EASY TACO PIZZA

Convenient prebaked crust makes this tasty taco pizza as easy as can be. It's a great recipe, especially if you have teenagers. I keep the ingredients on hand so that we can whip up this filling meal anytime. -Mary Cass, Baltimore, Maryland

Yield 2 pizzas (8 slices each).

Number Of Ingredients 9

1 pound ground beef
1 envelope taco seasoning
1 cup water
2 prebaked 12-inch pizza crusts
1 can (16 ounces) refried beans
3/4 cup salsa
2 cups coarsely crushed tortilla chips
2 cups shredded cheddar cheese
Optional: shredded lettuce and chopped tomatoes

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes; set aside. , Place crusts on ungreased pizza pans or baking sheets. Combine beans and salsa; spread over crusts. Top with beef mixture, chips and cheese. , Bake until heated through and cheese is melted, 13-16 minutes. If desired, sprinkle with lettuce and tomatoes.

I found this recipe in an October issue of Quick & Simple magazine and I thought I would put it here for all to enjoy. I did however change a couple of steps and used taco seasoning instead of chili seasoning since that was the only thing I had. Submitted to "ZAAR" on October 9th,2007

1/2 lb lean ground beef
1 teaspoon taco seasoning (I used Mucho Gusto Taco Seasoning Mix)
2 (12 inch) flour tortillas
6 tablespoons salsa, divided (I used mild)
1 roma tomato, diced
1/2 cup frozen corn, thawed
1/2 small red onion, diced
1 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 375°F.
  • While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.
  • Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.
  • Lightly spray two medium sized cookie sheets with cooking spray.
  • Place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.
  • Bake tortillas until lightly browned, about 6 to 8 minutes.
  • Remove tortillas from oven and evenly spread 1 1/2 tablespoons of salsa on each.
  • Divide ground beef, corn, onions, and tomatoes evenly over each tortilla.
  • Divide cheese evenly over the top of ground beef mixture.
  • Bake for 10 to 12 minutes or until cheese is melted.

MEXICAN MINI-PIZZAS



Mexican Mini-Pizzas image

1 pound ball store-bought pizza dough
Olive oil, for brushing pans
4 tomatoes, thinly sliced
12 ounces Mexican chorizo, casing removed, cooked and crumbled
1 /2 to 2 cups shredded mozzarella or Monterrey Jack cheese
1 teaspoon dried oregano

Steps:

  • Cook the chorizo in a medium-size skillet over medium heat. Drain on paper towels.
  • Preheat the oven to 375 degrees F.
  • Put the dough out onto a well-floured surface. Divide the dough into 4 equal pieces. Roll into 4inch circles, using a rolling pin or stretching it into circles by hand. Arrange the circles on 2 baking sheets lightly brushed with oil.
  • Top each pizza with tomato slices and crumbled cooked chorizo. Top with shredded cheese and sprinkle with dried oregano.
  • Bake until the dough is golden brown and cheese is bubbly, about 20 minutes.

JIMMY'S MEXICAN PIZZA

Jimmy's specially seasoned ground beef, refried beans, salsa and cheese layered in a deep dish style. A tasty and easy Mexican-style pizza with a flour tortilla crust I whipped up because I had the stuff to make it!!

½ pound ground beef
1 medium onion, diced
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
1 (16 ounce) can refried beans
4 (10 inch) flour tortillas
½ cup salsa
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
2 green onions, chopped
2 roma (plum) tomatoes, diced
¼ cup thinly sliced jalapeno pepper
¼ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
  • Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
  • Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
  • Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
  • Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces.
