HOMEMADE BUTTERSCOTCH PUDDING

Steps:
- In a large heavy saucepan, combine the first five ingredients. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot mixture into the egg yolks; return all to the pan. Bring to a gentle boil, stirring constantly; cook 2 minutes or until mixture is thickened and coats the back of a spoon. Remove from the heat., Stir in butter and vanilla. Cool for 15 minutes, stirring occasionally. Transfer to six dessert dishes. Cover and refrigerate until chilled. Garnish with whipped cream if desired.

I am collecting some recipes for homemade mixes. I got some good ones for cakes, but it seems there are so many others that I really like, and want to include in a cookbook for my family. See if you don't think this homemade mix isn't a great idea!!

Steps:
- 1. Combine all ingredients and store in container with tight-fitting lid. Makes 3 cups mix, yielding 24 servings of prepared pudding.
- 2. Stir mix well. For two servings, combine 1/4 cup Butterscotch Pudding Mix, 2 Tbsp. butter, and 1 cup milk in a small saucepan. Heat over low heat, stirring constantly, until mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened.
