IRISH BACON AND CABBAGE SOUP

This is a wonderfully simple chunky soup. I use good quality Irish back bacon but if you can't get this, it tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.

½ pound Irish bacon, diced
2 large potatoes, peeled and cubed
1 (15 ounce) can diced tomatoes with juice
1 cup chicken stock, or as needed
Salt and black pepper to taste
2 cups thinly sliced dark green Savoy cabbage leaves

Steps:

  • Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
  • Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
  • Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.

2 quarts reserved corned beef cooking liquid
1/2 pound shredded, cooked corned beef
1 large potato, diced medium
1 small onion, diced medium
1/4 head cabbage, diced medium
1 or 2 carrots, diced medium
4 tablespoons cornstarch
4 tablespoons cold water
1 pint heavy cream
chopped parsley
4 tablespoons unsalted butter
3 ounces beer (optional)
salt and pepper to taste

Steps:

  • 1. Combine first 6 ingredients in large pot. Bring to boil, reduce heat and cook until vegetables are tender. Mix cornstarch and water together to make a paste. Bring the soup back to a boil, add the paste with a whisk, until the soup is thick. Now simmer, then add cream, butter, salt, pepper and beer. Garnish with chopped parsley.

1 large onion, chopped
3 celery ribs, chopped
3 garlic cloves, minced
1/2 head cabbage, chopped
4 carrots, sliced
1 lb potato, diced
1/3 cup pearl barley
1 bay leaf
1 teaspoon thyme
1/2 teaspoon caraway seed
1/2 teaspoon rosemary
1/2 teaspoon black pepper
6 -8 cups vegetable broth
28 ounces great northern beans
14 ounces diced tomatoes
1 tablespoon chopped parsley
salt, to taste

Steps:

  • Place the vegetables, seasonings, and barley into the crockpot. Do not add the beans, tomatoes, or parsley.
  • Add enough vegetable broth to just cover the vegetables (start with 6 cups and add more as needed). Cover and cook on low heat for 7 hours.
  • Add beans, tomatoes, parsley, and salt to taste. Check seasonings and add more herbs if necessary. Cover and cook for another hour.

This is a favorite recipe from my childhood, one my family loves!

1 1/2-2 lb cubed ham with broken ham bone
4 1/2-5 qt water
2 Tbsp chicken base
4 stalk(s) chopped celery
2-3 lb red potato chunks
1 large head of cabbage chopped
2 lb frozen cut green beans
3/4 tsp black pepper
2 tsp onion powder
2 clove garlic
salt to taste if needed

Steps:

  • 1. Add water, ham, broken bone, base, and seasonings to large soup pot. Boil for 30-45 minutes to loosen ham bits and marrow from bone.
  • 2. Add celery, green beans and potatoes, boil til potatoes are tender.
  • 3. Add cabbage, and reduce heat, cooking until cabbage is tender crisp and a light translucent green.
  • 4. Serve with biscuits or bread.

This soup is new to our family but the first time we had it, we knew we were going to have it again. Good winter soup.

2 medium potatoes peeled and diced
1 medium onion chopped
2 carrots, chopped
1 medium cabbage, shredded
3 c water
1/2 tsp thyme, dried
1 bay leaf
1 1/2 tsp salt
1 1/2 tsp pepper
1 half and half

Steps:

  • 1. Add potatoes, onion, carrots and cabbage to boiling water. (parboil the cabbage separately for about 10 minutes if you prefer a milder cabbage flavor.) Add thyme,bay leaf, salt and pepper.
  • 2. Bring to a boil and turn down to simmer for about 45 minutes or until vegetables are tender but not mushy.
  • 3. Add half and half: heat but do not boil. Serve hot with crusty bread or rolls. Enjoy
