IRAQI DATE SWEETMEAT (HOLWAH TAMAR) (GLUTEN FREE)
A delicious sweet snack which would go well with tea or coffee. Originally POSTED FOR RAMADAN TAG, yet I have since tried it and enjoyed. Out of The Complete Middle East Cookbook By Tess Mallos.

Steps:
- Chop dates roughly and place in a heavy pan with the ghee.
- Cook over medium heat, stirring often, until dates soften, and are combined with the ghee.
- spread half the date mixture in a 9 in (23 cm) square pan.
- Sprinkle walnut pieces over the dates, pressing them in lightly. Place remaining date mixture on top, spreading it evenly.
- Sprinkle evenly with toasted sesame seeds, pressing them on lightly.
- Leave until cool and cut into small squares or diamond shapes.
- Store in a sealed container and serve as a sweetmeat.

WONDERFUL IRAQI SHORBA (SOUP) (GLUTEN FREE)
Definatly 5 stars. Perfect for Ramadan after iftar and prayers. I don't not measure the amounts of each ingredient so they are all approximate to be added to personal taste. This is a version of Iraqi Shorba originally found on http://www.geocities.com/umhajar/phood1.html in combination with Recipe #154729.

Steps:
- Fry onions in olive oil over medium heat until they are transparent.
- Add pierced whole loomi, carrot and potato dice and cook for a further 7 minutes.
- Add garlic, sea salt, freshly ground black pepper, and ground cumin.
- Add the tomato, tomato paste, chicken stock & cilantro.
- Cook until vegetables are almost tender, add red lentils and cook for an additional 10 minutes.
- Adjust salt to taste.
- Add broken up vermicelli noodles and cook until done (not mushy).
- Squeeze the lemon into the soup or on individual servings.
- Enjoy!

Steps:
- Preheat Oven to 350°F.
- Mix and cook filling ingredients over low heat until semi thick.
- Cool.
- Mix all dough ingredients together and press ¾ of mixture into bottom of greased 9x9inch pan.
- Spread the filling over top.
- Sprinkle the rest of the dough mixture over filling.
- Bake in preheated oven until top is golden (approx. 25 minutes).
- Cool & cut into squares.
- Enjoy.

Steps:
- Crust: Preheat oven to 350*.
- Grease a 9x12 inch baking pan.
- Cream butter and brown sugar together.
- Add flour and mix well.
- Pat mixture into the prepared baking pan.
- Bake for 15 to 20 minutes.
- Remove from oven.
- Topping: Mix sugar and eggs.
- Add flour; stir well.
- Fold in walnuts and coconut.
- Pour topping onto crust.
- Bake for 20 to 25 minutes longer, until topping is set.
- Cool in pan and cut into squares.
- Makes 30 squares.
