Inside-Out Grilled Cheese Sandwich image

In my humble opinion, this crispy, crunchy, cheesy masterpiece is the ultimate grilled cheese sandwich. Make sure you follow some basic rules for this to work properly. Only use airy, nutritionally insignificant white bread. Use a nice sharp cheddar and be sure to use a quality non-stick pan over medium to medium-low heat.

2 tablespoons butter, divided
2 slices white bread
½ cup shredded extra sharp Cheddar cheese, divided

Steps:

  • Melt 1 1/2 tablespoons butter in a nonstick skillet over medium-low heat. Place bread slices in the skillet on top of the melted butter.
  • Spread about 1/4 cup Cheddar cheese on one slice of bread; place the other slice of bread, butter-side up, on top of the cheese. Spread about 2 tablespoons of cheese on top of the sandwich.
  • Melt remaining 1/2 tablespoon butter in the skillet next to the sandwich. Flip the sandwich onto the melted butter so that the cheese-side is facing down. Spread remaining cheese on top of the sandwich. Cook sandwich until cheese on the bottom is crispy and caramelized, 3 to 4 minutes. Flip sandwich and cook until cheese is crispy and caramelized on the other side, another 3 to 4 minutes.

Inside-Out Bacon Cheeseburgers with Grilled Green Onion Mayo image

5 slices bacon, chopped
4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce

Steps:

  • Preheat grill pan over high heat.
  • In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
  • Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
  • Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.
  • Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.
  • Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.

5 ounces shredded Cheddar-jack cheese
2 slices sourdough bread
2 ounces guacamole
2 ounces cooked black beans
1 tablespoon sriracha

Steps:

  • Place 4 ounces shredded cheese directly on a hot flat top grill or frying pan. Place bread on top and let cheese melt and get crispy. Add remaining ounce cheese to the tops of the bread and let melt.
  • Remove from grill. Spread guac on one half of the melty side of the sandwich and place beans on the other. Drizzle sriracha evenly over the guac. Mash the sandwich together so that the crispy cheese is on the outside. Slice and enjoy!

Ah, the juicy burgers of summer cookouts! They taste so good -- but are so often huge fat and calorie bombs. The sad truth is that most homemade burgers have well over 800 calories. But it is possible to pack all that savory meaty flavor, oozing melting cheese and even bacon into a big, satisfying burger without blowing your dietary allotment for the entire day.

3 tablespoons canola mayonnaise, such as Hellmann's
2 tablespoons ketchup
3 slices center-cut bacon
1 1/2 pounds 93 percent lean ground beef
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
2 ounces shredded reduced-fat sharp Cheddar
4 potato rolls or hamburger buns
4 small lettuce leaves
Four 1/2-inch thick tomato slices
1/2 cup thinly sliced red onion

Steps:

  • Prepare a grill for cooking over medium heat.
  • Combine the mayonnaise and ketchup in a small bowl and set aside.
  • Heat a medium skillet over medium heat; add the bacon and cook, turning once, until crisp, 7 to 8 minutes. Transfer to a plate covered with a paper towel and drain; chop.
  • Gently combine the beef, garlic powder and 1/4 teaspoon each salt and pepper in a bowl. Divide the mixture into 8 portions and form each into a 3 1/2-inch-diameter patty; put 4 patties on a work surface. Toss the bacon with the cheese and spoon a quarter of the mixture on top of each of the 4 patties, keeping the edges clear. Place the remaining patties over the cheese and pinch the perimeter to seal the filling in.
  • Grill the patties with the lid closed, turning once, 9 to 10 minutes for medium doneness. To assemble, put the bottom half of each roll on a plate and top with a lettuce leaf, tomato slice and patty. Spoon the mayonnaise mixture over the patties, then top with the onion slices and the remaining roll halves. Serve immediately.
