Number Of Ingredients 6

1 fresh vanilla pod, seeds of
15 egg yolks
250 g caster sugar
750 ml whole milk (whole milk)
500 ml fresh cream
375 ml Amarula cream liqueur

Steps:

  • Cut pods in half lengthways and scrape out seeds.
  • Mix egg yolk with sugar until fluffy and white.
  • Heat milk, cream, liqueur and vanilla seeds.
  • DO NOT BOIL!
  • Using a fine mesh strainer remove the vanilla seeds from the mixture.
  • Add the milk mixture into the egg and sugar bit by bit stirring constantly.
  • Place over a double boiler stirring until you have a custard consistency.
  • Never let it boil.
  • Process through your ice cream machine until set.
  • If you do not have an ice cream machine, allow to set in the freezer for 8 hours.
  • Beat into a smooth texture when icicles form in the setting process.

250 g mascarpone cheese
250 g creme fraiche
2 eggs
250 ml sugar
80 ml Amarula cream liqueur
200 g peanut brittle

Steps:

  • Cream the eggs and sugar, combine with rest of the ingredients and whisk until well blended.
  • Pour into a glass bowl and freeze for 2-3 hours.
  • Serve with extra Amarula Cream and peanut brittle.

½ tin condensed milk
125 ml Amarula cream liqueur
500 ml fresh cream
100 g chopped nuts of your choice (optional)

Steps:

  • Cool the condensed milk, Amarula cream liqueur and fresh cream before making the ice cream.
  • Using an electric mixer, for at least 15 minutes, beat the condensed milk until it has a creamy consistency.
  • Add the Amarula cream liqueur and mix well into the condensed milk on high setting for a few seconds.
  • Slowly add the cream. Watch carefully while mixing until the cream has thickened.
  • Immediately pour in a freezer container and sprinkle with nuts. Freeze overnight.
