1 1/2 pounds chicken breast (cut into slider size pieces)
3/4 cups buttermilk
1 1/2 cups sweet tea
1 tablespoon kosher salt
3 cups corn flake crumbs
3 tablespoons whole wheat flour
2 teaspoons seasoned salt
1/4 -1/2 teaspoon cayenne pepper
a good pinch of pepper

2 large white onions (halved and then sliced very thin)
2 cups buttermilk
2 cups flour
1 tablespoon kosher salt
pinch of pepper + cayenne pepper
oil (for frying)
2 cups shredded green cabbage or cabbage slaw

2 jalapeños (seeded + chopped)
1/4 cup fresh parsley or cilantro (chopped)
1/2 cup sharp cheddar cheese (diced)
1 lemon (juiced)
2 teaspoons rice vinegar
pinch of salt and pepper
1/3 cup honey (warmed)
1 chipotle chili (minced)

Steps:

  • Add the chicken to a large bowl and pour the buttermilk, sweet tea and salt over the chicken. Toss well, cover and refrigerate overnight.
  • The next day preheat the oven to 475 degrees F. Line a baking sheet with a silpat, foil or parchment paper and spray or brush with olive oil.
  • Add the corn flakes crumbs, flour, seasoned salt, cayenne and pepper to medium sized bowl. Stir to combine.
  • Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Lightly spray the chicken with cooking spray or a mist of olive oil. Drizzle the 4 tablespoons melted butter over the chicken.
  • Bake for 10-12 minutes, then reduce the heat to 400 degrees F. Bake for 10-12 minutes more, then flip the chicken over and gently spray with olive oil. Place back in oven for another 15-20 minutes or until the chicken is cooked through and the juices run clean. Serve with the slaw, crispy onions and chipotle cheddar (all below).
  • Add the sliced onions to a large bowl and pour the buttermilk over top. Use your hand to submerge the onions in the buttermilk. Allow the onions to sit in the buttermilk 30 minutes to 1 hour.
  • Meanwhile add the flour, salt, pinch of cayenne and pinch of pepper to a bowl and give it a good toss.
  • When ready to fry the onions heat a large pot of oil until it reaches 375 degrees F. or until a pinch of flour sizzles when sprinkled over the pot.
  • Remove a handful of onions from the buttermilk and place them into the flour mixture. Coat the onions in the flour mixture, and then tap them on the inside of the bowl to shake off the excess.
  • Carefully drop the onions into the hot oil. With a spoon, fiddle with them a bit just to break them up. Watch the onions closely as they cook quick! After about 1 or 2 minutes, they should be golden brown, remove from the oil and place on a paper towel-lined plate. Repeat with the remaining onion slices. Onions are best served right away, but can be reheated in a 300 degree oven for 5 minutes, watching them closely and making sure they do not burn.
  • In a bowl toss together the grilled corn, shredded cabbage, jalapeños, chopped parsley or cilantro, lemon juice, rice vinegar, salt and pepper. Cover and place in the fridge until ready to serve. Just before serving stir in the cheddar cheese.
  • In a bowl mix together honey and chipotle pepper. Serve drizzled over the chicken.
  • Place a piece of warm chicken on the bottom of each slider bun, drizzle with the chipotle honey. Top with slaw and crispy onions. SERVE!

1 pound ground beef
2 jalapenos, seeded and diced fine, plus whole or sliced, for serving
2 shallots, chopped fine
1/2 cup panko bread crumbs
1/4 cup heavy cream
1/4 cup grated spicy Monterey Jack cheese
Pinch garlic powder
Kosher salt
1/2 teaspoon cracked black pepper, plus pinch
1 cup creme fraiche
1/4 cup store-bought salsa verde
12 mini dinner rolls

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, add ground beef, jalapenos, shallots, panko, heavy cream, cheese, garlic powder, 1 tablespoon salt, and 1/2 teaspoon black pepper. Mix together well. Form into small patties and place in the oven for 12 to 15 minutes.
  • In a separate bowl, add creme fraiche, salsa verde, pinch of salt and pepper and mix together. Refrigerate until ready to serve with your sliders.
  • Lightly spread creme fraiche on both sides of buns. Place burgers in middle and pick it with a jalapeno.

1 large yellow onion, peeled
2 jalapeños
1 1/2 cups buttermilk
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
Plenty of freshly ground black pepper
Canola oil, for frying

Steps:

  • Cut the onion in half and then into wedges. Separate the onion layers and add them to a bowl. Slice the jalapeños (seeds and all if you like things spicy) into very thin rounds and add to the bowl. Pour over the buttermilk and stir to combine. Let sit while you get the remaining ingredients together.
  • Combine the flour, salt and a generous pinch of black pepper in a separate bowl, then set aside.
  • Add 1 inch of oil to a large, heavy-bottom skillet. Heat to 375 degrees F or until a pinch of the flour sizzles when added to the skillet.
  • Using tongs, remove a handful of onions and jalapeños from the buttermilk and immediately dunk into the flour mixture, thoroughly coating them. Tap them on the inside of the bowl to shake off the excess.
  • Carefully add the coated onions and jalapeños to the hot oil, breaking them up with a spoon, so they don't stick together. Cook until golden brown, 1 to 2 minutes.
  • Remove with a slotted spoon and drain on a paper-towel lined plate. Repeat with the remaining onions and jalapeños.
  • Serve immediately.

6 large jalapeno peppers
Oil for deep-fat frying
1 cup refrigerated fully cooked barbecued shredded pork (about 8 ounces)
1 cup shredded mild cheddar cheese
1/4 cup barbecue sauce
1 cup all-purpose flour
1 cup cornstarch
3 teaspoons salt
3 teaspoons paprika
12 ounces beer
White barbecue sauce, optional

  • Cut off stem end of jalapenos. Using the tip of a small knife, remove seeds and membrane. In a large saucepan, bring 8 cups water to a boil. Add jalapenos; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove and immediately drop into ice water. Drain and pat completely dry., In an electric skillet or deep fryer, heat oil to 375°. In a small bowl, mix pork, cheese and barbecue sauce; spoon into jalapenos. In another bowl, whisk flour, cornstarch, salt and paprika; stir in beer just until moistened., Using tongs, dip stuffed jalapenos into batter; fry in batches until golden brown, 3-4 minutes. Drain on paper towels. If desired, serve with white barbecue sauce.

1 tablespoon olive oil
½ small onion, diced
¼ pound extra-lean ground beef
2 tablespoons water
1 ½ teaspoons taco seasoning
½ cup grated Chihuahua cheese
5 large jalapeno peppers
¼ cup lukewarm water
2 tablespoons white sugar
2 teaspoons active dry yeast
1 ½ cups all-purpose flour
2 small eggs, beaten, divided
2 tablespoons milk
1 tablespoon unsalted butter, melted
40 toothpicks

Steps:

  • Heat oil in a skillet over medium heat. Add onion; cook and stir until soft, about 5 minutes. Add beef; cook, stirring to break into very small pieces, until browned, about 5 minutes. Drain any excess grease. Stir in 2 tablespoons water and taco seasoning; cook until water evaporates, about 5 minutes.
  • Let beef mixture cool completely, about 10 minutes. Stir in Chihuahua cheese.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut tops off jalapeno peppers and scoop out seeds and ribs. Stuff with beef mixture, using the thick end of a chopstick to pack in mixture. Stack upright against the edge of a casserole dish.
  • Bake in the preheated oven until jalapeno peppers are soft, about 45 minutes.
  • Refrigerate jalapeno peppers until stuffing firms up, 1 to 2 hours.
  • Combine 1/4 cup water, sugar, and yeast in a small bowl. Let stand until foamy, about 5 minutes.
  • Combine flour, 1 egg, milk, and butter in a large bowl. Pour in yeast mixture; mix until well combined. Turn dough onto a lightly floured surface and knead until mostly smooth but slightly sticky, about 5 minutes.
  • Form dough into a ball and place in a lightly greased bowl. Cover with a towel and let rise, about 20 minutes.
  • Line a baking sheet with parchment paper. Turn dough out onto a floured surface; push down to knock out air. Form into 1-inch buns and arrange 1 inch apart on the baking sheet. Cover with the towel and let rise until puffy, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Brush tops of buns with beaten egg.
  • Bake buns in the preheated oven until tops are golden brown, 6 to 7 minutes. Transfer to a cooling rack and let cool, about 10 minutes.
  • Reduce oven temperature to 200 degrees F (95 degrees C).
  • Slice cold jalapeno peppers into 1/4-inch thick rings. Cut buns in half. Sandwich jalapeno pepper rings in the buns and secure with a toothpick. Arrange sliders in a casserole dish. Cover with aluminum foil.
  • Bake sliders in the preheated oven until warmed through, about 10 minutes.
