LOBSTER SALAD CANAPES

1 (1 1/2-pound) live lobster
2 thick seedless cucumbers (usually plastic-wrapped; at least 1 3/4 inches in diameter), cut into 36 (1/4-inch-thick) slices
2 tablespoons mayonnaise
2 to 3 teaspoons fresh lime juice
1 1/2 teaspoons minced fresh jalapeño chile (including seeds)
1/4 teaspoon salt
1/3 cup finely diced peeled mango
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
2 tablespoons finely chopped fresh cilantro
Garnish: thinly sliced fresh cilantro
Special Equipment
a 1 1/2-inch scalloped round cookie cutter (optional)

Steps:

  • Plunge lobster headfirst into a 6- to 8-quart pot of boiling salted water. Cook lobster, partially covered, over moderately high heat 9 minutes from time it enters water, then transfer with tongs to sink to cool.
  • While lobster is cooling, cut each cucumber slice with scalloped cutter (if using), discarding trimmings. Whisk together mayonnaise, lime juice (to taste), jalapeño, salt, and a pinch of pepper.
  • When lobster is cool, remove meat from claws, joints, and tail, discarding tomalley, roe, and shells. Cut meat into 1/4-inch pieces. Add lobster, mango, celery, onion, and cilantro to dressing and toss well.
  • Top each cucumber round with 1 rounded teaspoon lobster salad.

I made these for an Asian themed party at my house, and they were delish! Crispy and full of flavor, these are sure to be a treat at your next social event!

Number Of Ingredients 10

2 (8 ounce) packages cream cheese
1 bunch green onion, use all but the white part, finely chopped
2 tablespoons lemon juice
2 tablespoons garlic juice, I used some from a jar of chopped garlic in juice
8 ounces lobsters or 8 ounces imitation lobster meat, finely chopped
30 wonton wrappers
1 egg, mixed with
2 tablespoons water
canola oil, to deep fry won tons
Chinese duck sauce or plum sauce, for dipping

Steps:

  • Put your cream cheese in a glass dish and microwave for 45 secs.
  • Chop your green onions finely, and add to cream cheese.
  • Add your lemon and garlic juice, and mix well.
  • Chop your lobster finely, or use the blender. Add to cream cheese mixture, and mix in well.
  • Put 30 won ton wrappers onto a lg. flat baking pan, I used a cookie sheet.
  • Place a teaspoonful of mixture into the center of each won ton wrapper.
  • Mix the egg and 2 T. of water together well. With 2 fingers, dip into the egg wash then rub around the edge of each won ton.
  • Taking the bottom right tip of the won ton, bring it up to meet the top left tip, and press around the edges to make a seal, so the cream cheese mixture doesn't come out when deep frying.
  • When all 30 won tons are done, put in the refrigerator for at least 2 hours.
  • When ready to deep fry, heat your oil to 350 degrees F.
  • Turn on your oven to 200.
  • Drop 6 won tons in at a time and fry on one side, then flip and fry on the other. Place on a layer of 4 paper towels to absorb grease, then place in an oven proof dish, and put in oven to keep warm while the next batch is cooking.
  • Serve with Duck or Plum Sauce for dipping.

Hot Canapes With Prosciutto and Mozzarella image

This is a simple recipe for a great appetizer, especially before a hearty Italian meal or as a selection at a cocktail party. I threw it together because I love all of the ingredients on their own and they're amazing together.

4 white bread, slices crusts removed
16 thin slices prosciutto
4 small buffalo milk mozzarella cheese, cut in half
2 roma tomatoes, sliced
extra virgin olive oil, for brushing
salt
fresh flat-leaf parsley, chopped to garnish

Steps:

  • 1). Preheat the oven to 425.
  • 2). Cut each slice of bread in half.
  • 3). Lightly brush each half slice of bread with olive oil.
  • 4). Place 2 slices of prosciutto on each slice of brushed bread.
  • 5). Place a half piece of mozzarella atop the prosciutto.
  • 6). Place a tomato slice atop each piece of cheese and salt VERY LIGHTLY.
  • 7). Place canapes on a cookie sheet and bake in preheated oven approximately 5-7 minutes until the cheese has melted.
  • 8). Sprinkle parsley over canapes to garnish, place on serving tray and enjoy.
