5 slices white bread, crusts removed
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 small shallot, minced
2 tablespoons chopped fresh dill
1/2 cup freshly grated horseradish, grated on small holes of box grater
2 tablespoons olive oil, plus more for pan
6 six-ounce salmon fillets, skin removed

Steps:

  • Heat oven to 450 degrees; position rack 8 to 12 inches from heat. Place bread in the bowl of a food processor; pulse until coarsely chopped (1/4- to 1/8-inch pieces). Add 1 teaspoon salt, 1/4 teaspoon pepper, shallot, dill, horseradish, and 2 tablespoons olive oil. Pulse just until combined; set aside.
  • Rub bottom and sides of a 12-by-17-inch pan with olive oil. Place salmon on pan, spacing fillets 2 inches apart. Sprinkle salmon with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Pat mixture onto top of each fillet. Bake until just cooked through, 5 to 6 minutes. Turn heat to broil, and cook until tops are a rich golden brown, 1 to 2 minutes. Serve immediately.

POTATO AND HORSERADISH CRUSTED SALMON



Potato and Horseradish Crusted Salmon image

1 medium russet potato (about 9 ounces), peeled and cut into sixths
Kosher salt, as needed, plus 2 teaspoons
6 tablespoons unsalted butter, at room temperature
Four 6-ounce center-cut skinless salmon fillets
Freshly ground black pepper
3 tablespoons half-and-half
2 to 3 tablespoons drained prepared horseradish
Four 2-inch-long chive segments, for garnish

Steps:

  • Place a rack about 4 inches from the broiler element and preheat.
  • Put the potato in a medium saucepan, cover with water by 2 inches, and season generously with salt. Bring to a boil over high heat, lower the heat, and simmer until very tender, about 10 minutes. Drain and cool slightly.
  • Meanwhile, preheat a large skillet over medium-high heat. Add 2 tablespoons of the butter and heat. Season the salmon all over with salt and pepper. When the butter's foaming subsides, place the salmon, in the skillet and cook, turning once, until well-browned, about 1 1/2 minutes per side. Transfer to a baking sheet.
  • Put the cooked potatoes in a small bowl with the 2 teaspoons salt, 2 tablespoons butter, half-and-half, and horseradish and, using a fork, mash until fluffy. Season with pepper, to taste.
  • Melt the remaining 2 tablespoons butter in a small saucepan. Using your hands, press about 1/4 of the potato mixture onto the top of each salmon fillet, to form a thin crust. Lightly brush the potato with the melted butter.
  • Place the salmon under the broiler and cook until still slightly pinkish inside and the crusts are golden brown, about 10 minutes. Transfer to serving platter and garnish with the chive segments. Serve immediately.

2 tablespoons honey dijon mustard
1 tablespoon prepared horseradish
1 tablespoon olive oil
2 (6 ounce) skinless salmon fillet, about 1 inch thick
1/4 cup fresh lemon juice
2 tablespoons butter
salt & fresh ground pepper

Steps:

  • Preheat broiler.
  • Whisk mustard and horseradish to gether.
  • Heat oil in a medium oven proof skillet over medium high heat.
  • Add salmon and cook until begining to brown, about 2 minutes per side.
  • Spread mustard mixture over salmon and broil until mustard mixture begins to brown and salmon is cooked through, about 4 minutes.
  • Transfer to serving plate.
  • Add lemon juice and butter to skillet and whisk until butter is melted, season and spoon over salmon.

7 tablespoons butter
1/2 cup thinly sliced shallots
1/2 cup dry white wine
1 bay leaf
2 tablespoons minced fresh thyme
3 medium beets, peeled, halved crosswise, cut into 1/4-inch-thick slices
4 1/4 cups chicken stock or canned low-salt chicken broth
4 6-ounce salmon fillets
2/3 cup (Japanese breadcrumbs)*
1 1/2 tablespoons prepared horseradish, drained
12 baby carrots, peeled
12 brussels sprouts, all leaves separated
*Available in Asian markets and in the Asian foods section of some supermarkets.

Steps:

  • Melt 2 tablespoons butter in large saucepan over medium-high heat. Add shallots; sauté 5 minutes. Add wine, bay leaf and 1 tablespoon thyme; boil until mixture is reduced by half, about 5 minutes. Add beets and 4 cups stock; bring to boil. Reduce heat to medium-low and simmer, uncovered, until beets are tender and liquid is reduced to 1 cup, about 50 minutes.
  • Place salmon on rimmed baking sheet. Melt 1 tablespoon butter in small saucepan; brush over salmon. Sprinkle with salt and pepper. Mix panko, horseradish and 1 tablespoon thyme in small bowl. Season with salt and pepper. Press mixture onto salmon, dividing equally. (Can be made 6 hours ahead. Cover beet mixture and salmon separately; chill.)
  • Preheat oven to 475°F. Bake salmon just until cooked through and top is golden brown, about 8 minutes.
  • Meanwhile, melt 2 tablespoons butter in large skillet over medium heat. Add carrots and 1/4 cup stock; cover and simmer 2 minutes. Add brussels sprout leaves; cook, uncovered, until crisp-tender, about 5 minutes. Season with salt and pepper. Remove from heat.
  • Bring beet mixture to simmer in heavy medium saucepan. Add 2 tablespoons butter; stir just until melted. Spoon beet mixture into 4 shallow soup plates. Top with fish. Garnish with carrots and brussels sprouts.

8 new potatoes, halved
2 tablespoons prepared horseradish
1 cup chopped fresh parsley
1/2 teaspoon fresh lemon zest
2 tablespoons whole grain mustard
2 tablespoons minced fresh garlic, plus 1 tablespoon
1 cup Japanese-style bread crumbs (recommended: panko)
3 ounces extra-virgin olive oil, plus 1 ounce
4 to 6 Chinook salmon fillets, (recommended: pave cut 2 inches by 2 inches by 1 inch)
2 tablespoons canola oil
1 cup fish stock or clam juice
2 quarts mixed braising greens (chard, kale, mustard greens, and endive)
1 lemon, juiced

Steps:

  • Preheat the oven to 425 degrees F and coat a baking sheet with oil and sprinkle it with salt and pepper.
  • Place the potatoes, cut side down, on the tray and place in the preheated oven. Roast until just golden brown and just tender, about 20 to 25 minutes. Remove the potatoes from the oven and hold them in a warm place.
  • Mix the horseradish, parsley, lemon zest, mustard, and 2 tablespoons of garlic in a small bowl. When it is evenly combined, add the bread crumbs and toss them gently. Drizzle 3 ounces of the olive oil over the crumb mixture and stir gently taking care not to break up the crumbs or make the mixture too heavy. Season the mixture, to taste, with salt and pepper.
  • Season the salmon fillets with salt and pepper then heat the canola oil in a saute pan over medium high heat. When the oil just begins to smoke, sear the salmon paves, topside down, 2 pieces at a time, for 2 to 3 minutes. Remove to a lightly greased baking tin, placing the seared side up and repeat the process with the other 2 pieces of salmon. Sprinkle the bread crumb mixture over the top of the fish creating an even layer 1/8-inch to 1/4-inch thick. Roast the salmon until the crust is golden brown and fish is just firm, approximately 5 to 7 minutes.
  • While the salmon is baking, bring the fish stock, remaining 1 ounce olive oil, and remaining tablespoon of garlic to a boil in a non-reactive saucepan. Then add the braising greens, cover and cook for 2 to 3 minutes until the greens are wilted. Add the lemon juice and season, to taste, with salt and pepper. Arrange the greens in the center of 4 shallow bowls surrounded by the roasted potatoes and braising liquid. Top each with a roasted pave of salmon.

2 cups fish stock or bottled clam juice
1/2 cup dry white wine
2 tablespoons balsamic vinegar
4 tablespoons (about) water
1 1/2 cups finely grated peeled fresh horseradish root (about 5 ounces)
1/4 cup whipping cream
6 6-to-8 ounce salmon fillets
3 tablespoons sour cream

Steps:

  • Preheat oven to 425°F. Place beets, ginger and garlic in small glass baking dish. Cover with foil and bake until beets are tender, about 1 hour. Cool. Peel beets, ginger and garlic; place in blender.
  • Heat 1 tablespoon oil in heavy large skillet over medium heat. Add shallot and thyme; sauté 4 minutes. Add fish stock and wine; simmer until reduced to 1 1/4 cups, about 10 minutes. Add fish stock mixture and vinegar to beet mixture in blender. Blend until smooth, thinning with water to sauce consistency if too thick.
  • Mix horseradish and cream in small bowl. Season with salt and pepper. (Beet sauce and horseradish mixture can be prepared 1 day ahead. Cover separately; chill.)
  • Preheat oven to 425°F. Sprinkle salmon with salt and pepper. Heat remaining 1 tablespoon oil in heavy large skillet over medium-high heat. Add 3 salmon fillets to skillet; cook just until golden, about 2 minutes per side. Arrange salmon, skin side down, on large baking sheet. Repeat with remaining salmon. Spread horseradish mixture atop salmon. Bake until salmon is cooked through, about 12 minutes.
  • Bring beet sauce to simmer in pan, stirring. Remove from heat. Mix in sour cream. Season with salt and pepper. Place salmon on plates. Spoon sauce around salmon.

1 tbsp white vinegar
1 cup fresh, finely grated horseradish

  • For ketchup: In a blender, combine cranberries, cider, shallots, salt and sugar. Puree until smooth. Stir in dill.
  • For salmon: In a shallow bowl, mix flour and salt well. In a separate bowl, combine egg and vinegar. Beat until combined. Spread horseradish in yet another shallow bowl. Dip each salmon fillet in flour mixture, then egg mixture, then horseradish. 1 x 1-1 1/2 lb. Meridian Wild Sockeye Salmon fillet, skin left on.
1 cup dry breadcrumbs (regular or Panko)
1/2 cup chopped fresh dill
1/4 cup prepared horseradish
4 tablespoons butter, melted
2 lemons, zest and juice
2 teaspoons salt
dill sprigs and lemon wedges for garnish

Steps:

  • Preheat your grill to medium. Lay out 2 sheets of heavy foil each a little longer than the length of the salmon fillet. Place the salmon on the foil. Stir the bread crumbs, dill, horseradish, melted butter, lemon zest and salt. Squeeze the lemon juice over the salmon and then pack the bread mixture on top in an even layer. Crimp the foil edges just over the salmon to make a ridge that will prevent any juices from escaping. The salmon package will resemble a little canoe. Place the salmon on the grill and close the lid. Cook for 8 minutes for medium doneness and about 11 minutes for well done. Remove the salmon using 2 spatulas and place on a serving tray or platter. 4 salmon fillets (4-6 ounces each)
1/4 cup Dijon mustard
1 cup whole wheat bread crumbs
2 tablespoons grated Parmesan cheese
1/4 cup prepared horseradish
1 tablespoon finely chopped fresh parsley
1 tablespoon freshly squeezed lemon juice
2 teaspoons grated lemon zest
1 tablespoon olive oil
freshly grated black pepper

Steps:

  • Preheat oven to 450.
  • Lightly grease baking sheet with olive oil.
  • Place salmon fillets on baking sheet and brush each with Dijon mustard.
  • In mixing bowl, combine next 8 ingredients together (bread crumbs through black pepper)
  • Divide mixture over the top of 4 fillets and press down with the palm of hand to adhere.
