sprinkle with a total of 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the burgers on the grill. Cook until the edges of the burgers are browning, 3 to 5 minutes, and then flip. Brush the burgers with the remaining ketchup sauce and evenly top with the shredded cheese. Cover the burgers with the grill lid or a large heatproof bowl and continue to cook until the cheese has melted and the burgers are still a bit pink on the inside, about 3 minutes more.
  • Put one burger on top of the assembled muffin bottom and top with some of the grilled onions and the top of the muffin. Serve with pickles if desired.

2 tablespoons Montreal steak seasoning, such as McCormick® Grill Mates® Montreal Steak Seasoning
2 pounds 80 percent lean ground beef (preferably a mix of chuck and brisket)
8 ounces sliced medium or sharp white Cheddar
1/4 cup mayonnaise
1/4 cup yellow mustard, such as French's® Classic Yellow Mustard
8 long pickle slices (from a pickle that's been cut lengthwise), plus 2 tablespoons brine
One 10-inch round loaf soft bread, such as a boule, cut in half horizontally
Olive oil, for the grill grates and bread
Sea salt and freshly ground black pepper
1 large heirloom tomato, thinly sliced
1 small red onion, thinly sliced
8 slices bacon, cooked
2 cups shredded iceberg lettuce

Steps:

  • Line a 9-inch round cake pan with aluminum foil. Sprinkle with 2 teaspoons of the Montreal steak seasoning. Press half of the ground beef into the cake pan. Layer the cheese in the middle, leaving a 1/2- to 1-inch border around the side. Sprinkle with another 2 teaspoons of the Montreal steak seasoning. Top with the remaining ground beef in an even layer and press to seal in the cheese. Sprinkle with the remaining 2 teaspoons Montreal steak seasoning. Lift out the burger from the cake pan using the foil and flatten it with your hands to about 11 inches in diameter. Refrigerate until ready to cook; the burger can be assembled up to 2 hours in advance.
  • Whisk together the mayonnaise, mustard and pickle brine in a small bowl until smooth. Cover and refrigerate.
  • Remove most of the soft insides from the top of the loaf of bread to make it fairly hollow. Reserve for another use.
  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.) If your grill has a thermometer, aim to keep the temperature at about 350 degrees F throughout grilling.
  • Oil the grill grates. Hold the burger on the foil bottom and flip it onto the indirect-heat side of the grill; peel off the foil. Cook until the sides of the burger are cooked and it feels firm when you lift it with a spatula, 8 to 10 minutes depending on the heat of your grill. Using 2 spatulas, carefully flip the burger (if you have a large fish spatula, use it here); try not to create any holes through which the cheese could escape. Cover the grill and cook until the burger is cooked through and the cheese is melted, 5 to 8 minutes more. (If you would like more char on the burger, move it to the direct-heat side of the grill for 1 to 2 minutes per side.) Transfer to a plate.
  • Brush the cut sides of the bread with olive oil and sprinkle with salt and pepper. Grill on the direct-heat side of the grill until the bread has grill marks and is nicely toasted, about 3 minutes.
  • Put the bottom half of the bread on a large serving platter or cutting board. Spread with half the mustard sauce. Put the burger on top and top with the tomatoes, onions, pickles and bacon. Spread the top of the bread with the remaining mustard sauce and fill with the lettuce. Put the top on the burger and cut into 8 wedges.

1 tablespoon Worcestershire sauce
¾ teaspoon garlic salt
1 teaspoon black pepper
4 slices American cheese (such as Kraft®)
4 hamburger buns, split

Steps:

  • Combine ground beef, Worcestershire sauce, garlic salt, and pepper in a large bowl; mix well. Form 8, thin patties from the beef. Each patty should be slightly larger than a slice of cheese.
  • Cut each slice of American cheese into 4 equal pieces; stack the pieces. Sandwich one stack of cheese between 2 ground beef patties. Tightly pinch edges together tightly seal the cheese within the meat. Repeat with the remaining cheese and patties.
  • Preheat a cast-iron or other heavy bottomed skillet over medium heat. Cook burgers until well browned, about 4 minutes. It is common for burgers to puff up due to steam from the melting cheese. Turn burgers and prick the top of each to allow steam to escape; cook until browned on the outside and no longer pink on the inside; about 4 minutes. Serve on hamburger buns.

These are a favorite in my house! They are great grilled or pan fried. They are full of cheesy goodness!

2 lb ground chuck
2 Tbsp worcestershire sauce
1 tsp garlic salt
1 tsp black pepper
5 slice american cheese ( like kraft)
5 hamburger buns

Steps:

  • 1. Combine first 4 ingredients together in a bowl.
  • 2. make 10 evenly sized patties
  • 3. cut each piece of cheese into 4 even squares. (I just fold mine over twice.) Put the cheese stacks in the middles of one patty and then stack the other patty on top and seal the two patties together. Repeat with the remaining patties.
  • 4. You can cook this on the stove top in a skillet or on the grill. On the stove top cook on medium heat until browned. On the grill cook on med-low. Cook till browned. If the burgers start to puff up while cooking just insert a tooth pick on the top of the puff.
  • 5. Serve on hamburger buns. This is also good served with sauteed mushrooms and onions on top!
