2 cinnamon sticks (3 inches)
1 piece fresh gingerroot (about 1 inch), thinly sliced
1 teaspoon whole allspice
1 teaspoon whole cloves
1/2 teaspoon cardamom pods, crushed
2 quarts apple cider or juice
Rum, optional

Steps:

  • Place first five ingredients on a double thickness of cheesecloth. Gather corners of cloth to enclose spice mixture; tie securely with string., Place cider and spice bag in a 3-qt. slow cooker. Cook, covered, to allow flavors to blend, 2-3 hours. Discard spice bag. If desired, stir in rum.

20 cinnamon sticks (3 inches)
1/3 cup whole cloves
2 medium lemons

Steps:

  • In a 5- or 6-qt. slow cooker combine apple juice and cinnamon sticks. Place cloves on a double thickness of cheesecloth or a coffee filter. Gather corners of cloth to enclose cloves; tie securely with string. Add to slow cooker. , Using a citrus zester, remove zest from lemons in long narrow strips. Cut lemons crosswise in half; squeeze juice from lemons. Stir zest and juice into slow cooker., Cook, covered, on low until heated through, 3-4 hours.

4 cups fresh apple cider
4 whole black peppercorns
6 or 7 (2 to 3-inch) cinnamon sticks
3 whole dried cloves
1 star anise
1 navel orange
Good bourbon, such as Maker's Mark (optional)
1 crisp red apple

Steps:

  • Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
  • Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
  • Serve hot with a cinnamon stick in each glass for stirring.

2 tablespoons honey
Juice from 1 large lemon
1 1/2 cups hot water
2 cinnamon sticks
10 to 12 thin slices Granny Smith apple

  • Make the toddies: In a small pitcher, combine the rum, honey and lemon juice. Add the hot water and stir until the honey dissolves.
